This document provides comprehensive information for operating, caring for, and maintaining your KitchenAid Stand Mixer. Please read all instructions carefully before use.
Parts and Features
Identify the components of your Stand Mixer:
- Motor head: The main housing containing the motor.
- Attachment hub: Located on the front of the motor head, used for attaching various accessories.
- Attachment knob: Secures attachments to the hub.
- Speed control lever: Adjusts the mixer speed from OFF/0 to 10.
- Beater height adjustment screw: Used to adjust the distance between the beater and the bowl.
- Bowl support: Supports the mixer bowl.
- Locating pins: Align the bowl with the mixer base.
- Bowl: The container for ingredients. Available in stainless steel and other finishes.
- Bowl handle: For lifting and maneuvering the bowl.
- Bowl lift lever: (Not shown in all diagrams) Used to raise or lower the bowl.
- Beater shaft: Where beaters attach.
- Flat beater: For general mixing tasks like cakes and cookies.
- Flex Edge beater: (Select models only) Features a flexible edge for scraping the bowl.
- Wire whip: For whipping cream, egg whites, and other light mixtures.
- Spiral dough hook: For kneading yeast doughs.

General Safety Precautions:
- Read all instructions before use.
- To avoid electrical shock, do not immerse the Stand Mixer in water or other liquid.
- Close supervision is necessary when any appliance is used by or near children.
- Unplug the Stand Mixer when not in use, before attaching/detaching parts, and before cleaning.
- Avoid contacting moving parts. Keep hands, hair, clothing, and utensils away from the beater during operation.
- Do not operate with a damaged cord or plug, or if the mixer malfunctions, has been dropped, or damaged. Contact KitchenAid Customer Satisfaction Center at 1-800-541-6390.
- Use only attachments recommended or sold by KitchenAid.
- Do not use the Stand Mixer outdoors.
- Do not let the cord hang over the edge of a table or counter.
- Remove beaters, whips, or dough hooks before washing.
Electrical Requirements
WARNING: Electrical Shock Hazard
- Plug into a grounded 3-prong outlet.
- Do not remove the ground prong.
- Do not use an adapter.
- Do not use an extension cord.
Failure to follow these instructions can result in death, fire, or electrical shock.

Note: The power rating is printed on the serial plate. If the power cord is too short, have a qualified electrician install an outlet nearby.
Using the Stand Mixer
Speed Control Guide (10 Speed Stand Mixers)
All speeds feature Soft Start®, which automatically begins at a lower speed to prevent splash-out and flour puffs, then increases to the selected speed for optimal performance.

Note: Use Speed 2 for yeast doughs. Other speeds may cause mixer failure. The PowerKnead™ spiral dough hook kneads most yeast doughs efficiently within 4 minutes.

Getting Started
- Ensure the Stand Mixer is OFF and unplugged.
- Attach the bowl: Fit bowl supports over locating pins and press down on the back of the bowl until the bowl pin snaps into the spring latch. IMPORTANT: If the bowl is not securely latched, it will be unstable.
- Attach the beater: Slip the flat beater onto the shaft. Turn left, hooking the beater over the pin.
- Raise the bowl to mixing position: Rotate the bowl lift lever counter-clockwise until it is straight up. The bowl must always be in the raised position when mixing.
- Test beater-to-bowl clearance: Ensure the beater just clears the bottom of the bowl without touching it. Plug in the mixer, turn it ON, and test each speed. If the beater is too far or touches the bowl, proceed to step 6 for adjustment.
- Adjust beater-to-bowl clearance: Unplug the mixer. Lower the bowl. Adjust the beater height screw to raise or lower the bowl. Repeat steps 2-5 with the wire whip and spiral dough hook.
Note on Mixer Warmth: The Stand Mixer may become warm during use, especially under heavy loads or extended periods. This is normal. An initial pungent odor from the motor during first use is also common.
Tips for Great Results
Mixing Time
KitchenAid Stand Mixers are faster and more thorough than many others. Adjust recipe mixing times accordingly to avoid over-beating. For cakes, beating time may be half as long as with other mixers. Observe the batter/dough consistency for ideal mixing time (e.g., "smooth and creamy"). Refer to the Speed Control Guide for selecting speeds.
Mixer Use
WARNING: Injury Hazard. Unplug mixer before touching beaters. Failure to do so can result in broken bones, cuts, or bruises.
Adding Ingredients: Add ingredients close to the side of the bowl, not directly into the moving beater. A pouring shield can help.
Adding Nuts, Raisins, or Candied Fruits: Fold in solid materials during the last few seconds of mixing on STIR speed. The batter should be thick enough to prevent sinking. Dust sticky fruits with flour for better distribution.
Liquid Mixtures: Mix at lower speeds to avoid splashing. Increase speed only after the mixture has thickened.
Note: If ingredients at the bottom of the bowl aren't mixed, the beater may need adjustment (see "Using the Stand Mixer" section).
Whipping Tips for Egg Whites
Place room temperature egg whites in a clean, dry bowl. Attach bowl and wire whip. Gradually increase speed to the designated level and whip to desired stage.

Whipping Stages:
- Frothy: Large, uneven air bubbles.
- Begins to Hold Shape: Air bubbles are fine and compact; product is white.
- Soft Peak: Tips fall over when whip is removed.
- Almost Stiff: Sharp peaks form but are soft.
- Stiff but not Dry: Sharp, stiff peaks form; uniform color and glisten.
- Stiff and Dry: Sharp, stiff peaks form; speckled and dull appearance.
Note: Egg whites whip quickly; avoid over-whipping.
Whipping Tips for Whipped Cream
Pour cold whipping cream into a chilled bowl. Attach bowl and wire whip. Gradually increase speed and whip to desired stage.

Whipping Stages:
- Begins to Thicken: Cream is thick and custard-like.
- Holds its Shape: Forms soft peaks; can be folded into other ingredients.
- Stiff: Forms stiff, sharp peaks; use for topping or filling.
Note: Watch cream closely; stages are brief.
Bread-Making Tips
Bread making differs from hand-making. Use the PowerKnead™ spiral dough hook and Speed 2 for mixing/kneading yeast doughs. Using other speeds on heavy doughs may cause the mixer to stop to prevent damage (normal operation; reset speed to lower if this occurs).
- Use a kitchen thermometer for liquid temperatures specified in recipes. High temps can kill yeast; low temps retard growth.
- Warm all ingredients to room temperature for proper rising. Warm the bowl with water before dissolving yeast.
- Allow bread to rise in a warm place (80-85°F / 27-29°C), away from drafts, unless specified otherwise.
Care and Cleaning
Bowls, coated flat beaters, and coated spiral dough hooks are dishwasher-safe or can be washed in hot, soapy water. Rinse and dry thoroughly. Do not store beaters on the shaft.
Note: Always unplug the mixer before cleaning. Wipe the mixer with a soft, damp cloth. Do not use commercial cleaners or immerse in water. Wipe the beater shaft frequently.

- Shipping or handling costs to an Authorized Service Center.
- Parts or labor for mixers operated outside the specified regions.
