Insert the pointed end of the probe into the thickest part of the meat, avoiding bones or gristle, to get an accurate internal temperature reading. For ambient temperature monitoring in a smoker or grill, use one of the provided clips to attach a probe to the grill grate, ensuring it is not directly touching the food or the heat source.
