Machine Functions & Operation
PULSE: Press the PULSE button repeatedly for controlled chopping.
ON (Continuous): Press the ON button for continuous operation. Ingredients can be added through the feed tube using the pusher. The motor stops when the OFF button is pressed or if safety mechanisms are triggered.
Operating Instructions:
- Practice with foods like zucchini or potatoes, cut into uniform 1-inch pieces.
- Place the work bowl, attach the blade, add ingredients, and secure the cover.
- Use the pusher assembly to guide food into the feed tube.
- Utilize the PULSE function for controlled chopping, checking texture frequently to avoid overprocessing.
- For puréeing, process continuously until the desired texture is achieved.
Removing Processed Food:
- Wait for the blade to stop spinning.
- Remove the cover and pusher assembly.
- Remove the work bowl from the base.
- Carefully remove the blade by its hub, ensuring hands are dry.
Kneading Yeast Dough
The dough blade is designed for efficient mixing and kneading of yeast doughs. It is recommended for recipes requiring more than 3½ cups of flour. Never process dough that is too stiff to knead comfortably by hand.
Dough Types:
- Typical Bread Dough: Soft, pliable, slightly sticky, cleans the bowl.
- Typical Sweet Dough: Rich, sticky, requires less kneading.
Machine Capacity: Refer to the recommended work bowl capacities for different dough types.
Measuring Flour: Use the "stir, scoop and sweep" method or weigh flour for accuracy.
Proofing Yeast: Dissolve yeast in warm liquid (105°-120°F) and check for foaming.
Kneading Process: Add liquids slowly. Knead until the dough cleans the bowl or reaches the desired consistency. Avoid overheating the dough (ideal temperature 80°F, not exceeding 110°F).
Troubleshooting Dough: Covers issues like blades not incorporating ingredients, dough rising in the bowl, dough not cleaning the bowl, dough feeling tough, or leaks.
Preparing Food for Slicing & Shredding
General guidelines include trimming food, cutting flat ends for stability, and packing food snugly but not too tightly in the feed tube. Always use the pusher and never fingers or spatulas in the feed tube.
Techniques:
- Slicing/Shredding: Use appropriate discs and pressure based on food type (soft, medium, hard).
- Specific Foods: Instructions are provided for round fruits/vegetables, peppers, large fruits, cabbage, French-cut green beans, matchsticks/julienne strips, meat, poultry, and cheese.
- Cheese: Differentiates between firm cheeses suitable for slicing/shredding and soft cheeses to avoid.
