This manual provides operating and safety instructions for Vollrath Hot Well Drop-ins. It is essential to read and understand these instructions before operating the equipment. Save these instructions for future reference and retain original packaging for potential shipping needs.
The equipment is designed to hold food containers at proper serving temperatures. It is not intended for cooking raw food or reheating prepared food. Food must be at proper serving temperatures when placed in the unit. This equipment is not intended for household, industrial, or laboratory use.
Safety Precautions
To ensure safe operation, please read and understand the following statements:
WARNING: Indicates a hazard that will or can cause severe personal injury or death.
CAUTION: Indicates a hazard that will or can cause minor or major personal injury if the caution is ignored.
NOTICE: Provides important information not related to hazards.
General Safety Guidelines
- This equipment must be installed by a qualified person.
- Use only grounded electrical outlets matching the rated voltage on the nameplate.
- NOTICE: Do NOT modify the cord or plug. Modifying any component may damage the unit or cause injury, and will void the warranty. Refer to Vollrath.com for electrical specifications.
- Do not use an extension cord or plug into a power strip or multi-outlet power cord.
- Use only in a flat, level position.
- Do not spray controls or the exterior with liquids or cleaning agents.
- Keep the unit and power cord away from open flames, electric burners, or excessive heat.
- Do not use food pans deeper than 6" (15.2 cm).
- Do not operate if damaged or malfunctioning.
- Do not operate unattended.
- Unplug and allow the equipment to cool before cleaning or moving.
- Handle hot water carefully.
- Do not clean with steel wool.
Features and Controls
The drop-in unit features the following controls:
- A TEMPERATURE CONTROL: Used to set or adjust the well temperature. Higher numbers indicate higher temperatures; lower numbers indicate lower temperatures. The "0" position turns the unit off.
- B POWER INDICATOR LIGHT: Illuminates when the well is in the heating mode.
- C THUMBSCREW: Secures the drop-in to the mounting surface.
- D DRAIN VALVE: (Not shown) Used to empty water from the well(s). The valve can be in an 'Open' or 'Closed' position.

Operation
WARNING: Electrical Shock Hazard
Keep water and other liquids from entering the unit to prevent electrical shock. Do not overfill pans or trays, as liquid contact with electrical components can cause a short circuit or shock.
CAUTION: Burn Hazard
Do not touch hot food, liquid, or heating surfaces while the equipment is heating or operating.
NOTICE: For NSF4 performance standards, moist heat operation is required. Water must be used for even heating of food products.
NOTICE: Do not use food pans deeper than 6" (15.2 cm).
Operating Steps:
- Ensure the drain valve(s) is in the closed position to prevent water drainage.
- Fill each well with approximately 3/8" (1 cm) of clean hot water. Do not overfill.
- Plug the electrical power cord into a grounded outlet matching the unit's rated voltage.
- Preheat the water in the wells by covering them with empty food containers or covers. Set the temperature control to the maximum heat setting and preheat for 60 minutes.
- Place containers of hot food (above 140°F / 60°C) into the preheated equipment.
- Reduce the heat setting to maintain a safe holding temperature and food quality.
- NOTICE: Monitor food temperatures closely for safety. The U.S. Public Health Service recommends holding hot food at a minimum of 140°F (60°C) to prevent bacterial growth. Maintain correct water level and temperature. Periodically remove food containers to check and add water as needed.
- Maintain the water level during operation. Periodically (every 2 hours) check and add hot water if needed.
- Use gloves, mitts, or pot holders to protect hands when removing hot food containers.
Cleaning
CAUTION: Burn Hazard
Hot surfaces and food can cause burns. Allow hot surfaces to cool before handling.
Clean the equipment daily to maintain appearance and service life.
NOTICE: Do not use caustic cleaning chemicals, steel wool, or commercial lime removal products. Rinse thoroughly with water after cleaning.
Cleaning Steps:
- Turn the heat control to "0" or the power switch (if applicable) to OFF.
- Unplug the unit.
- Use gloves, mitts, or pot holders when removing hot food containers.
- Open the drain valve(s) to drain the water.
- Clean the interior of the well and the exterior of the equipment with a damp cloth or sponge dipped in soapy water.
- Rinse the equipment thoroughly with water after cleaning.
- Close the drain valve to the closed position.
Troubleshooting
Problem | Might be Caused By | Course of Action |
---|---|---|
Unit does not get to correct temperature or to a high temperature | Low or incorrect voltage to unit. No water or incorrect water level. |
Verify that the unit's voltage rating matches the source voltage. If not, have qualified personnel install the proper voltage supply. Add water to correct the level. |

Warranty Statement
This warranty does not apply to products purchased for personal, family, or household use. The Vollrath Company LLC warrants its products against defects in materials and workmanship. The warranty period begins from the date of original purchase. Damages from improper use, abuse, modification, or improper packaging during return shipment for warranty repair are not covered.
