Important Safeguards

The wattage rating for your Stand Mixer is printed on a tag under the mixer base and on the trim band.
If the power cord is too short, have a qualified electrician or serviceman install an outlet near the appliance.
⚠️ Electrical Shock Hazard: Plug into a grounded 3-prong outlet. Do not remove the ground prong. Do not use an adapter. Failure to follow these instructions can result in death, fire, or electrical shock.
Troubleshooting Problems
Please read the following before calling your service center:
- The Stand Mixer may warm up during use. Under heavy loads with extended mixing times, the top of the unit may become warm to the touch; this is normal.
- The Stand Mixer may emit a pungent odor, especially when new. This is common with electric motors.
- If the flat beater hits the bowl, stop the Stand Mixer. Refer to "Beater to Bowl Clearance" on page 13.
Keep a copy of your sales receipt as proof of purchase to ensure in-warranty service.
If your Stand Mixer malfunctions or fails to operate, check the following:
- Is the Stand Mixer plugged in?
- Is the fuse in the circuit to the Stand Mixer working? If you have a circuit breaker box, ensure the circuit is closed.
- Turn the Stand Mixer off for 10-15 seconds, then turn it back on. If it still does not start, allow it to cool for 30 minutes before turning it back on.
- If the problem persists, refer to the "KitchenAid® Stand Mixer Warranty" or "Arranging for Service After the Warranty Expires" on pages 4 and 5.
Do not return the Stand Mixer to the retailer, as they do not provide service.
Tilt-Head Stand Mixer Features

Assembling Your Tilt-Head Stand Mixer
To Attach Bowl:
- Turn speed control to OFF.
- Unplug stand mixer or disconnect power.
- Tilt motor head back.
- Place bowl on bowl clamping plate.
- Turn bowl gently in a clockwise direction to secure it.
- Plug mixer into a proper electrical outlet.
To Remove Bowl:
- Turn speed control to OFF.
- Unplug stand mixer or disconnect power.
- Tilt motor head back.
- Turn bowl counterclockwise to detach it.
To Attach Flat Beater, Wire Whip, or Dough Hook:
- Turn speed control to OFF.
- Unplug stand mixer or disconnect power.
- Tilt motor head back.
- Slip the beater onto the beater shaft and press upward as far as possible.
- Turn the beater to the right, hooking it over the pin on the shaft.
- Plug mixer into a proper electrical outlet.
To Remove Flat Beater, Wire Whip or Dough Hook:
- Turn speed control to OFF.
- Unplug stand mixer or disconnect power.
- Tilt motor head back.
- Press the beater upward as far as possible and turn left.
- Pull the beater from the beater shaft.
To Lock Motor Head:
- Ensure the motor head is completely down.
- Place the locking lever in the LOCK position.
- Before mixing, test the lock by attempting to raise the head.
To Unlock Motor Head:
- Place the lever in the UNLOCK position.
NOTE: The motor head should always be kept in the LOCK position when using the mixer.
To Operate Speed Control:
Plug the mixer into a proper electrical outlet. The speed control lever should always be set on the lowest speed for starting, then gradually moved to the desired higher speed to avoid splashing ingredients out of the bowl. Refer to page 14 for the Speed Control Guide.
⚠️ Injury Hazard: Unplug mixer before touching beaters. Failure to do so can result in broken bones, cuts, or bruises.
Using Your Pouring Shield

To Attach Pouring Shield:
- Turn speed control to OFF.
- Unplug stand mixer or disconnect power.
- Attach the flat beater, dough hook, or wire whip and bowl. Refer to page 9.
- Place the back half of the shield (without the chute) on the rim of the bowl.
- Insert the tabs on the front half of the shield (with the chute) under the tab openings on the back half of the shield, then lower the shield to lock it into place.
To Remove Pouring Shield:
- Turn speed control to OFF.
- Unplug stand mixer or disconnect power.
- Tilt motor head back.
- Lift the pouring chute from the bowl.
- Slide the back half of the shield from the bowl.
- Remove the attachment and bowl.
To Use Pouring Shield:
- Pour ingredients into the bowl through the chute portion of the shield.

Mixing Time
Your KitchenAid® Stand Mixer mixes faster and more thoroughly than most other electric Stand Mixers. Therefore, mixing times in traditional and non-packaged recipes may need adjustment to prevent overbeating. For cakes, for example, beating time may be half as long as with other Stand Mixers.
To determine ideal mixing time, observe the batter or dough and mix until it achieves the desired consistency, such as "smooth and creamy."
Refer to the Speed Control Guide on page 14 for selecting appropriate speeds.
Tilt-Head Stand Mixer Use
NOTE: Do not scrape the bowl while the Stand Mixer is operating. The bowl and beater are designed for thorough mixing without frequent scraping. Scraping the bowl once or twice during mixing is usually sufficient. Turn the unit off before scraping.
The Stand Mixer may warm up during use. Under heavy loads with extended mixing time, the top of the unit may become warm to the touch; this is normal.
Care and Cleaning
The bowl, white flat beater, and white dough hook are dishwasher safe. Alternatively, clean them thoroughly in hot, sudsy water and rinse completely before drying.
The wire whip should be hand washed and dried immediately. Do not wash the wire whip in a dishwasher. Do not store beaters on the shaft.
NOTE: Always unplug the Stand Mixer before cleaning. Wipe the Stand Mixer with a soft, damp cloth. Do not use household or commercial cleaners. Do not immerse in water. Wipe the beater shaft frequently to remove any accumulated residue.
Beater to Bowl Clearance
Your Stand Mixer is factory-adjusted so the flat beater just clears the bottom of the bowl. If the flat beater hits the bottom or is too far from the bowl, you can easily correct the clearance.
- Turn speed control to OFF.
- Unplug stand mixer or disconnect power.
- Tilt motor head back.
- Turn screw (A) SLIGHTLY counterclockwise (left) to raise the flat beater or clockwise (right) to lower it.
- Adjust so the flat beater just clears the surface of the bowl. Over-adjusting the screw may prevent locking the motor head when it is lowered.

NOTE: When properly adjusted, the flat beater will not strike the bottom or side of the bowl. If the flat beater or wire whip strikes the bowl, the coating may wear off the beater, or the wires on the whip may wear.

NOTE: The mixer may not maintain fast speeds under heavy load, such as when using the Pasta Maker or Grain Mill attachments. This is normal.
NOTE: The Speed Control Lever can be set between the listed speeds to obtain speeds 3, 5, 7, and 9 for finer adjustment. Do not exceed Speed 2 when preparing yeast dough, as this may damage the mixer.
Mixing Tips
Converting Your Recipe for the Mixer
Use the mixing instructions in this manual to adapt your favorite recipes for the KitchenAid® Stand Mixer. Look for similar recipes and follow their procedures.
For example, the "quick mix" method (or "dump" method) is ideal for simple cakes. This method involves combining dry ingredients with most or all liquid ingredients in one step.
More elaborate cakes, like tortes, should use the traditional cake mixing method, where sugar and shortening/butter/margarine are creamed before other ingredients are added.
Mixing times for cakes may be shorter with a KitchenAid® Stand Mixer compared to other mixers, often taking about half the time.
To determine ideal mixing time, observe the batter or dough and mix until it achieves the desired consistency, such as "smooth and creamy."

Adding Ingredients
Add ingredients close to the side of the bowl, not directly into the moving beater. The Pouring Shield can help simplify this process.
NOTE: If ingredients at the bottom of the bowl are not mixed, the beater may not be low enough. See "Beater to Bowl Clearance" on page 13.
Cake Mixes
For packaged cake mixes, use Speed 2 for low, Speed 4 for medium, and Speed 6 for high. Mix for the time stated on the package directions for best results.
Adding Nuts, Raisins, or Candied Fruits
Follow individual recipes for guidelines. Generally, add solid materials in the last few seconds of mixing on Stir Speed. The batter should be thick enough to prevent fruit or nuts from sinking. Dust sticky fruits with flour for better distribution.
Liquid Mixtures
Mix liquids at lower speeds to avoid splashing. Increase speed only after the mixture has thickened.
Egg Whites
Place room temperature egg whites in a clean, dry bowl. Attach the bowl and wire whip. Gradually turn to the designated speed and whip to the desired stage, avoiding splashing.

Whipping Stages Note: Your KitchenAid® mixer whips egg whites quickly. Watch carefully to avoid overwhipping. The stages are described above.
Whipped Cream
Pour cold whipping cream into a chilled bowl. Attach the bowl and wire whip. Gradually turn to the designated speed and whip to the desired stage, avoiding splashing.

Attachments and Accessories
General Information
KitchenAid® attachments are designed for longevity. The attachment power shaft and hub socket have a square design to prevent slipping during power transmission. The hub and shaft housing are tapered for a snug fit, even after prolonged use. KitchenAid® attachments do not require an extra power unit; the power unit is built-in.

General Instructions
To Attach:
- Turn the speed control to OFF.
- Unplug mixer or disconnect power.
- Loosen the attachment knob by turning it counterclockwise and remove the attachment hub cover.
- Insert the attachment shaft housing into the attachment hub, ensuring the attachment power shaft fits into the square attachment hub socket. Rotate the attachment back and forth if necessary. The pin on the attachment should fit into the notch on the hub rim when properly positioned.
- Tighten the attachment knob clockwise until the attachment is completely secured to the mixer.
- Plug mixer into a proper electrical outlet.
To Remove:
- Turn the speed control to OFF.
- Unplug mixer or disconnect power.
- Loosen the attachment knob by turning it counterclockwise. Rotate the attachment slightly back and forth while pulling it out.
- Replace the attachment hub cover. Tighten the attachment knob clockwise.
General Instructions for Making and Kneading Yeast Dough with the Rapid Mix Method
"Rapid Mix" is a bread baking method where dry yeast is mixed with dry ingredients before liquid is added. The traditional method involves dissolving yeast in warm water.
Rapid Mix Method:
- Place all dry ingredients, including yeast, into the bowl, reserving the last 1 to 2 cups of flour.
- Attach the bowl and dough hook. Lock the mixer head. Turn to Speed 2 and mix for about 15 seconds, or until ingredients are combined.
- Continuing on Speed 2, gradually add liquid ingredients to the flour mixture and mix for 1 to 2 minutes longer. (See Diagram A).
- Continuing on Speed 2, gently add the remaining flour, about 1/2 cup at a time. (See Diagram B). Mix until the dough clings to the hook and cleans the sides of the bowl, about 2 minutes.
- When the dough clings to the hook, knead on Speed 2 for 2 minutes, or until the dough is smooth and elastic. (See Diagram C).
- Unlock the motor head and tilt it back. Remove the dough from the hook. Follow recipe directions for rising, shaping, and baking.
NOTE: If liquid ingredients are added too quickly, they may form a pool around the dough hook and slow the mixing process.

Traditional Method:
To prepare a recipe using the traditional method, dissolve yeast in warm water in a warmed bowl. Add remaining liquids and dry ingredients, except the last 1 to 2 cups of flour. Turn to Speed 2 and mix for about 1 minute, or until thoroughly mixed. Proceed with steps 4 through 6 of the Rapid Mix method.
Both methods work well for bread preparation. The "Rapid Mix" method may be faster and easier for new bakers and is slightly more temperature tolerant.
Bread Making Tips
Making bread with a mixer differs from making it by hand. Practice will build comfort with the process. Start with an easy recipe, like Basic White Bread, to become accustomed to the KitchenAid way.
Tips for Mixing and Kneading:
- ALWAYS use the dough hook to mix and knead yeast doughs.
- NEVER exceed Speed 2 when using the dough hook.
- For a 4½-quart tilt-head mixer, NEVER use recipes calling for more than 8 cups of all-purpose flour or 6 cups of whole wheat flour.
- For a 5-quart tilt-head mixer, NEVER use recipes calling for more than 9 cups of all-purpose flour or 6 cups of whole wheat flour.
- Most bread recipes provide a flour range. Add enough flour until the dough clings to the hook and cleans the bowl sides. If the dough is sticky or humidity is high, slowly add more flour (approx. 1/2 cup at a time), but never exceed the recommended capacity. Knead after each addition until flour is worked in. Too much flour results in a dry loaf.
- Some doughs, especially with whole grain flours, may not form a ball on the hook. Kneading will still occur as long as the hook contacts the dough.
- Large recipes or soft doughs may climb the hook collar, indicating stickiness and the need for more flour. Add remaining flour quickly. For such recipes, start with all but the last cup of flour.
- Use a kitchen thermometer to ensure liquids are at the specified temperature. Hot liquids can kill yeast; cooler liquids retard yeast growth.
- Warm all ingredients to room temperature for proper dough rising. If dissolving yeast in the bowl, warm the bowl first with warm water to prevent cooling of liquids.
Bread Making Tips (Continued)
Tips for Shaping a Loaf:

- Divide dough in half. On a lightly floured surface, roll each half into a 9x14 inch rectangle. Use a rolling pin to smooth the dough and remove air bubbles.
- Starting at a short end, roll the dough tightly. Pinch to seal the seam.
- Pinch the ends and turn them under. Place the dough, seam side down, in a loaf pan. Follow recipe directions for rising and baking.
Tips for Successful Rising & Baking:
- Allow bread to rise in a warm place (80°F to 85°F), free from drafts, unless specified otherwise.
- Always cover the bowl with a towel to retain warmth and protect from drafts. Waxed paper can be used under the towel if desired.
- Alternative rising methods: (1) Place the bowl on a wire rack over hot water. (2) Place the bowl on the top rack of an unheated oven with a pan of hot water on the rack below. (3) Heat the oven to 400°F for 1 minute, turn it off, place the bowl on the center rack, and close the door.
- Rising times vary with kitchen temperature and humidity. If an indentation remains after lightly pressing fingertips into the dough, it has doubled in bulk.
- Finished yeast breads and rolls should be deep golden brown. Tapping the top should produce a hollow sound, and the bread should pull away from the pan sides easily.
- Turn loaves and rolls onto racks immediately after baking to prevent sogginess.
