5.2 Sausage Stuffing
- Preparation: Prepare your seasoned ground meat mixture. Ensure it is well-chilled. Soak sausage casings in warm water as per casing instructions.
- Assemble for Stuffing: Remove the grinding blade and grinding plate. Insert the appropriate sausage stuffer tube into the grinder body and secure it with the locking ring.
- Load Casing: Carefully slide the prepared casing onto the stuffer tube, leaving a small overhang at the end.
- Position: Place a bowl under the stuffer tube to support the filled sausage.
- Power On: Turn the KitchenAid mixer to a low speed (e.g., Speed 4) to begin stuffing.
- Stuff: Feed the ground meat mixture into the food tray and use the food pusher to guide it into the stuffer tube. Guide the casing as it fills, ensuring even distribution and avoiding air pockets.
- Tie Off: Once filled, tie off the ends of the sausage and twist into desired links.
