Quick Start Guide: A Smart Tips to Prepare a Neapolitan Pizza

Step 1: Glow the Pellet

  • Fully fill the pellet box with pellets.
  • Burn the pellets with fire until they glow.
  • Install the pellet box into the pizza oven.

Step 2: Preheat Your Oven

  • Burn the pellets for 2-3 minutes to preheat the pizza oven.
  • Refill more pellets through the pellet feeder.
  • After preheating for 15 minutes, turn the turntable handle to preheat the pizza stone evenly.

Step 3: Feed Your Pizza

  • After preheating for approximately 15 minutes, the oven temperature should be around 662°F (350°C).
  • Use the pizza shovel to place the pizza on the pizza stone and close the oven door.

Tips: Oven temperature can be checked with an infra-red thermometer gun (not included) to measure the pizza stone temperature for different cuisines.

Pizza scoops need to be purchased separately.

Step 4: Pizza is Ready!

  • After approximately 2 minutes, the pizza is completed.
  • Use a pizza shovel to take out the pizza.
  • Chef's Tips:
    • For a more carbonized pizza, bake slightly longer.
    • Thinner or thicker pizza dough may vary the baking time.

Smart Tips:

  1. Generally, 2 pizzas can be baked with the first batch of pellets.
  2. If more pizzas need to be baked, add pellets before baking.
  3. Try not to add pellets during baking, as it can make the oven temperature uneven. (Mid-cycle pellet feeding may be unavoidable in some occasions.)

Barbecue Functions

The pizza oven can also be used as a barbecue. Repeat Step 1 & 2 for preheating.

  1. Preheat the pizza oven for 5 minutes.
  2. Prepare the food in a cast iron pan (not supplied).
  3. Cook the food according to the recommendation table (not provided in this excerpt).
  4. Chef's Tips: To perfect cooking both sides, split the cooking time. For example, lamb chops might require 6 minutes total, with 3 minutes on each side.

Maintenance, Cleaning & Storage

CAUTION: All cleaning and maintenance should be carried out when the pizza oven is cool.

Cleaning:

  1. Outside surface and bottom: Use a mild soap and water solution. For stubborn stains, use a non-abrasive scrubber and rinse with water. If the oven surface shows peeling paint, it indicates baking grease build-up has carbonized and flaked off. Clean thoroughly with a strong solution of hot soapy water, rinse with water, and dry completely. NEVER USE OVEN CLEANER.
  2. Interior of pizza oven: Remove residue with a brush, scraper, and/or cleaning pad; water is not needed. Ovens operate at very high temperatures, which act as an automatic "self-cleaning" process, burning off food spills. Water-free cleaning prevents rusting and extends the oven's life. As a precautionary measure, dough-free food should always be placed on appropriate cookware before placing it in the oven. If water cleaning is required, use a mild soap and water solution, rinse well, and dry thoroughly. Stones must be well dried to prevent poor preheating. The oven interior must be dried as soon as possible after cleaning, and rust-preventive oil is recommended.

Storage:

  • When not in use, attach the door to prevent water from entering the oven.
  • Clean the oven and ensure it is completely dry before storing.
  • Store the oven in a dry, rain-proof area. A storage bag (carrier bag) is recommended.

Pizza Stone Board

  1. DO NOT use the stone over an open flame.
  2. Avoid extreme temperature changes to the stone. DO NOT place frozen foods on a hot stone.
  3. The stone is fragile and can break if bumped or dropped.
  4. The stone gets very hot during use and remains hot for a long time afterward.
  5. DO NOT cool the stone with water when it is hot.
  6. After cleaning the stone with water, dry it before use. This can be done in a conventional oven at 60°C (140°F) for 2 hours.

Choice of Firewood Pellets

  1. Recommended length of firewood pellets: Should not exceed 1.25 inches (3 cm).
  2. Use only firewood pellets suitable for cooking. Do not use pellets from animal bedding or heating pellets containing chemicals.
  3. Ensure wood pellets are dry, not wet.
  4. Choose 100% hardwood pellets; softwood pellets may not burn fully.

How to Ignite Firewood Pellets?

Igniting firewood pellets for the first time can be difficult. Refer to the manual or use combustible material to fully burn the pellets. Directly igniting pellets is more challenging.

Required Accessories:

  • a. 100% Hardwood Pellets
  • b. Fire Starter
  • c. Blo (likely refers to a blower or bellows)

Ignite Step:

  1. Fill 50% of the burner grates with hardwood pellets (approx. 1.8 lbs, 7-8 scoops).
  2. Place a natural fire starter on the edge of the burner grate.
  3. Light the fire with an igniter and slide the burner grate into the pizza oven.
  4. To maintain temperature, refill with firewood pellets as needed. Slide out the grate, fill with a small amount of pellets, and slide the grate back into the oven.

How to Bake Pizza?

Preparing to Bake Pizza:

  • Pizza Oven
  • Pizza Stone
  • Thermometer Gun (purchase separately)
  • Pizza Spatula (purchase separately)
  1. After the firewood pellets start to burn, close the door and preheat the oven for 15 minutes until the temperature reaches 750°F-860°F (approx. 400°C-460°C). If using a thermometer gun, preheating can be monitored until 750°F is reached.
  2. When the temperature is right, open the oven door and place the pizza inside, then close the door.
  3. Wait about 15 seconds, open the door, rotate the pizza 180° with the pizza spatula, and close the door.
  4. Repeat step 3 approximately 4 times (wait 15 seconds, open, turn 90°, close).
  5. Finally, take out the pizza and finish baking.
