4. Making Ice Cream
4.1 General
Ingredients
- Use fresh, high-quality ingredients for superior results.
- Dairy products with high fat content (e.g., cream, crème fraîche, double cream, mascarpone) create a creamy consistency and improve flavour.
- Use very fine sugar if recipes require undissolved sugar; it helps the ice cream firm up and prevents large ice crystals.
- Frozen fruit does not need to be completely defrosted; pureeing is easier when it's half frozen.
Ice cream remains softer if alcohol is added.
Instructions
- For best results, cool the bowl and the prepared mix sufficiently beforehand.
- The ice cream produced will be soft and spoonable; serve immediately for the best taste.
- If the ice cream is not firm enough after about 40 minutes, freeze it until it reaches the desired firmness.
4.2 24 hours beforehand
Freeze bowl
The bowl must be completely dry before freezing.
- Place the empty bowl in a freezer bag and seal to prevent ice deposits.
- Place the bagged bowl in the freezer for at least 24 hours (at min. -18 °C).
- Remove the bowl from the freezer immediately before making ice cream to ensure it is as cold as possible.
4.3 4 hours beforehand
Make ice mix
- Prepare the ice mix according to the recipe. Up to 1000 ml / 36 fl oz can be prepared at once.
- Refrigerate the prepared mix for approximately 4 hours.
4.4 Processing the ice cream in the ice-cream maker
- Do not add the mix to the bowl until the machine is assembled and switched on, otherwise the mix will freeze to the bowl walls.
- Work quickly to keep the bowl and mix cold.
- Fit the motor unit onto the lid so it snaps into place.
- Insert the connecting piece into the motor unit.
- Fit the mixing blade to the connecting piece.
- Place the ring on the container, aligning the handles with the container recesses.
- Take the bowl out of the freezer bag and place it on the ring.
- Place the lid on the ring and turn clockwise to secure.
- Insert the power plug into the wall socket and switch the appliance on (0/1 to I).
- ⚠️ WARNING: Do not stop the ice-cream machine during processing, or the mix may freeze to the inside of the bowl.
- Pour the prepared mix into the bowl through the opening.
- Let the machine run until the ice cream reaches the desired consistency.
- ℹ️ NOTE: If the ice cream is not firm enough after 40 minutes, freeze it further.
- Switch the appliance off (0/1 to 0).
- Unplug the appliance.
- Turn the lid anti-clockwise and remove. (Removing the lid is easier if grasped with both hands on the sides and lifted.)
- Remove the ice cream using a rubber scraper or wooden spoon (not supplied). The ice cream can be eaten immediately or frozen further for a firmer consistency.
