Cooking Styles Explained: Direct vs. Indirect Heat
- Direct Heat: Positioning food directly above the flame for searing steaks, thinner cuts of meat, and vegetables. Keep the lid closed to cook faster.
- Indirect Heat: Similar to baking, food is placed over an unlit burner. Ideal for cooking tough cuts of meat that require a low and slow approach, and for using a smoker pipe.
- Rotisserie: Seals in juices, provides a beautiful sear, and self-bastes larger cuts of meat.
- Napoleon's Infrared Side and Rear Burners: Produce intense 1800°F heat to instantly sear meat and lock in flavor and juice.
- Smoker Tube: Combine with INDIRECT HEAT to create flavorful, stress-free meals. Fill with wet woodchips, position over the left burner turned on high, place food on the right, and smoke under a closed lid.
- Charcoal Trays: Unique to Napoleon, allowing you to switch from gas to charcoal in a snap.
How Does Infrared Cooking Work?
Infrared technology uses radiant energy similar to the sun. Low-frequency waves travel from the infrared burner directly to your food without heating the surrounding air. Napoleon infrared burners, with ceramic tiles and thousands of evenly spaced flame ports, heat up to 1800°F in seconds, producing radiant infrared energy. This intense heat, or SIZZLE ZONE®, quickly sears your food, locking in moisture and flavor for delicious, juicy meals in less time.

Cook the Perfect Infrared Steak:
- Bring steak to room temperature, pat dry, and season generously.
- Preheat infrared burner for one minute.
- Place steak on the preheated grid.
- Sear for 1-2 minutes, turn 90-degrees, and continue searing for 1-2 minutes.
- Remove and rest for rare to medium-rare, or continue cooking using indirect heat for perfect doneness.
TIP: Choose a well-marbled steak for more flavor and tenderness. A perfect steak size is about 1 1/2 to 2 inches thick and 12 to 16 ounces.
