1. Important Safety Instructions
Please read all instructions carefully before operating the Buffalo CD400 Meat Grinder. Failure to follow these instructions may result in electric shock, fire, or serious injury.
- Electrical Safety: Ensure the power supply matches the voltage specified on the appliance. Always plug into a grounded outlet. Do not operate with wet hands or near water. Disconnect power before cleaning or servicing.
- Sharp Blades: The grinding plates and blade are extremely sharp. Handle with extreme care during assembly, disassembly, and cleaning. Keep fingers and utensils away from the feeding opening and grinding head during operation.
- Personal Safety: Always use the food pusher provided to feed meat into the grinder. Never use your hands or other objects. Keep loose clothing, hair, and jewelry away from moving parts.
- Supervision: This appliance is not intended for use by persons with reduced physical, sensory, or mental capabilities, or lack of experience and knowledge, unless they have been given supervision or instruction concerning use of the appliance by a person responsible for their safety. Children should be supervised to ensure they do not play with the appliance.
- Overload Protection: The unit is equipped with overload protection. If the motor stops due to overload, switch off the unit, unplug it, and allow it to cool before attempting to restart. Remove any obstructions.
- Stable Operation: Ensure the meat grinder is placed on a stable, level, and dry surface before operation. The non-slip feet help maintain stability.
- Intended Use: Use this appliance only for its intended purpose of grinding meat. Do not attempt to grind bones, nuts, or other hard materials that could damage the machine.

2. Product Overview

2.1 Components
The meat grinder consists of several key parts:
- Motor Housing: The main body containing the 800W motor and control panel.
- Feeding Tray: Stainless steel tray for holding meat before grinding.
- Feeding Tube: Where meat is pushed into the grinding mechanism.
- Auger (Worm): Propels meat through the grinding head.
- Cutting Blade: Sharp blade that cuts the meat against the grinding plate.
- Grinding Plates: Perforated discs (fine, medium, coarse) that determine the texture of the ground meat.
- Retaining Ring: Secures the grinding head components.
- Food Pusher: Used to safely push meat into the feeding tube.

3. Setup and Assembly
Before first use, clean all removable parts thoroughly. Ensure the unit is unplugged from the power outlet during assembly.
- Placement: Place the motor housing on a stable, level, and dry countertop. Ensure there is adequate space around the unit for ventilation and operation.
- Attach Grinding Head: Insert the grinding head into the motor housing opening and secure it by turning the locking knob clockwise until tight.
- Assemble Grinding Components:
- Insert the auger (worm) into the grinding head.
- Place the cutting blade onto the auger shaft, ensuring the sharp edges face outwards towards the grinding plate.
- Select the desired grinding plate (fine, medium, or coarse) and place it over the cutting blade, aligning the notch on the plate with the pin on the grinding head.
- Screw on the retaining ring clockwise until it is hand-tight. Do not overtighten.
- Attach Feeding Tray: Place the stainless steel feeding tray onto the top of the grinding head.
- Power Connection: Plug the power cord into a suitable grounded electrical outlet (220V).

4. Operating Instructions
Always ensure the unit is properly assembled and plugged in before operation. Prepare your meat before starting the grinder.
4.1 Preparing Meat
- Cut meat into pieces that fit easily into the feeding tube (approximately 2-3 cm cubes).
- Remove any bones, large gristle, or tough tendons to prevent damage to the grinder.
- For best results, chill the meat and grinder components (auger, blade, plates) in the refrigerator for 30 minutes before grinding. This helps prevent smearing and ensures cleaner cuts.
4.2 Grinding Meat
- Place a suitable container under the grinding head to collect the ground meat.
- Switch the unit ON using the control switch.
- Place prepared meat into the feeding tray.
- Using the food pusher, gently feed the meat into the feeding tube. Never use your hands or fingers.
- Continue feeding meat until all desired quantity is ground.
- Once finished, switch the unit OFF and unplug it from the power outlet.

4.3 Using the Reverse Function
The reverse function is useful for clearing blockages or processing tougher, fattier meats that might get stuck.
- If the grinder jams or slows significantly, switch the unit OFF immediately.
- Switch the unit to the "REV" (Reverse) position. This will cause the auger to rotate in the opposite direction, pushing the meat back out.
- Once the blockage is cleared, switch the unit OFF, then back to the "ON" position to resume normal grinding.
- If the blockage persists, unplug the unit, disassemble the grinding head, and manually clear the obstruction.

4.4 Making Sausages
To make sausages, replace the grinding plate and cutting blade with the appropriate sausage stuffing attachment.
- After grinding your meat, disassemble the grinding plate and cutting blade.
- Attach the desired sausage stuffing nozzle to the grinding head and secure it with the retaining ring.
- Prepare your sausage casing (natural or artificial) according to its instructions.
- Slide the casing onto the sausage nozzle, leaving a small overhang at the end.
- Switch the unit ON and feed the seasoned ground meat into the feeding tube.
- Guide the casing as it fills, ensuring even distribution and avoiding air pockets. Do not overfill.
- Once the casing is filled, switch the unit OFF, remove the sausage, and twist or tie it into links.
5. Cleaning and Maintenance
Regular cleaning and proper maintenance will ensure the longevity and hygienic operation of your Buffalo CD400 Meat Grinder. Always unplug the unit before cleaning.
5.1 Cleaning
- Disassembly: Unplug the unit. Disassemble the feeding tray, retaining ring, grinding plate, cutting blade, auger, and grinding head.
- Initial Rinse: Rinse all removable parts under warm running water to remove large meat residues.
- Washing: Wash all removable parts with warm, soapy water and a soft brush. Pay special attention to the holes in the grinding plates and the sharp edges of the blade.
- Motor Housing: Wipe the motor housing with a damp cloth. Never immerse the motor housing in water or spray it directly with water.
- Drying: Thoroughly dry all parts immediately after washing to prevent rust, especially for the cutting blade and grinding plates. Air drying is not recommended for these parts.
- Lubrication: After drying, apply a thin layer of food-grade mineral oil to the cutting blade and grinding plates to protect them from corrosion.
- Reassembly: Reassemble the unit once all parts are dry and lubricated.
5.2 Storage
Store the meat grinder in a clean, dry place, away from direct sunlight and extreme temperatures. Keep all accessories together to prevent loss.
