Introduction
Welcome to your DeLonghi Precision Multi Cooker. This appliance is designed for household use to provide versatile cooking options.
Electrical Connection: Only use a 120 Volt - 60 Hz power supply outlet.
Notice: This appliance features a polarized plug, meaning one prong is wider than the other. This is a safety feature designed to fit into a polarized outlet in only one direction. If the plug does not fit fully, reverse the plug. If it still does not fit, contact a qualified electrician. Do not attempt to bypass this safety feature.
Special Cord Set Instructions: A short power supply cord is provided to reduce the risk of entanglement or tripping. Do not use extension cords.
Appliance Overview
The DeLonghi CKM1641D Precision Multi Cooker includes the following components:
- Pot (I): A removable 6-quart (5.7 L) aluminum pot with a non-stick coating. It is dishwasher-safe and can be used for serving. Warning: The pot is not suitable for stovetop or microwave use.
- Lid (L): A glass lid for the pot.
- Steam Rack (M): Used for steaming functions.
Control Panel Components:
- A - Function Selector Dial: Used to choose cooking modes.
- B - Keep Warm Button: Manually activates or deactivates the Keep Warm function.
- C - Time/Temperature Dial: Adjusts cooking time and temperature.
- D - Start/Stop Button: Starts or stops the cooking process.
- E - Red Light: Indicator light around the Start/Stop button.
- F - Keep Warm Red Light: Indicator light for the Keep Warm function.
- G - Set Time/Temperature Button: Used to set specific time and temperature values.
- H - Display: Shows cooking time, temperature, and status messages.
Assembly Instructions:
- Carefully unpack the Multi Cooker.
- Rinse the pot (I), glass lid (L), and steam rack (M) in warm, soapy water. Rinse well and dry thoroughly.
- Wipe all interior and exterior surfaces of the Multi Cooker base with a soft, damp cloth.
- Place the pot (I) in the base of the unit.
- Place the lid (L) on top of the pot.
- Plug in the power cord. The Multi Cooker is now ready for use.
Operation: The DeLonghi Multi Cooker cooks food automatically once the time and cooking mode are set. When the cooking time expires, the unit may automatically switch to the Keep Warm setting (depending on the function). The Keep Warm indicator light will illuminate.
Stand-by Mode/Active Mode: Upon connecting to power, the display shows 'h00:00m / 000' for 20 seconds, then backlight reduces (Stand-by mode). Interacting with controls (dial or buttons) activates the unit (Active mode). If no operation occurs for 20 seconds, it returns to Stand-by mode.
Note: The U.S. Department of Agriculture (USDA) recommends that meat cooked in slow cooker mode should reach 140°F (60°C) within 2 hours for food safety. It is recommended to cook with at least 1 quart (1 L) of food in the pot. Avoid cooking frozen food; use fresh, room temperature ingredients.

Slow Cooking Details: Slow cooking is ideal for foods requiring long simmering like soups, stews, and dried beans, as well as tougher cuts of meat. Use Medium and Low settings for longer cooking times. Use High setting for dishes started later in the day.

Oven/Bake Details: Suitable for baking, roasting, and reheating. For reheating, use Oven/Bake at 350°F, stir, then switch to Keep Warm.
Brown/Sauté Details: Mimics stovetop searing and stir-frying. Ideal for browning meats as a first step in braised dishes.
Steam Details: A healthy cooking method using steam. One quart of water is typically used for basic steaming. The steam rack should be positioned to keep food above the water.
Rice Details: Simplest method is adding rice and water. Cooking times vary. The unit automatically turns off when water evaporates and rice is cooked.
Cooking Function Instructions
Cooking with Low Function
1. Place unit on a clean, dry counter. 2. Remove glass lid (L). 3. Fill pot (I) with ingredients. 4. Replace lid.
Select 'LOW' using the Function Selector Dial (A). The display defaults to 10:00h. Adjust time using the Time/Temperature Dial (C) in 15-minute increments (up to 24h). Press Start/Stop (D) to begin. The red light (E) illuminates. If Start/Stop is not pressed within 20 seconds, the unit enters Stand-by mode.
To stop: Press Start/Stop (D). The red light (E) turns off, display goes to Stand-by. When time elapses, display shows "End" flashing for 5 minutes, then enters Stand-by. If no further action, it switches to Keep Warm.
Cooking with Medium Function
1. Place unit on a clean, dry counter. 2. Remove glass lid (L). 3. Fill pot (I) with ingredients. 4. Replace lid.
Select 'MEDIUM' using the Function Selector Dial (A). The display defaults to 08:00h. Adjust time using the Time/Temperature Dial (C) in 15-minute increments (up to 16h). Press Start/Stop (D) to begin. The red light (E) illuminates. If Start/Stop is not pressed within 20 seconds, the unit enters Stand-by mode.
To stop: Press Start/Stop (D). The red light (E) turns off, display goes to Stand-by. When time elapses, display shows "End" flashing for 5 minutes, then enters Stand-by. If no further action, it switches to Keep Warm.
Cooking with High Function

Select 'HIGH' using the Function Selector Dial (A). The display defaults to 04:00h. Adjust time using the Time/Temperature Dial (C) in 15-minute increments (up to 8h). Press Start/Stop (D) to begin. The red light (E) illuminates. If Start/Stop is not pressed within 20 seconds, the unit enters Stand-by mode.
To stop: Press Start/Stop (D). The red light (E) turns off, display goes to Stand-by. When time elapses, display shows "End" flashing for 5 minutes, then enters Stand-by. If no further action, it switches to Keep Warm.
Keep Warm Function
Automatic Selection: Activated automatically at the end of certain cooking functions. Display shows a time count-up from 00:00h to 12:00h. After 12 hours, the unit turns off.
Manual Selection: Press the Keep Warm button (B) from Stand-by or Active mode (not during cooking). The Keep Warm red light (F) illuminates, display shows 00:15m. Pressing again disables the function. It can also be disabled by turning the Function Selector Dial (A).
You can adjust Keep Warm time from 00:15h to 12:00h using the Time/Temperature Dial (C). If Start/Stop (D) is not pressed within 20 seconds, it enters Stand-by mode. Pressing Start/Stop (D) begins Keep Warm function, and the red light (E) illuminates.
To stop: Press Start/Stop (D). Red lights (E, F) turn off, display goes to Stand-by. If time elapses, unit turns off.
Cooking with Oven/Bake Function
1. Place unit on a clean, dry counter. 2. Remove glass lid (L). 3. Fill pot (I) with ingredients. 4. Replace lid.
Select 'OVEN/BAKE' using the Function Selector Dial (A). The display defaults to 00:30h. Adjust time using the Time/Temperature Dial (C) in 5-minute increments (up to 6h). Press Set Time/Temperature (G) to set temperature; display defaults to 350°F. Adjust temperature using Dial (C) (300°F to 400°F in 25°F increments). Press Start/Stop (D) to begin. The red light (E) illuminates. The display shows "PRE" and "HEAT" cycling, then shows selected time and temperature. Timer begins countdown.
Settings can be changed during cooking. To stop: Press Start/Stop (D). Red light (E) turns off, display goes to Stand-by. When time elapses, display shows "End" flashing for 5 minutes, then enters Stand-by.
Cooking with Brown/Sauté Function
1. Place unit on a clean, dry counter. 2. Remove glass lid (L). 3. Fill pot (I) with ingredients. 4. Replace lid.
Select 'BROWN/SAUTÉ' using the Function Selector Dial (A). The display defaults to 00:01h. Adjust time using the Time/Temperature Dial (C) in 1-minute increments (up to 1h). Press Set Time/Temperature (G) to set temperature; display defaults to 400°F. Adjust temperature using Dial (C) (400°F to 450°F in 25°F increments). Press Start/Stop (D) to begin. The red light (E) illuminates. The display shows "PRE" and "HEAT" cycling, then shows selected time and temperature. Timer begins countdown.

Cooking with Steam Function
1. Place unit on a clean, dry counter. 2. Remove glass lid (L). 3. Place steam rack (M) into pot (I). 4. Fill pot with water (approx. 1 Qt). 5. Place food over steam rack. 6. Replace lid.
Warning: Exercise extreme caution during Steam function. Steam can cause serious burns.
Select 'STEAM' using the Function Selector Dial (A). The display defaults to 00:30h. Adjust time using the Time/Temperature Dial (C) in 1-minute increments (up to 1h). Press Start/Stop (D) to begin. The red light (E) illuminates. The display shows "PRE" and "HEAT" cycling. Once water boils (approx. 212°F / 100°C), the display shows the selected time, and the timer begins countdown.
To stop: Press Start/Stop (D). Red light (E) turns off, display goes to Stand-by. When time elapses, display shows "End" flashing for 5 minutes, then enters Stand-by.
Safety Control: If water evaporates completely, power switches off. Display shows timer, a warning symbol ⚠️, and flashing red light (E). Lower display shows "Fill" and "H2o". Refill pot and press Start/Stop (D) to resume. If Start/Stop is not pressed within 1 hour, the unit turns off.
Guide for Steaming: Steaming is healthy, requiring no added fat. Use about one quart of water for basic steaming. Refill if cooking for longer periods.
Cooking with Rice Function
1. Place unit on a clean, dry counter. 2. Remove glass lid (L). 3. Fill pot (I) with rice and water. 4. Replace lid.
Warning: Exercise extreme caution during Rice function due to steam.
Select 'RICE' using the Function Selector Dial (A). The display defaults to 00:00h. Press Start/Stop (D) to begin. The red light (E) illuminates. The display shows a time count-up as rice cooks. When water evaporates and rice is cooked, the control stops the function, red light (E) turns off, and display flashes "End".
To stop: Press Start/Stop (D). Red light (E) turns off, display goes to Stand-by. If no action is taken after 5 minutes of "End" flashing, it switches to Keep Warm. If Keep Warm time elapses, the unit turns off.
Important Note for Rice: Avoid prolonged Keep Warm time for rice to prevent overcooking. Recommend no more than 1 hour in Keep Warm mode.
Guide for Rice Cooking: Measure rice and water accurately. Rinse standard rice to remove excess starch for better results. Do not rinse flavored or enriched rice. Water quantity may vary by rice type. Brown and Black rice may need longer cooking times. Parboiled rice requires less water. Consult the chart for specific rice types and water amounts.

Changing Functions During Cooking
You can change cooking functions by turning the Function Selector Dial (A). Changes may vary based on the current function.
- Changing between Slow Cooker modes (LOW/MEDIUM/HIGH): The countdown continues, and the temperature adjusts to the new setting if the time is within the new function's maximum limit.
- Changing from Slow Cooker to other modes: The control stops the current function, displays "Err" flashing and a warning symbol ⚠️. Press Start/Stop (D) to reset and start the new function. If no action is taken within 20 seconds, it defaults to Stand-by.
- Changing between Bake/Roast/Steam/Rice modes: The control stops the current function, displays "Err" flashing and a warning symbol ⚠️. Press Start/Stop (D) to reset and start the new function. If no action is taken within 20 seconds, it defaults to Stand-by.
Adjusting Timer During Cooking
While a function is running, press the Set Time/Temperature button (G) and use the Time/Temperature Dial (C) to adjust the time. The display will flash the current time, then confirm the new value after 3 seconds of inactivity. Adjustments are made in specific increments depending on the function (e.g., 15 min for Slow Cooker, 5 min for Bake, 1 min for Steam/Sauté).
Cleaning and Maintenance
General Tips:
- Pot and lid are dishwasher safe, but hand washing the pot is recommended for longer non-stick coating life.
- Unplug the Multi Cooker and allow it to cool before cleaning.
- Avoid abrasive or aggressive cleaning products.
- If food sticks, fill the pot with warm, soapy water and let it soak.
- Use a non-abrasive cleanser or liquid detergent with a nylon pad or brush for scouring.
- Wipe interior surfaces of the pot with a soft pad.
Troubleshooting
Pot Detection: The electronic control detects if the pot is properly fitted. If the pot is not fitted or removed during cooking, the control stops the function and displays an error message.
- Error Message: "Err" with a warning symbol ⚠️ may appear if the pot is not detected or if there is another malfunction.
- If the appliance does not switch on or the display is blank: Check power plug insertion, try a different outlet, or check the circuit breaker. If problems persist, contact De'Longhi Customer Service.
- If the error message appears with the pot correctly fitted: Ensure the pot is fully seated. If the error persists, disconnect power and contact De'Longhi Customer Service.

Country-Style Short Ribs Horseradish Cream

Ingredients: 2 lbs short ribs, 3/4 tsp salt, 1/2 tsp pepper, 2 tbsp vegetable oil, 1 cup beef broth, 2 tbsp Worcestershire sauce, 2 Vidalia onions (sliced), 1 lb small red potatoes, 1 1/2 cups sliced carrots, 2 garlic cloves (chopped), 2 tbsp all-purpose flour, 2 tbsp cold water, 1 tbsp chopped fresh parsley, 1/3 cup sour cream, 2 tbsp horseradish, 1 tbsp Dijon mustard.
Directions: Season short ribs. Set dial to Brown/Sauté, timer for 5 min, temp to 400°F. Brown ribs in oil (about 5 min). Add broth, Worcestershire, onions, potatoes, carrots, garlic. Set dial to High, timer for 3 hours. In the last 15 min, whisk flour and water, blend into ribs. Cook until sauce thickens and meat/veg are tender. Stir in parsley. For horseradish cream, mix sour cream, horseradish, and mustard. Serve with ribs and vegetables.
Pulled Chicken Tacos

Ingredients: 1 3/4 lbs boneless skinless chicken thighs, 1/2 tsp salt, 2 tsp olive oil, 1 lb tomatillos (husked, rinsed, cut into wedges), 1 onion (sliced), 1 (16-oz) jar green salsa, 2 jalapeño peppers (finely chopped), 2 garlic cloves (chopped), 1 (15-oz) can black beans (rinsed, drained), 1/4 cup chopped fresh cilantro, 6 (8-inch) tortillas (warmed). Directions: Set dial to Brown/Sauté, timer for 5 min, temp to 350°F. Cook bacon until browned (about 5 min); set aside. Add beef to drippings, cook until browned (about 8 min). Add onion and garlic; cook until softened (about 5 min). Stir in flour and cook 1 min. Stir in tomato paste. Add broth, wine, mushrooms, pearl onions, thyme, salt, and reserved bacon; simmer. Red Beans and Rice

Ingredients: 1 lb dried red kidney beans, 12 oz andouille sausage (cut into 3/4-inch slices), 3 ribs celery (chopped), 1 onion (chopped), 1 green bell pepper (chopped), 1 tbsp chili powder, 1 tbsp packed brown sugar, 1 tsp ground cumin, 3/4 tsp salt, 1 1/2 tsp cayenne pepper, 4 cups chicken broth, 4 cups hot cooked rice.
Directions: Soak beans (boil 2 min, stand 1 hr, drain; or soak overnight). Place beans, sausage, celery, onion, bell pepper, chili powder, brown sugar, cumin, salt, cayenne in pot. Add broth and mix. Set dial to Medium (Slow Cooker), timer for 5 hours. Cover and cook until beans are fork-tender. Serve with rice.
Sour Cream Apple Coffee Cake

Ingredients: 2 cups all-purpose flour, 2 tsp baking powder, 2 tsp ground cinnamon, 1/2 tsp baking soda, 1/2 tsp salt, 1 1/4 tsp ground allspice, 3/4 cup sugar, 1/2 cup sour cream, 1/3 cup canola oil, 2 large eggs, 1 tsp vanilla extract, 1 Granny Smith apple (chopped), 3/4 cup walnuts (chopped).
Directions: Combine dry ingredients. Whisk sugar, sour cream, oil, eggs, vanilla. Stir in apple and walnuts. Add wet to dry ingredients; mix until just moistened. Prepare a 4x8 inch loaf pan with nonstick spray. Scrape batter into pan. Cover pan tightly with foil sprayed with nonstick spray. Pour 2 cups hot water into multi-cooker. Place baking dish in multi-cooker. Set dial to High (Slow Cooker), timer for 3 hours. Cook until toothpick comes out clean. Cool cake 10 min, remove from pan, cool completely.
