General Safety Symbols:

Specific Warnings:
- WARNING: For your safety, do not store or use gasoline or other flammable vapors or liquids near this or any other appliance. Keep the area free and clear of combustibles. (See ANSI Z83.14B, 1991).

Gas Pressure:
- The appliance and its individual shutoff valve must be disconnected from the gas supply piping system during any pressure testing of that system at test pressures in excess of 12 psi (3.45 kPa).
- The appliance must be isolated from the gas supply piping system by closing its individual manual shut-off valve during any pressure testing of the gas supply piping system at test pressures equal to or less than 12 psi (3.45 kPa).
Additional Safety Notes:
- NEVER attempt to move a charbroiler section while cooking.
- The space between the legs at the bottom admits combustion air; DO NOT BLOCK THIS SPACE.
- Do not permit fans to blow directly at the unit; avoid open windows or wall-type fans that create air cross-currents.
- Ensure sufficient air is allowed into the room to compensate for air removed by any ventilating system.
- All valves must be checked and lubricated periodically by an authorized service representative.
- Do not use hose or pressure wash to clean.
- If the machine is damaged, it must be repaired by a WINCO Approved Qualified Service Technician.
Introduction and Unpacking
Congratulations on your purchase of Winco SPECTRUM™ equipment. Proper operation and maintenance will ensure years of reliable performance. SPECTRUM will not accept liability if instructions are not followed, unauthorized personnel tamper with the machine, non-original spare parts are used, the machine is not handled/cleaned correctly, or there is use damage.
Shipping Damage Inspection:
- Immediately inspect all containers for damage before and during unloading. The freight carrier is responsible for safe transit and delivery.
- If equipment is received damaged (apparent or concealed), a claim must be made with the delivering carrier. Note apparent damage on the freight bill and have it signed by the carrier representative. For concealed damage, request an inspection from the carrier within 15 days. Keep all contents and packaging material.
Unpacking the Equipment:
- Dispose of all packaging materials responsibly.
- Remove all packing materials, tape, and protective plastic from the unit.
- Clean any glue residue.
- Ensure the countertop will support the weight of the griddle.
- Place the unit in the desired position and height.
- Save the original box and packaging for future shipping needs.
Installation
Follow these instructions carefully to avoid injury.
Installation Codes and Standards:
- In the United States: Comply with state and local codes, National Fuel Gas Code (ANSI Z223.1/NFPA #54 latest edition), and NFPA Standard #96 (Vapor Removal from Cooking Equipment latest edition). Massachusetts requires compliance with 248 CMR for gas appliances vented through hoods.
- In Canada: Comply with local codes and CAN/CSA-B149.1 (Natural Gas) and CAN/CSA-B149.2 (Propane) Installation Codes.
General Installation Steps:
- Read the manual thoroughly before installation and operation. Contact your representative if you have questions.
- Remove the charbroiler from packaging and clean off all protective plastics and residues.
- Place the charbroiler on a firm, level surface, adhering to local standards for positioning, spacing, and ventilation.
- Ensure the gas supply type matches the unit's nameplate.
Leg Installation:
- The charbroiler must not be operated without legs attached.
- Install adjustable legs by screwing them into the recess nuts at each corner of the unit frame. Level the unit by turning the lower foot clockwise or counter-clockwise.
Gas Pressure Regulator Installation:
- The gas regulator is preset at 4" Water Column (W.C.) for Natural gas and 10" W.C. for L.P. Propane gas. Minor adjustments may be needed based on site-specific gas pressure.
- Install the regulator as close to the charbroiler on the gas supply line as possible. Ensure the arrow on the regulator points in the direction of gas flow, and the vent plug and adjustment screw are in an upright position.
- Minimum supply pressure (upstream of the regulator) should be 7"-9" W.C. for Natural gas and 10"-12" W.C. for L.P. Propane gas. Never connect to a supply pressure greater than ½ psig (3.45 kPa) or 14" W.C.
Leveling:
- Adjust the feet at the bottom of the legs to level the charbroiler in its final location.
Ventilation Hood:
- Install the charbroiler under a suitable ventilation hood for safe operation and proper ventilation. Keep the space between the charbroiler and the vent hood clear of obstructions.
- WARNING: Correct installation precautions, procedures, and regulations must be followed to reduce the risk of fire. Hood and fire suppression systems must be maintained per manufacturer's guidelines. Only qualified and trained personnel should use this equipment.
Gas Connection
WARNING: Do not use an open flame to check for leaks. Use a soap and water solution.
- The data plate indicates the type of gas the unit is equipped for; DO NOT connect to any other gas type.
- Gas supply connections and pipe joint compound must be resistant to propane gases.
- Purge the supply line to clean out dust, dirt, or foreign matter before connecting.
- A gas shut-off valve is required in the gas line ahead of the charbroiler. The gas supply line must be at least equivalent to 3/4" iron pipe.
- Install the supplied pressure regulator outside the broiler. Standard orifices are set for 4" W.C. for Natural Gas / 10" W.C. for L.P. Propane. Use the 1/8" pipe tap on the burner manifold for checking pressure. Ensure gas piping is clean and free of obstructions.
- An adequate gas supply is necessary; undersized or low-pressure lines will restrict gas volume. Minimum supply pressure: 7"-9" W.C. for Natural gas, 10"-12" W.C. for L.P. Propane. Manifold pressure should not drop appreciably when all units operate simultaneously.
- When testing the gas supply piping system:
- If test pressures exceed ½ psig (3.45 kPa), disconnect the charbroiler and its shutoff valve from the system.
- If test pressures are ½ psig (3.45 kPa) or less, isolate the charbroiler by closing its manual shut-off valve during testing.
Three (3) Position Grate Rail Installation:
- Hang the grate rail on the rear surround splash.
- Place the top cooking grates with grid bars angled toward the front (grooves guide drippings) or flat.
- NOTE: Cooking grates are heavy-duty cast iron and will oxidize if submerged in water. Lightly oil grates if not used regularly.
Installation Surface Requirements:
- These units are suitable for installation on non-combustible surfaces only.
- Combustible Clearances: 6" sides, 6" rear, 4" floor.
- Non-combustible Clearances: 0" sides, 6" rear, 4" floor.
- WARNING: This equipment gets extremely hot! Do not position or operate near combustible materials/flammable objects. Do not obstruct combustion/ventilation air flow. Ensure adequate clearance for air openings and front panel removal.
Conversion (Natural Gas to Propane)
WARNING: An authorized licensed technician must perform gas conversion. Failure to do so properly can result in serious injury, property damage, or death, and will void the warranty.
- Remove knobs and front panel.
- Unscrew bolts and pilot valve, then remove the manifold.
- Replace the orifice fittings into the valve (unit number is on the side of the fittings).
- Replace the front panel and knobs.
- Before installing the convertible regulator, unscrew the octagon cap. Flip the plastic insert (marked NAT/LP) to the LP position and snap it back in place.
- Continue with installation.
NOTE: Please check for leakage before re-installing the control panel.
CAUTION: Clean the regulator at least once a month. Ensure the vent opening is clear to prevent pressure variations and maintain optimal performance.
Lighting and Operation
Lighting Pilot:
- Turn off the manual valve and wait 5 minutes to clear the gas.
- Turn all knobs to the "OFF" position.
- Hold an ignition source (e.g., a lit match) at the pilot. Once the flame is established, remove the ignition source. Adjust pilot flame height if necessary by turning the pilot valve screw.
- Turn burner knobs to "ON". If the burner does not ignite, open the pilot valve slightly more. If the pilot flame is too large, turn it down and reset burner ignition. The pilot flame should be small but sufficient for reliable burner ignition.
Lighting Main Burner:
- Turn the burner knob to "ON", then adjust to the desired flame level. The adjustment range is virtually infinite between "ON" and "OFF".
Main Burner Air Supply:
- For efficient combustion, a proper balance of gas volume and primary air is needed. Insufficient air causes a yellow, streaming flame. Primary air is controlled by an air shutter on the front of the burner.
- Loosen the screws on the front of the burner and adjust the air shutter to eliminate yellow tips on the flame. Tighten the screws to lock the shutter.
Operation:
- Before operating, check that the charbroiler is sitting level and adjust the feet if necessary.
- NOTE: Upon first use, a metal-burning smell may occur; this is normal and will decrease with use.
- The charbroiler and its parts get very hot. Use caution when operating, cleaning, or servicing.
- Controls: Each burner is individually controlled by heavy-duty infinite control valves, with an input of 35,000 BTU/h.
Cleaning, Care & Maintenance
CAUTION: Use only non-abrasive cleaners. Abrasive cleaners can scratch the finish and make it susceptible to dirt. Avoid cleaners containing chlorine, iodine, ammonia, or bromine chemicals, as they can deteriorate stainless steel and glass.
Initial Cleaning:
- Before operation, wash the grate and unit exterior with a mild detergent or soap solution. Do not use abrasive cleaners. If stainless steel surfaces discolor, clean only in the direction of the finished grain.
Daily Cleaning:
- Always turn the unit off and allow it to cool completely before cleaning.
- After each use, thoroughly clean the back, sides, top, and front of the unit.
- Clean trivets daily.
- Empty and clean the grease tray daily.
Weekly Cleaning:
- Clean unit thoroughly. Clean stainless steel or chromed surfaces with a damp cloth and polish with a soft, dry cloth. Detergent may be used for cleaning. Use a non-abrasive cleaner for discolorations.
- Keep burner air shutter openings and main burner ports clean. To clean burners, boil them in a strong lye water solution for 15-20 minutes, then brush or use a sharp-pointed metal instrument to ensure open ports.
Troubleshooting
If the equipment does not operate properly, check the following before calling for service:

Assembly Steps:
- Prepare front and rear hangers, briquettes, and cast iron racks.
- Install cast iron rack hangers on the front and rear frame. Align the rear hanger with 2 holes to the pins on the charbroiler.
- Install cast iron racks onto the rack hangers.
- Place eight (8) briquette rocks per rack in a straight line over the burner.
