Electronic Control Terminology & Component Descriptions

All Wolf wall ovens utilize an electronic control system. This system monitors, regulates, and controls various functions, and displays error codes to identify potential problems. The following table defines basic electronic control system terminology and components:

Term / Component Definition / Description
Oven Controller The printed circuit board containing the microprocessor and logic inputs, communicating with the oven display, keyboard, and stepper motor control board.
Relay Board The printed circuit board containing the microprocessor, relays, and electrical connections that control and monitor unit functions.
Oven Display A vacuum fluorescent display showing oven temperature, cooking modes, error codes, cook times, and stop time.
Stepper Motor Control Board The printed circuit board with a transformer and logic control to drive the stepper motor.
Control Panel Assembly The head assembly containing the oven display(s) and keyboard.
Relays Electrical components on the relay board that switch other components ON and OFF as instructed by the microprocessor.
Microprocessor An electrical component on the control board that receives electrical signals, processes information, and sends signals to relays and other components to switch them ON or OFF.
Keyboard An assembly of glass and mylar connecting to the upper oven display.
Error Codes A number or word description appearing on the oven display if specific problems related to electrical signals occur.
MDL Motor door latch assembly including the latch motor drive, unlatch switch, latch switch, and door switch.
RTD The oven(s) temperature sensing device.
DLB A component on the relay board that connects and disconnects the L2 line to the elements when energized by logic from the oven controller.

The following sections detail electronic control input operations that customers may perform:

Field Option Mode

Allows adjustment of specific oven controller options:

Note: Field Option Mode must be entered with the oven(s) turned OFF. Press and hold TEMPERATURE for five seconds to initiate. CLEAR key cancels the mode.

Sabbath Feature

Incorporated for observance of religious holidays. Once entered, all oven functions are disabled except OFF. To initiate: Oven OFF, press Oven ON key (or Upper/Lower Oven ON for double ovens), press BAKE or ROAST key (sets 350°F), enter new temperature if desired, press ENTER. Then, press and hold ENTER for 5 seconds. "SABBATH" appears in the display. To exit, press Oven OFF key (or Upper/Lower Oven OFF).

Timed Cook Feature

Controls automatic oven timing (ON and OFF) by setting cooking time to start immediately and turn off upon completion. Requires the time of day clock to be set correctly. To initiate: Oven OFF, press Oven ON key, select cooking mode, set temperature, press COOK TIME key, enter hours/minutes. Oven starts heating after 5 seconds or ENTER press. To exit, press Oven OFF key.

Delayed Start Feature

Controls automatic oven timing (ON and OFF) to start later and turn off upon completion, or to turn off at a preset time. Requires the time of day clock to be set correctly. Not compatible with Broil, Convection Broil, and Bake Stone modes. To initiate: Oven OFF, press Oven ON key, select cooking mode, set temperature, press STOP TIME key, enter desired OFF time. Then, press COOK TIME key, enter hours/minutes oven will stay on. Press ENTER. To exit, press Oven OFF key.

Temperature Probe Feature

Measures internal food temperatures for precise doneness. For use, program recommended internal temperature minus 5°F. To initiate: Preheat oven, insert probe, plug into receptacle. Press PROBE key, enter temperature minus 5°F, press ENTER. "Lo" appears until probe reaches 100°F, then display shows rising temperature. Oven chimes when programmed temperature is reached. To exit, press Oven OFF key.

Self-Clean Mode

Heats oven to a high temperature (850°F) to burn off food soil, leaving ash residue. Door locks until temperature drops below 300°F. Average cycle time is 3 hours plus 1 hour cool down. For DO30, only one cavity can self-clean at a time. To initiate: Oven OFF, press Oven ON key, press SELF-CLEAN key, follow display prompts, press ENTER. Press ENTER again to activate. To exit, press Oven OFF key. Self-Clean time can be adjusted from 3 to 4 hours using the COOK TIME key.

Bake Mode

Uses hidden bake and broil elements. Hidden bake element operates ~80% of the time, broil element ~10%. Preheat is recommended. To initiate: Oven OFF, press Oven ON key, press BAKE key. Preset temperature is 350°F. Adjust temperature using number keys and ENTER. To exit, press Oven OFF key.

Convection Mode

Uses dual convection fans and heating elements for uniform air movement. Standard recipe temperature should be reduced by 25°F. Preheat is recommended. To initiate: Oven OFF, press Oven ON key, press CONVECTION key. Preset temperature is 325°F. Adjust temperature using number keys and ENTER. To exit, press Oven OFF key.

Convection Bake Mode

Combines heat from two convection elements and the hidden bake element. Ideal for pie baking. Convection elements are on 45% of the time, hidden bake element on 90%. Standard recipe temperature should be reduced by 25°F. Preheat is recommended. To initiate: Oven OFF, press Oven ON key, press CONVECTION BAKE key. Preset temperature is 375°F. Adjust temperature using number keys and ENTER. To exit, press Oven OFF key.

Broil Mode

Uses the top broil element for intense radiant heat. Food must be turned to finish cooking. Three broil levels: Hi (550°F), Medium (450°F), Lo (350°F). Preheat is not used. Oven door must be closed. To initiate: Oven OFF, press Oven ON key, press BROIL key. Preset is 550°F (HI). Select level using number keys (2 for Medium, 3 for Lo). Press ENTER. To exit, press Oven OFF key.

Convection Broil Mode

Uses top broil element and convection fans for continuous air movement. Shortens broiling times for thicker meats. Browns exterior, keeps interior moist. Preheat is not used. Oven door must be closed. To initiate: Oven OFF, press Oven ON key, press CONVECTION BROIL key. Preset temperature is 550°F (HI). Select level using number keys (2 for Medium, 3 for Lo). Press ENTER. To exit, press Oven OFF key.

Roast Mode

Uses hidden bake and broil elements. Hidden bake element operates 75% of the time, broil element 25%. Ideal for roasting tender cuts of meat. Preheat is recommended. To initiate: Oven OFF, press Oven ON key, press ROAST key. Preset temperature is 350°F. Adjust temperature using number keys and ENTER. To exit, press Oven OFF key.

Convection Roast Mode

Uses dual convection fans and convection elements, plus top broil element. Convection elements are on 46% of the time, broil element 16%, convection fans 100%. Intensifies convective and radiant heating. Browns exterior, seals in juices. Perfect for roasting tender meats. Preheat is recommended. To initiate: Oven OFF, press Oven ON key, press CONVECTION ROAST key. Preset temperature is 325°F. Adjust temperature using number keys and ENTER. To exit, press Oven OFF key.

Bake Stone Mode

Uses a specially designed rack, heating element, and ceramic stone. Bake stone element is on 58% of the time, broil element 42%. Convection fans are on 42% of the time. Remove all oven racks, insert bake stone element, place bake stone on rack. Preheat is recommended. To initiate: Oven OFF, press Oven ON key, press BAKE STONE key. Preset temperature is 400°F. Adjust temperature using number keys and ENTER. To exit, press Oven OFF key.

Dehydration Feature

Slowly dries out food. Requires an optional accessory package. To initiate: Oven OFF, press Oven ON key, press and hold CONVECTION key for 3 seconds. Preset temperature is 160°F. Adjust temperature using number keys and ENTER. Dehydration range: 110°F - 160°F. Preheat is not used. To exit, press Oven OFF key.

Proof Feature

Uses Broil, Convection, and Bake elements to heat and balance air for proofing bread dough. Maximum temperature is 110°F. If temperature exceeds 130°F, "HOT" is indicated. Open door to cool below 120°F. To initiate: Oven OFF, press Oven ON key, press and hold BAKE key for 3 seconds. Preset temperature is 85°F. Adjust temperature using number keys and ENTER. Proofing range: 85°F - 110°F. To exit, press Oven OFF key.

Panel Lock

Disables all modes and keypads except Oven OFF and PANEL LOCK touch pads for child safety. To set: Press and hold Panel Lock for 3 seconds. "PANEL LOCKED" appears. To exit: Press and hold Panel Lock for 3 seconds. "PANEL UNLOCKED" appears.

Time of Day Clock

Set the 12-hour clock to the current time after power up. Must be reset after power failure. Visible during all modes unless a timer is set. To set: Touch Clock pad, touch number pads for time, touch Clock or Enter to start.

Diagnostic Mode

Allows Service Technicians to inspect functionality of Oven Controller and Relay boards. Enter specific key combinations to access. Displays last seven errors. Double Oven stores fourteen errors (seven per oven). To clear errors, press COOK TIME and STOP TIME keys simultaneously while in Diagnostic Mode. To toggle between error codes, press ENTER key.

Initiating Diagnostic Mode

Note: Diagnostic Mode ends 2 minutes after last key stroke or when CLEAR key is pressed.

Possible Error Indicators

The last occurring error is shown in the display. Pressing ENTER cycles through the last seven errors. COOK TIME and STOP TIME keys clear the last seven errors.

Testing the Oven Relay Board

Access Diagnostic Mode. Press a key to activate an element. The element relay and double line breaker close to complete a 240/208 VAC circuit. OVEN ON illuminates if current is detected.

Fans and Motors

Access Diagnostic Mode. Press a key to activate a fan or motor. Fan and motor relays close to complete a 120 VAC circuit. An indicator illuminates if functionality is detected.

Note: No display means no fan apparency switches.

Note: Prior to running tests on units produced after August 2007, set Temperature Display Preference to °F.

RTD Testing

Access Diagnostic Mode. RTD temperature as read by the Oven Controller is shown in the display.

Probe Testing

Access Diagnostic Mode. Probe temperature as read by the Oven Controller is shown in the Stop Cook digits. If probe not inserted, "0" is shown. If probe is shorted, "998" is shown.
