  4. Preheat: Close the main door and allow the smoker to preheat to your target smoking temperature. Monitor the built-in thermometer.
  5. Load Food: Once preheated, carefully place your food on the cooking grates. Arrange food to allow for proper air circulation.
  6. Maintain Temperature: Adjust the gas control knob as needed to maintain a consistent temperature. The two-drawer system allows you to add more wood chips or water without opening the main door, which helps stabilize the internal temperature.
  7. Monitor Cooking: Use a separate meat thermometer to check the internal temperature of your food for doneness.
  8. Shut Down: When finished, turn the gas control knob to the 'OFF' position and close the valve on the propane tank.
