SIHA® SpeedFerm® Technical Data Sheet

Nutrient Substance for Yeast for Alcoholic Fermentation

SIHA SpeedFerm is a specialized nutrient substance for dry yeast cultures, comprising a blend of vitamins (e.g., pantothenate, biotin), minerals (magnesium, zinc, manganese), and amino acids.

SIHA SpeedFerm contains micronutrients that act effectively and targetedly during alcoholic fermentation. After rehydration, when enzyme transport systems and substrate are established, yeast cells can absorb and accumulate micronutrients intracellularly, continuously feeding from this internal reserve. Optimal nutrition with SIHA SpeedFerm ensures reliable fermentation and a high proportion of viable cells until the end of alcoholic fermentation.

Key Benefits of SIHA SpeedFerm:

  • Improves nutrient supply during rehydration and temperature adaptation of pure yeast cultures before alcoholic fermentation.
  • Reduces hydrogen sulfide (H₂S) formation during alcoholic fermentation.
  • Accelerates cell multiplication.
  • Increases the number of active cells throughout the fermentation process until its conclusion.
  • Guarantees a high degree of fermentation, especially at low fermentation temperatures.

Application

SIHA SpeedFerm should be added after rehydration of dry yeast cultures (see scheme). The optimal method is to adapt the temperature of rehydrated dry yeast cultures (< 30°C) to the product temperature in the tank (e.g., < 20°C).

The product can be dosed without prior dissolution.

Scheme of Application:

  1. SIHA SpeedFerm
  2. Dissolve in warm water
  3. SIHA dry yeast cultures
  4. Hydrate for 15-20 minutes (rehydration)
  5. Add hydrated yeast to wort

Product Properties

SIHA SpeedFerm ensures yeast is supplied with essential micronutrients. Micronutrients serve as crucial enzyme co-factors, facilitating sugar transport into yeast cells and developing intracellular yeast structure.

Dosing SIHA SpeedFerm before alcoholic fermentation increases the number of active cells during fermentation, ensuring reliable fermentation and high yeast tolerance to stress factors such as nutrient deficiency, temperature shock, and toxic components. The optimal combination of inactive yeast, vitamins, minerals, and other micronutrients simplifies product use.

The product dissolves very well in water, wort, or water-wort mixtures.

Safety

No adverse effects are known when applied according to instructions and handled correctly. For more detailed safety information, please refer to the Safety Data Sheet, which can be downloaded from the company's website at any time.
