This manual provides detailed instructions for the operation, installation, setup, cleaning, and maintenance of the Somerset CDR-1550 Front Operated Dough Roller.

Machine Installation
Carefully remove the machine from its packaging. Lift the machine straight up from the wooden base. Install the machine in its final position or temporarily secure it to a solid surface. Wipe off any accumulated shipping dirt with a soft cloth. Check the nameplate for correct voltage and frequency. Connect the machine to a power source matching these requirements.
Pre-Operation Verification
- All scrapers are installed and secured properly.
- The safety cover is closed and secured with two thumbscrews.
- The emergency stop (E-Stop) button is in the RESET position (turn clockwise to verify).
To start the machine, press the green 'POWER ON' button.
The control panel features a red 'EMERGENCY STOP' button (press in to kill power to motor, turn clockwise to reset) and a green 'POWER ON' button.
Machine Set Up
The final product thickness is determined by the gap between the rollers. Factory settings are typically: Top roll dial aligned with number 4. Bottom roll dial aligned with number 2.
Adjusting Roller Thickness
If adjustments are needed, follow these steps:
- Loosen the bottom clamping knob.
- Move the handle so the dial points to the desired thickness line.
- Tighten the clamping knob.
Both handles can be adjusted independently. Practice may be required to achieve a perfectly round dough piece with minimal waste. Ensure the safety cover is closed and secured with thumbscrews before operation. The machine will not operate if the safety cover is open or the Emergency Stop is engaged.
Dough Preparation
For best results, dough should be at room temperature. The size and shape of the dough ball influence the finished crust. For round crusts, flatten the dough ball slightly. Dust dough pieces with flour before feeding them into the machine.
Operating Procedure
The dough passes through the first set of rollers, emerging oblong, and then through the second set, emerging round.
Rollers are adjustable for various dough thicknesses. For example, to achieve a 10-inch diameter dough, set the top roller for a 10-inch length and the bottom roller for a 10-inch width. A 2:1 ratio of top to bottom roller settings is often successful for round dough.
If dough sticks to the discharge trays, dust them with flour. If dough tears or the machine makes a thumping sound, the rollers may be set too thick for the dough, or the dough may be too cold and stiff. Adjust the roller gap or allow the dough to rest.
Operation Steps
- Load the dough into the chute.
- The dough is rolled through the first set of rollers. Turn the elongated dough piece a quarter turn.
- Simultaneously push the dough back towards the second set of rollers.
- The rounded piece of dough emerges from the discharge tray.
TIP: For an elongated piece of dough, do not rotate it for the second pass.

Important Warnings and Safety Precautions
!!WARNING!!
- Never operate the machine without guards, safety cover, or scrapers in place.
- Keep hands and fingers away from the chute area.
- Never force dough into the chute with hands.
- If dough gets stuck: Press the red stop switch, open the safety cover, and remove the dough.
- Use the EMERGENCY STOP (E-STOP) button only for emergencies.
- Never use oil or grease on mechanical parts; the machine is self-lubricated.
Cleaning
After removing all scrapers:
- Clean the rolls with a clean cloth. DO NOT USE WATER. Apply a thin film of cooking oil (e.g., vegetable or canola) with the cloth.
- Brush or wipe the sides of the machine and trays.
- Clean all scrapers and verify they are not worn. Ensure all beveled edges are smooth and not nicked.
- Install scrapers in the reverse order of removal.
- Close the safety cover and secure with thumbscrews.
- Press the green start switch when ready to use.
Ensure all food-contact surfaces are clean to sight and touch, and sanitized.
Removing & Installing Scrapers
!! CAUTION !!
DISCONNECT THE POWER CORD OF THE MACHINE BEFORE PROCEEDING.
Open the safety cover by loosening the two thumb screws. All scrapers are readily removable.
Scraper #1
Located behind the rollers at the back. It should sit on scraper pins, pointing between the middle and bottom rolls. When springs are latched, its beveled side pushes against the middle roll.
Scrapers #2 & #3
Scrapers #2 and #3 attach to each other. Scraper #2 lies on scraper pins with its beveled edge towards the top roll. Springs from #2 attach to #3, guiding slots into scraper pins. Scraper #3's beveled edge pushes against the middle roll, acting as a guard.
Scraper #4
Located under the discharge tray, pressing against the bottom roll. Slots on the scraper rest on scraper pins, pushing the plastic blade against the bottom roll. Springs latch onto slotted pins beneath the scraper pins.

Quick Tips & Troubleshooting
- Do not use the emergency stop as a regular on/off switch; reserve it for emergencies.
- Clean rolls with a dry cloth only. NEVER USE WATER.
- If rolls squeal due to dryness: Remove and clean scraper blades thoroughly. Rub the beveled edge with cooking oil (vegetable or canola) to eliminate friction noise.
- If the machine does not start:
- Check AC power availability.
- Verify the plug is connected.
- Ensure the safety cover is securely closed.
- Confirm all scrapers are installed properly.
