Introduction
Congratulations on selecting your Oster® Espresso and Cappuccino Maker. This appliance is designed to provide delicious espresso, cappuccino, and more, quickly and conveniently. Espresso is a brewing method where hot water is forced through finely ground coffee, resulting in a rich, dark coffee. It is popular in Europe for its full-bodied flavor and is typically served in small portions. Espresso serves as a base for beverages like cappuccinos and lattes. Preparing espresso differs from drip coffee due to the coffee grounds and the machine's pressure system (15 bar Italian pump). Please read and save this manual before use.

Learning About Your Appliance
Coffee Tips
Use freshly ground, dark-roasted coffee. Pre-ground coffee retains flavor for 7-8 days if stored properly. Whole beans are recommended, ground just before use. Stored beans last up to 4 weeks before flavor loss.
Bean Grinding Tips
Espresso requires a fine grind. The correct grind resembles salt. Too fine a grind will prevent water flow, appearing like powder. Too coarse a grind allows water to pass too quickly, hindering extraction. Use a quality grinder for uniform consistency; burr or conical grinders are recommended.
Before Brewing Your First Espresso
- Ensure the unit is switched off, control knob is in the off "O" position, and it is unplugged.
- Remove and wash the water reservoir, lid, filter holder, and filters in mild detergent and water. Rinse and replace them. Refer to brewing instructions before removing the filter and holder.
- For internal cleaning, follow brewing steps using only water. Do not immerse the appliance or attempt to reach internal parts.
Important: Priming the Pump
To prime the pump before the initial brew, run a brewing cycle for 30 seconds:
- Add water to the water reservoir.
- Turn the On/Off "I/O" Switch to the "I" (On) position.
- Press the Brew/Steam Switch to the brew "[coffee icon]" position and wait for the Brew/Steam Indicator Light to become solid green.
- Place a cup under the brew head and turn the control knob to the brew "[coffee icon]" position.
- After 30 seconds, turn the control knob to the off "O" position. (Some water and/or steam may release.)
How to Brew Espresso
Preparation
Gather the following:
- Fine espresso ground coffee
- Tap water (or bottled water)
- Teaspoon
- Your favorite demitasse cups
Brewing Process
- Ensure the unit is switched off and the control knob is in the off "O" position.
- Fill the water reservoir with water, ensuring it is within the "Min" and "Max" markings. Never use warm or hot water.
- Close the water reservoir lid.
- Place the filter in the filter holder, aligning the notch. Turn the filter left or right to lock it.
- Fill the selected filter with fresh, fine ground espresso coffee. Clean any excess coffee from the rim of the filter holder.
- Tamp or compress the coffee using the tamper. Do not overfill the filter.
- Position the filter holder under the brew head, attach it by moving the retainer clip back, align the handle with the unlocked icon "[unlocked icon]", and fit it into the groove. Turn the handle slowly to the right until it aligns with the locked position "[locked icon]".
- Ensure the drip guard is in place on the drip tray. Place the drip tray in the unit.
- Ensure the control knob is in the off "O" position.
- Place cup(s) under the filter holder.
- Plug the power cord into an electrical outlet and turn the On/Off "I/O" Switch to the "I" (On) position. The power indicator light will be solid red.
- Turn the Brew/Steam Switch to the brew "[coffee icon]" position. When the brew indicator is solid green, rotate the control knob counter-clockwise to the brew "[coffee icon]" position. Brewing will begin.
- When the cup is filled, turn the control knob clockwise to the off "O" position. Using less water yields a stronger espresso.
CAUTION: Do not leave the unit unattended while brewing, as the process requires manual stopping to prevent overflow or spills.
- Once brewing is complete, turn the On/Off "I/O" Switch to off "O" and unplug the unit. Allow it to cool before removing parts for cleaning.
- After cooling, remove the filter holder. Use the retainer clip to secure the filter, turn the holder upside down to discard grounds. Rinse the filter and holder with water.
- If brewing additional espresso, repeat the process.
CAUTION: Filter holder parts may be very hot. Use the retainer clip and cool parts under cold water.
For cleaning instructions, refer to the cleaning section.
NOTE: If the unit has not been used for several days, prime it for 30 seconds.
How to Make Cappuccino
Cappuccino is espresso topped with steamed and frothed milk. Frothing milk requires practice. The milk should be half steamed and half froth. For best results, froth milk in a separate, cold pitcher. Use skim or 2% milk for easier frothing. A beverage thermometer is optional.
Preparation
Gather the following:
- Fine espresso ground coffee
- Filtered water (or bottled water)
- Milk (2% recommended for best frothing)
- Frothing pitcher
- Teaspoon
- Your favorite cups
Frothing Milk
- Prepare espresso first by filling the water reservoir with cold water.
- Follow the "How to Brew Espresso" steps.
- Fill a small pitcher (stainless steel or ceramic) halfway with cold milk and place it near the machine.
- Turn the On/Off "I/O" Switch to "I" (On) and the Brew/Steam Switch to steam "[steam icon]". Wait for the indicator light to be solid green.
- Hold the pitcher under the frothing tube so the tip is slightly immersed in the milk. Turn the control knob clockwise to the steam "[steam icon]" position. Froth for about 50 seconds (for 120 mL milk) or longer for hotter milk. Ensure milk and pitcher are cold.
- When milk volume doubles, or reaches 38°C (100°F), insert the frothing tube deeper into the milk so the tip is just under the surface to create finer froth. Do not heat milk above 70°C (155°F). Avoid splattering by keeping the tube tip submerged. Turn the control knob to off "O" when done.
NOTE: A brief release of steam after frothing is normal if brewing espresso immediately after.
Making Cappuccino
Combine 1/3 espresso, 1/3 steamed milk, and 1/3 frothed milk. Pour espresso into a cup (at least 150 mL capacity), add steamed milk, and spoon on frothed milk.
IMPORTANT CLEANING TIP: After frothing milk, flush the frothing tube as per the "CAUTION" section on page 4 to remove residual milk. Clean the tube and cap after each use.
- Unplug the power cord and allow the machine to cool.
Cleaning Your Espresso/Cappuccino Maker
- Turn the control knob to off "O" and the On/Off "I/O" Switch to off "O". Unplug the power cord.
- The frothing tube may still be hot. Do not touch until cooled. Remove and wash the frothing tube cap. Wipe the frothing tube with a damp cloth. Clean the tube with a needle or toothpick.
- The water reservoir, filters, drip tray, and drip grid can be washed with soapy water or in the top rack of a dishwasher (except the filter holder). CAUTION: Do not immerse the appliance in water.
- Discard remaining water by removing the reservoir and turning it upside down over the sink. Empty the reservoir between uses and use fresh water.
- Wipe the housing with a soft, damp cloth. Do not use abrasive cleaners or scouring pads.
- Do not store the filter holder in the brew head, as this can affect the seal.
- IMPORTANT: The Filter Holder is NOT dishwasher safe.
