Introduction

Thank you for choosing the DeLonghi ESAM 6700 automatic coffee and cappuccino maker. We hope you enjoy using your new appliance. Please take a few minutes to read these instructions to avoid risks and damage to the machine.

Symbols Used in These Instructions

Important warnings are identified by these symbols and must be respected:

Letters in brackets refer to the legend in the description of the appliance.

Troubleshooting and Repairs

In case of problems, first try to resolve them using the "Displayed Messages" and "Troubleshooting" sections. If the problem persists or for further information, contact Customer Service. Addresses are provided in the warranty certificate.

Controls after transport

After unpacking, ensure the product is complete and undamaged. Do not use if visibly damaged; contact Customer Service.

Installing the Appliance

Important! Follow safety warnings:

Connecting the Appliance

Important! Ensure power outlet voltage matches the appliance's rating plate. Use a properly earthed outlet with a minimum 12A rating. Consult a qualified electrician if the plug does not fit.

Setting Up the Appliance

ℹ️ Information: Traces of coffee may be present from factory testing; the machine is new.

Customize water hardness as per page 20.

  1. Plug in and switch on the main switch (if present).
  2. Select language: Press ▶️ or ◀️ until "Set language" appears, press OK. Select language, press OK to confirm. Press ESC to exit.
  3. Follow appliance prompts: "FILL TANK!" (fill water tank to MAX), "INSERT WATER SPOUT AND PRESS OK" (insert spout, place container, press OK).

The appliance performs an initial startup rinse and turns off. It is now ready for use.

ℹ️ Information: For first-time use, make 4-5 cups of coffee/cappuccino for optimal results.

Turning the Appliance On

ℹ️ Information: Ensure main switch is ON (I position) if applicable.

The appliance performs an automatic preheat and rinse cycle upon turning on, which cannot be interrupted. It is ready after this cycle.

? Danger of burns! Hot water may exit spouts during rinsing. Avoid splashes.

Press the ? button (left side) to turn on. "Heating up..." then "Rinsing..." messages appear. Once ready, "STANDARD COFFEE standard taste" is displayed.

Turning the Appliance Off

The appliance performs an automatic rinse cycle upon turning off, which cannot be interrupted.

? Danger of burns! Hot water may exit spouts during rinsing. Avoid splashes.

Press the ? button to turn off. The rinse cycle completes, then the appliance turns off.

ℹ️ Information: For extended periods of non-use, switch off the main switch (0 position).

Changing Menu Settings

Setting the Language

Navigate using ▶️/◀️, press OK to select, and confirm with OK or cancel with ESC.

Setting the Clock

Navigate to "Adjust time", press OK. Adjust hours with ▶️/◀️, confirm with OK. Adjust minutes, confirm with OK. Exit with ESC.

Setting Auto-Start Time

Navigate to "Auto-start disabled", press OK. Select "Enable?", adjust hours/minutes, confirm. A symbol indicates auto-start is programmed. To deactivate, navigate to "Auto-start Enabled?", press OK, then ESC.

ℹ️ Information: Time must be set before using auto-start.

Setting the Temperature

Navigate to "Temperature", press OK. Select low, medium, or high, confirm with OK, or cancel with ESC.

Setting Auto-Off

ℹ️ Information: Default auto-off is 30 minutes; can be set to 1 or 2 hours.

Navigate to "Auto-off", press OK. Select desired time, confirm with OK, or cancel with ESC.

Resetting Default Values (Reset)

Navigate to "Default values", press OK. Confirm reset with OK.

Statistics Function

Navigate to "Statistics" to view coffee made, milk drinks, descale cycles, water usage.

Acoustic Signal (Beep Enabled)

Navigate to "Beep enabled" to activate/deactivate audible feedback.

ℹ️ Information: Descale and water hardness functions are explained later.

Making Coffee

Selecting the Coffee Taste

Default is "Standard taste". Choose from Extra-mild, Mild, Standard, Strong, Extra-strong by pressing the icon.

Selecting the Quantity of Coffee

Press the ▶️ icon to select desired quantity. Quantities vary by coffee type:

Programming the Espresso "My Coffee" Quantity

Default is 1 oz. To modify:

  1. Press ▶️ until "MY COFFEE" is displayed.
  2. Press and hold the one-cup icon for 8 seconds until "Program quantity" appears.
  3. The machine dispenses coffee; press the icon again when the desired level is reached. The quantity is saved.

ℹ️ Information: This setting is for one cup only. To program two cups, press the button.

Programming the Long "My Coffee" Quantity

Default is 3.4 oz. To modify:

  1. Press ▶️ until "MY COFFEE" is displayed.
  2. Press the LONG icon until "Program quantity" appears.
  3. The machine dispenses coffee; press the LONG icon again when the desired level is reached. The quantity is saved.

Regulating the Coffee Mill

Factory preset. Adjust the grinding knob (fig. 11) while the grinder is operating:

ℹ️ Information: Adjustments are visible after at least two cups.

Making Espresso Coffee Using Coffee Beans

Important! Do not use caramelized or candied beans.

  1. Fill bean container (fig. 12).
  2. Place cup(s) under spouts (fig. 13, 14).
  3. Adjust spout height close to cup.
  4. Select strength () and size (▶️).
  5. Press the one-cup or two-cup icon (fig. 9, 16).
  6. Preparation starts with a progress bar (fig. 17).

ℹ️ Information: Delivery can be interrupted by pressing the icon. For hotter coffee, rinse the appliance or cups with hot water.

Making Long Coffee Using Coffee Beans

ℹ️ Information: Produces drip-style coffee.

Important! Do not use caramelized or candied beans.

  1. Fill bean container (fig. 12).
  2. Adjust spout height for the cup (fig. 18).
  3. Select strength () and size (▶️).
  4. Press the LONG icon (fig. 10). Preparation starts.

ℹ️ Information: Delivery can be interrupted by pressing the LONG icon. Only one long coffee at a time. Machine may grind more coffee for deliveries over 4.2 oz.

Making Espresso or Long Coffee Using Pre-Ground Coffee

Important! Never add pre-ground coffee when the machine is off. Use only one level scoop.

ℹ️ Information: Only one cup can be made at a time with pre-ground coffee.

  1. Press the icon until "Pre-ground" flashes.
  2. Add one level scoop of pre-ground coffee to the funnel (fig. 19).
  3. Place cup under spouts.
  4. Press the one-cup icon for espresso or LONG icon for long coffee.

ℹ️ Information: For LONG COFFEE over 4.2 oz, add more pre-ground coffee when prompted and press OK.

Making Drinks with Milk

Filling and Attaching the Milk Container

  1. Turn lid clockwise to remove (fig. 20).
  2. Fill container with milk to MAX level (fig. 21).
  3. ℹ️ Information: Use skimmed or 2% milk at refrigerator temperature (approx. 41°F). Clean milk lid and hot water nozzle regularly.
  4. Ensure milk intake tube is correctly inserted (fig. 22).
  5. Replace lid, turn counterclockwise until it clicks.
  6. Remove hot water spout (fig. 23).
  7. Attach milk container to nozzle and push firmly (fig. 24). A beep confirms correct attachment.
  8. Place a large cup under spouts. For tall cups, raise the compartment lid (A17).

Making Latte

  1. Attach milk container. Set frother selector (B1) to position 2 for LATTE (fig. 26).
  2. Press the LATTE icon (fig. 27).

Message "Caffelatte... Jug selector in position: 2" appears. Frothed milk is dispensed, then coffee. Milk stops automatically.

ℹ️ Information: Press LATTE icon or icon to stop milk or coffee preparation.

Making Cappuccino

  1. Attach milk container. Set frother selector (B1) to position 2 for CAPPUCCINO (fig. 28). Adjust selector for froth density (2=denser, 1=less dense).
  2. Press the CAPPUCCINO icon (fig. 29).

Message "Cappuccino... Jug selector in position: 1" appears. Frothed milk is dispensed, then coffee. Milk stops automatically.

ℹ️ Information: Press CAPPUCCINO icon or icon to stop milk or coffee preparation.

Making Italian Macchiato

  1. Attach milk container. Set frother selector (B1) to position 2 for ITALIAN MACCHIATO (fig. 28).
  2. Press the ITALIAN MACCHIATO icon (fig. 30).

Message "Macchiato... Jug selector in position: 2" appears. Frothed milk is dispensed, then coffee. Milk stops automatically.

ℹ️ Information: Press ITALIAN MACCHIATO icon or icon to stop milk or coffee preparation.

Making Hot Milk

  1. Attach milk container. Position frother selector (B1) for desired froth (1=little, 2=abundant).
  2. Press the HOT MILK icon (fig. 31).

"HOT MILK" appears. Frothed milk is dispensed and stops automatically.

ℹ️ Information: Press HOT MILK icon to stop milk preparation.

Cleaning the Milk Container After Use

Important! Danger of burns! Hot water may exit the frothed milk tube (B5) during cleaning. Avoid splashes.

When "Press CLEAN button" flashes:

  1. Leave jug attached.
  2. Place a cup under the frothed milk spout.
  3. Press and hold the CLEAN button (fig. 32) until "Cleaning..." is complete.
  4. Remove milk container and clean nozzle with a sponge (fig. 33).

ℹ️ Information: You can still make coffee/milk while "Press CLEAN button" flashes. If making multiple milk drinks, clean after the last one. Leftover milk can be refrigerated.

Programming the Size for Each Beverage Button

Default quantities are preset. To change:

  1. Place cup under spouts.
  2. Press the desired beverage icon (LATTE, CAPPUCCINO, etc.) until "Milk for... Program quantity" appears.
  3. Release icon. Milk is dispensed.
  4. Press the icon again when desired milk quantity is reached.
  5. Coffee is then dispensed (except for HOT MILK). Message "Coffee for... Program quantity" appears.
  6. Press the icon when desired coffee level is reached. The new quantity is saved.

Hot Water

Preparation

Important! Danger of burns! Never leave unattended. Hold hot water spout by handle.

  1. Ensure hot water spout is attached (fig. 4).
  2. Place container under spout.
  3. Press the ? icon (fig. 34). "Rinsing" and "Hot water..." messages appear.
  4. Press ? to select "Hot water...", confirm with OK.
  5. Water dispenses automatically up to 8.5 oz (250ml).
  6. Press ? again to interrupt manually.

Important! Do not dispense hot water for more than two minutes.

Changing the Quantity

Default is 8.5 oz (250ml). To modify:

  1. Position container under spouts.
  2. Select "Hot water" function. Press and hold OK (approx. 8 sec) until "Hot water Program quantity" appears.
  3. Press ? again when desired level is reached. New quantity is saved.

Cleaning

Cleaning the Coffee Maker

Regularly clean the following parts:

Important! Do not use solvents, abrasive detergents, or alcohol. De'Longhi recommends specific descaler. Only the milk container is dishwasher safe. Do not use metal objects for cleaning.

Cleaning the Coffee Grounds Container

When "EMPTY GROUNDS CONTAINER" is displayed, empty and clean the container. The machine will not make coffee until this is done.

To clean:

Important! Always empty the grounds container when removing the drip tray, even if not full, to prevent clogging.

Cleaning the Drip Tray

Important! Regular emptying prevents overflow and damage.

The drip tray has a level indicator (red). Empty before the indicator protrudes.

To remove:

  1. Open service door (fig. 35).
  2. Remove drip tray and grounds container (fig. 36).
  3. Empty and wash both.
  4. Replace drip tray with grounds container.
  5. Close service door.

Cleaning the Water Tank

Clean monthly with a damp cloth and mild soap. Rinse thoroughly.

Cleaning the Coffee Nozzles

Clean nozzles periodically with a sponge or cloth (fig. 38). Check for blockages in spouts; use a toothpick (fig. 39) if necessary.

Cleaning the Pre-Ground Coffee Feed Funnel

Check monthly for blockages. Remove deposits with a dull knife if necessary.

⚠️ Danger of electric shock! Turn off and disconnect power before cleaning. Never immerse the coffee maker in water.

Cleaning the Inside of the Machine

Check weekly. Remove coffee deposits with a dull knife and sponge. Use a vacuum cleaner for residues (fig. 40).

Cleaning the Brew Group

Clean at least once a month.

Important! Do not remove brew group when appliance is on. Do not force it.

  1. Ensure machine is off.
  2. Open service door (fig. 35).
  3. Remove drip tray and grounds container (fig. 36).
  4. Press red release buttons and pull brew group out (fig. 41).

Important! Do not use detergents on brew group; it removes lubricant and can cause seizing.

  1. Soak brew group in water for 5 minutes, rinse.
  2. Reinsert brew group, push PUSH symbol until it clicks.

ℹ️ Information: If brew group is difficult to insert, align it by pressing firmly.

  1. Ensure red buttons snap out.
  2. Replace drip tray and grounds container.
  3. Close service door.

Cleaning the Milk Container

Clean each time milk is prepared:

  1. Remove milk spout and intake tube.
  2. Remove selector by pulling outwards.
  3. Wash all components with hot water and mild dish soap. They are dishwasher safe (top basket).
  4. Ensure holes and groove on selector are clean.
  5. Check intake tube and spout for blockages.
  6. Replace selector, spout, and tube.
  7. Replace lid, turning counterclockwise to hook.

Descaling

Descale when "DESCALE!" message appears.

Important! Descaler can irritate skin/eyes. Follow descaler manufacturer's safety warnings.

ℹ️ Information: Use only De'Longhi recommended descaler. Sulfamic or acetic based descalers invalidate the warranty. Failure to descale also invalidates the warranty.

  1. Turn machine on.
  2. Enter programming menu (P icon).
  3. Press ▶️/◀️ until "Descaling" is displayed.
  4. Press OK to confirm. "Descaling Confirm?" appears. Press OK.
  5. "Add descaler. Confirm?" is displayed. Empty water tank (A13). Pour diluted descaler into tank.
  6. Place a 1.5 L container under the hot water spout.
  7. Important! Danger of burns! Hot water with descaler flows from spout. Avoid splashes.
  8. Confirm with OK. "Descaling Underway..." message appears.

The process includes rinses and pauses. After ~30 mins, "Rinsing FILL TANK!" is displayed.

  1. Rinse with clean water: Empty, rinse, refill water tank. "Rinsing... Press OK" is displayed.
  2. Empty the descaler collection container.
  3. Press OK to start rinsing. Hot water flows from spout.
  4. When water tank is empty, "Rinsing complete... Press OK" is displayed.
  5. Press OK, fill water tank. Appliance is ready.

Setting Water Hardness

The DESCALE message frequency depends on water hardness. Factory setting is 4 (very hard water).

Water Hardness Levels:

Measuring Water Hardness

  1. Use the "TOTAL HARDNESS TEST" indicator paper.
  2. Immerse paper in water for 1 second.
  3. Remove and shake lightly.
  4. After a minute, 1-4 red squares form, indicating hardness level.

Setting Water Hardness

  1. Press P icon to enter programming menu.
  2. Press ▶️/◀️ to select "Water hardness".
  3. Confirm with OK.
  4. Press ▶️/◀️ to set hardness based on test strip squares.
  5. Confirm with OK.
  6. Exit with ESC.

The machine is now reprogrammed.

Using Compartment for Latte Glass

Lift compartment door (A17) to accommodate larger latte cups.

Displayed Messages

Limited Warranty

This warranty applies to De'Longhi Super Automatic Espresso Machines.

What does the warranty cover?

Covers defects in material and workmanship for two years from the purchase date. Repair or replacement at company expense. Applies only if used according to factory directions.

What is not covered?

Does not cover defects from unauthorized repairs, abuse, misuse, negligence, or accidents. Consequential and incidental damages are not recoverable.
