Safety Precautions
WARNING: Indicates a hazard that can cause severe personal injury, death, or substantial property damage if ignored.
CAUTION: Indicates a hazard that can cause minor personal injury or property damage if ignored.
NOTE: Provides important installation, operation, or maintenance information that is not hazard-related.
For Your Safety! Follow these precautions at all times to avoid injury or damage to the unit:
- Use only grounded electrical outlets or circuits matching the nameplate rated voltage.
- Unit should only be used in a flat, level position.
- Turn off unit and let it cool before cleaning or moving.
- Do not operate unattended.
Unit Installation Clearances
WARNING: Fire Hazard. Do not install unit near combustible material. Do not place combustible material under or on top of unit. Discoloration or combustion could occur.
WARNING: Electrical Shock Hazard. Keep water and other liquids from entering the inside of the unit. Liquid inside the unit could cause an electrical shock. Unit must be installed by qualified personnel in accordance with all local and national ordinances. Do not use a power cord that has been modified or damaged.
- Do not use extension cords, power strips or surge protectors with this unit.
- Install with distances specified in the Unit Installation section. Minimum distances to surfaces:
- Combustible surroundings: 5" (12.7 cm) Sides, 2" (5.1 cm) Top
- Non-Combustible surroundings: 1" (2.5 cm) Sides, 1" (2.5 cm) Top
- Setback from edge of pass-through: 8" (20.3 cm) from any edge
- Units requiring wiring must follow National Electrical Code (NEC) standards and local ordinances.
- Only use coated light bulbs that meet NSF standards and are specifically designed for foodservice areas.
- Do not place materials on or allow combustible materials to come in contact with the unit.
- There are no serviceable parts in this unit. Contact a Vollrath Authorized Service Agent for service.
- Authorized service agents must use genuine Vollrath replacement parts. Failure to do so will void warranty and may cause a safety hazard.
- Do not spray controls or outside of unit with liquids or cleaning agents.
- Units requiring a circuit breaker larger than 20 amps must have a separate circuit for the lighting circuit that is less than 20 amps.
Function and Purpose
Heat Strips: Intended as a heat source to maintain food at safe temperatures. Not designed to cook raw food or reheat prepared food.
Light Strips: Intended to illuminate food serving display areas or food preparation areas.
Unpacking the Equipment and Initial Setup
Carefully remove crating or packaging materials from the unit. Dispose of all packaging materials in an environmentally responsible manner.
This unit must be installed by qualified personnel in compliance with electrical codes. Maintain the following distances between the unit and surrounding surfaces for safe operation. It is recommended that two (2) or more people assist with the installation.

Unit Installation - Direct Wire Mounting
Top Mount Installation
Top mount brackets are available as an option for direct-wired units. Brackets are available in 1" or 2" height. Dual units require two sets of brackets.
NOTE: Top mount brackets may not be used with units longer than 72".
- Access the area and mark the location for mounting brackets. Ensure the mounting surface can support the unit's weight.
- Secure the top mount bracket (A) to the mounting holes (B) using lockwashers (C) and screws (D). Repeat on the other end.
- Mount the brackets and unit to a suitable surface using holes (E) and suitable hardware.
Center Mount Installation
NOTE: For units longer than 72", use a minimum of three (3) mounting points (two ends and the center).
- Access the mounting area and mark the location for center mount brackets. Ensure the material can support the unit's weight.
- Locate brackets near the ends of the unit for stability.
- Mount the hanging bracket (A) with the "T" slot cutout in the identified locations.
- Loosen the two screws (B) in the center of the flat channel plates (C) so they do not protrude.
- Slide the channel plates (C) into the channel (D) on the top of the unit.
- Measure the distance between the center points of the hanging brackets (A) and slide the channel plates (C) so the center screws (E) align with the "T" slot (G) in the brackets (A).
- Tighten the two outside screws (B) in the channel plate (C).
- Loosen the nut (F) in the center of the channel plate (C) but DO NOT REMOVE.
- Raise the unit and align the nut (F) with the "T" in the bracket (A).
- Slide the nut (F) through the "T" slot and TIGHTEN THE NUT to secure the unit.
Chain Mount Installation
NOTE: Units over 72" must use the center mounting point.
- The unit ships with mounting tabs (A) on each end. For units over 72", use three (3) mounting points (ends and center).
- Loosen screws (B) on mounting tabs, rotate tabs (A) upright, and attach chain to holes (C). Ensure the chain supports each side evenly.
- Hang chain from an appropriate point directly over the area to be kept warm. Ensure the hanging point is adequate for the unit's total weight.
- Adjust unit height to ensure it is level and each point supports the weight evenly.
- Tighten screws (B) to secure mounting tabs.
Unit Installation - Corded Mounting
On Board Toggle Controls
A ON/OFF Toggle Switch: Move the toggle switch up for "ON" and down for "OFF".
Mounting Options
NOTE: UL requires all cord and plug heat strips to be mounted on legs. Custom-ordered heat strips cannot be cancelled or returned.

Remote Mounting of Controls
NOTE: Installations must comply with National Electrical Code (NEC) regulations.
Mount control boxes securely using proper hardware. Mount them so they cannot be bumped or accidentally switched on or off.
Control Panel with Switch and Infinite Control
Control Panel with Switches
A ON/OFF Toggle Switch: Move the toggle switch up for "ON" and down for "OFF". The switch(es) may operate heating elements or lights.
B INFINITE HEAT CONTROL: Rotate the control from zero "0" to turn on. Rotate to desired heat.
Operation
WARNING: Burn Hazard. Do not touch heating surfaces, liquid, or the unit while it is heating or operating. Hot food, surfaces, steam, and liquids can burn skin. Use gloves, mitts, or pot holders if necessary.
WARNING: Fire Hazard. Do not install unit near combustible material. Do not place combustible material under or on top of unit. Discoloration or combustion could occur.
WARNING: Electrical Shock Hazard. Keep water and other liquids from entering the unit. Liquid inside could cause an electrical shock. Unit must be installed by qualified personnel according to local and national ordinances. Do not use a modified or damaged power cord.
NOTE: Certain containers (foam, plastic) may melt if left in the heat zone. Food may dry out if left in the heat zone for extended periods.
- Ensure no combustible materials are in contact with or near the unit.
- Turn heat switch(es) to "ON" or set INFINITE HEAT CONTROL to the desired setting. Preheat the unit for approximately 15 minutes before adding food.
- If equipped with lights, switch them on.
- Place food items in the heat zone. Regularly check food temperature and adjust controls as necessary.
- When not in use, turn heat switch(es) to "OFF" or rotate the infinite heat control to zero (0). Turn lights to "OFF".
Adjusting the Heat Reflector
The heat strip units are equipped with a directional heat reflector to direct the heat zone for best application suitability.
- Turn switch(es) to "OFF". Allow the unit to cool completely before proceeding.
- Ensure the unit is cool for safety and easier reflector movement.
- Remove small screws (A) from the end alignment plates. See Figure 10.
- Pivot the reflector in the desired direction.
- Align the reflector end screw hole with the appropriate hole in the end plate for the desired direction.
- Place screws in the appropriate location and tighten.
Cleaning
WARNING: Burn Hazard. Hot surfaces can burn skin. Allow unit to cool completely before cleaning.
WARNING: Electrical Shock Hazard. Do not spray unit or controls with liquid or cleaning product. Liquid could enter the electrical compartment and cause a short circuit or electric shock.
- Turn power switch(es) off. Turn light switch(es) off. Allow the unit to cool completely.
- Wipe the unit exterior with a clean damp cloth.
- Do not use abrasive materials, scratching cleansers, or scouring pads, as they can damage the finish.
- Wipe off any mild soap or chemical cleaner residue. Residue could corrode the unit's surface.
Troubleshooting
All procedures should be performed by qualified individuals, including Vollrath Authorized Service Agents or specially trained personnel adhering to local codes.

There are no user-serviceable parts within this appliance. To avoid serious injury or damage, never attempt to repair the equipment or replace a damaged power cord yourself. Do not send equipment directly to The Vollrath Company LLC. Contact Vollrath Technical Service for assistance.

Warranty Statement
This warranty does not apply to products purchased for personal, family, or household use.
The Vollrath Company LLC warrants its products against defects in materials and workmanship for the applicable period. Most products have a one-year warranty from the date of original purchase. Cayenne® Heat Strips heating elements have a 2-year warranty. For refrigeration compressors and the second year of warranty on Cayenne® Heat Strips and mixers, Vollrath Company LLC will provide the part only; the buyer is responsible for labor charges.
Replacement parts have a 90-day warranty. Glass, breath guard glass, and light bulbs are not covered by warranty.
