  1. Disconnect power from the fryer.

Remove the fryer from the hood to gain access to the rear of the fryer.

Remove the filter pan (see Figure 1).

Figure 1 Description: A hand is shown sliding the filter pan lid upwards to remove it.

  2. Remove the filter pan lid by sliding up on the drain dump dispose sleeve, while pulling forward on the filter pan lid (see Figure 2).

Figure 2 Description: A hand is shown pulling forward on the filter pan lid while it is being slid upwards.

  3. Locate the dispose plumbing on the rear of the fryer and slightly twist the 45° elbow, so that the fitting and assembly can be removed (see Figure 3).

Figure 3 Description: A hand is shown twisting a 45-degree elbow fitting on the rear of the fryer.

  4. Locate the dispose plumbing under the fryer, beneath the filter pump (see Figure 4).

Figure 4 Description: The underside of the fryer is shown, locating the dispose plumbing beneath the filter pump.

  5. Remove nipple and 45° elbow (see Figures 3, 4 and 5).

Figure 5 Description: A hand is shown using a wrench to remove a nipple and a 45-degree elbow fitting.

  6. Remove nipple and 90° elbow from the "T" (see Figure 6). It may be necessary to slightly rotate the "T" downward to allow room for the elbow to clear the filter motor plate.

Figure 6 Description: A close-up of pipe fittings shows the removal of a nipple and 90-degree elbow from a 'T' fitting. An arrow points to the 'T' fitting.

  7. Using Loctite, attach the street elbow (PN 8130165) to the "T" in the previous step (see Figure 7). Orient the street elbow with the opening towards the front of the fryer.

Figure 7 Description: A hand is shown applying sealant (Loctite) to a street elbow fitting before attaching it to the 'T' fitting. An arrow points to the connection point.

  8. Using Loctite, attach the flexline adaptor (PN 8101668) to the street elbow in the previous step (see Figure 8).

Figure 8 Description: A hand is shown applying sealant (Loctite) to a flexline adaptor before attaching it to the street elbow. An arrow points to the connection point.

  9. Open the second door from the left and position the front dispose bracket under the control box (see Figure 9). The bracket should be oriented with the quick disconnect on the left and the switch on the right.

Figure 9 Description: A hand is shown positioning a front disposal bracket under the fryer's control box. The bracket has a quick disconnect on the left and a switch on the right.

  10. Attach the bracket with the included self-drilling screws (see Figure 10). Now remove the bracket. This will enable easier attachment later.

Figure 10 Description: A hand is shown using a screw gun to attach the bracket with self-drilling screws. An arrow points to the screw being driven.

  11. Locate the dispose handle switches assembly. They are behind and above the street elbow installed in step 9 (see Figure 11).

Figure 11 Description: A close-up of wiring connections near the fryer's control panel highlights the location of the dispose handle switches assembly. An arrow points to the switch assembly.

  12. Using needle nose pliers, remove the black wire from the switch closest to the rear of the fryer (see Figures 11 and 12).

Figure 12 Description: A close-up of the switch assembly shows an arrow pointing to the black wire to be removed from the switch closest to the rear of the fryer.

  13. Using the supplied harness, locate the end of the harness that has both male and female terminals.

Figure 13 Description: A close-up of electrical harness terminals shows a female end being attached to a male terminal on a switch.

  14. Attach the female end of the harness, to the center male terminal of the switch, where the plug was removed from, in step 14 (see Figure 13).

  15. Attach the female terminal, removed in step 14, to the male end of the harness (see Figure 14).

Figure 14 Description: A close-up of electrical harness terminals shows a female terminal being attached to a male end of the harness.

  16. Route the other end of the harness, with the two female ends, to the location where the dispose bracket will be installed (see Figure 15).

Figure 15 Description: The routing of the electrical harness towards the location where the dispose bracket will be installed is shown.

  17. Route the flexline from the front of the fryer, to the right of the drain dump tube, down towards the flexline adaptor, installed in step 10 (see Figure 16).

Figure 16 Description: The routing of the flexline from the front of the fryer towards the flexline adaptor is shown.

  18. Connect the flexline to the rear connection on the dispose bracket (see Figure 17).

Figure 17 Description: The flexline is shown being connected to the rear connection on the dispose bracket.

  19. Connect both female terminals, from the harness in step 18, to the rear of the dispose bracket (see Figure 18).

Figure 18 Description: The female terminals of the harness are shown being connected to the rear of the dispose bracket.

  20. Attach the bracket to the frame with the pre-drilled holes in step 12 (see Figure 19). Ensure EVERY hole in the bracket is used. The holes on the inside of the left side of the bracket (see Figure 20) keep the bracket from pulling away from the frame, when the wand is attached and detached.

Figure 19 Description: The bracket is shown being attached to the fryer frame using pre-drilled holes and screws. An arrow points to a screw being inserted.

Figure 20 Description: A close-up of the bracket's mounting holes on the frame emphasizes the importance of using all holes, particularly those on the inside left for stability.

  21. Connect the other end of the flex hose to the adaptor attached to the street elbow in step 10 (see Figure 21).

Figure 21 Description: The flex hose is shown being connected to the adaptor on the street elbow.

  22. Reverse steps 1-4 to return the fryer to operation.

  23. On the far left most controller press and hold the checkmark button (✔️) until the controller scrolls INFO MODE, changing to MAIN MENU and then PRODUCT SETUP.

Figure 22 Description: A hand is shown pressing a button on the fryer's control panel. An arrow points to the button. Another image shows the location of the hidden reset switch behind the control box.

  24. Press [down arrow] to scroll to VAT SETUP and press the checkmark button (✔️).

  25. Enter 1656.

  26. The controller displays SYSTEM.

  27. Press the checkmark button (✔️).

  28. Press [down arrow] to scroll to WASTE and press [down arrow]. The right display changes to FRONT.

  29. Press [down arrow] to scroll to EXIT and press the checkmark button (✔️).

  30. All controllers reboot.

  31. Cycle the control power using the hidden reset momentary rocker switch behind the right control box over the JIB (see Figure 22). HOLD THE SWITCH FOR 30 SECONDS ENSURING THE MIB BOARD HAS POWERED FULLY DOWN.

  32. Attach the wand using the quick disconnect by pulling on the orange sleeve while pushing inward onto the fitting (see Figure 23). Then press the orange sleeve towards the rear of the fryer to lock into place (see Figure 24).

Figure 23 Description: A close-up of the quick disconnect fitting for the wand shows an orange sleeve. An arrow points to the fitting.

Figure 24 Description: A hand is shown pushing the orange sleeve of the quick disconnect inward onto the fitting to attach the wand.

  33. During a dispose function, pressing on the momentary switch (see Figure 25) will power the pump. Releasing the switch will stop the pump.

Figure 25 Description: A hand is shown pressing a momentary switch on the fryer. An arrow points to the switch.
