Introduction to Alicyclobacillus

The genus Alicyclobacillus comprises Gram-positive, acidophilic, and thermophilic, spore-forming bacteria commonly found in soils. These spores can persist in food manufacturing environments, often introduced via contaminated fruit, and survive standard pasteurization processes. While non-pathogenic, these bacteria can impart undesirable disinfectant-like off-flavors, such as guaiacol and halophenols, to final products, particularly affecting fruit juices, concentrates, and preparations, including tomato-based items. Alicyclobacillus acidoterrestris is the most prevalent contaminating species within this genus, though other species have been identified in recent years.

Workflow
