Introduction
SIHA SpeedFerm yeast nutrient is a specialized yeast nutrient mixture derived from inactive yeasts. It contains essential vitamins (such as pantothenate and biotin), minerals (including magnesium, zinc, and manganese), and amino acids.
This nutrient formulation is designed to provide micronutrients with a targeted effect before alcoholic fermentation. After yeast rehydration, when enzyme and substrate transport systems are established, yeast cells can absorb and accumulate these micronutrients intracellularly. This ensures continuous access to the nutrient pool during alcoholic fermentation, leading to optimal yeast nutrition, a safe final fermentation degree, and a higher proportion of living cells throughout the process.

Application
SIHA SpeedFerm yeast nutrient is applied after the rehydration of dry active yeasts. It is best used during the temperature change between rehydrated dry active yeasts (temperature < 86 °F / 30 °C) and the fermentation tank (e.g., < 68 °F / 20 °C). The product can be added directly without prior dissolution.
Application Scheme Description
The application process involves several stages:
- Preparation of a must/water mixture at 35-37°C.
- Yeast rehydration at a temperature below 30°C.
- Direct addition of SIHA SpeedFerm, either to a 50/50 must/water mixture with SIHA active dry yeast, or directly.
- Cooling the mixture to the fermentation tank's must temperature.
- Transfer to the fermentation tank.

SIHA SpeedFerm yeast nutrient complements, but does not replace, nitrogen dosage prior to or during alcoholic fermentation. For additional nutrient supply during fermentation, consider using SIHA Fermentation Salt yeast nutrient, SIHA Fermentation Salt Plus yeast nutrient, or SIHA PROFERM™ Plus.
Product Characteristics
SIHA SpeedFerm yeast nutrient ensures yeast is supplied with crucial microelements, which act as essential enzyme cofactors. These cofactors manage sugar transport into yeast cells and facilitate intracellular traffic. Adding SIHA SpeedFerm before alcoholic fermentation leads to a higher proportion of active cells throughout the process, ensuring a reliable final fermentation degree and increased yeast resistance to stress factors like nutrient deficiency, temperature shocks, and toxic components. Its composition of inactive yeasts, vitamins, minerals, and micronutrients simplifies product handling, and it dissolves readily in water, must, or must/water mixtures.
Safety
No specific safety specifications are required for SIHA SpeedFerm yeast nutrient as it is used directly in food production. Storing, handling, and transporting this product do not pose health or environmental hazards. It is generally considered not harmful to water, according to German VwVwS regulations of 1999.
Storage
SIHA SpeedFerm yeast nutrient is supplied in aluminum pouches and is not vacuum packed. It can be stored at room temperature (max. 68 °F / 25 °C) for up to four years, provided the packaging remains intact. Once opened, use any remaining product promptly.
