Introduction
This manual provides comprehensive instructions for the Dacor Wine Dispensing System. It covers essential information for safe and effective operation, maintenance, and troubleshooting.
The system utilizes argon gas to preserve wine, preventing oxidation and maintaining a winery-fresh taste for up to 60 days. Key features include a cooling system, tinted door to minimize light effects, and easy-to-clean dispensing components.
The system is designed for dispensing wine only and is not suitable for sparkling wines like Champagne due to potential splatter. It operates on 120 Vac, 60 Hz power and uses food-grade argon gas.
Important Safety Instructions
General Safety Precautions:
- Always install the appliance according to the provided installation instructions.
- Read this manual thoroughly before operating.
- Failure to follow instructions may result in personal injury or damage to the appliance.
- Contact your dealer immediately if you receive a damaged product.
- Keep packaging materials away from children to prevent suffocation.
- Use two or more people to move and install the system to avoid injury.
- Disconnect power before cleaning or servicing.
- Use the appliance only for its intended purpose (dispensing wine).
- Do not expose argon gas cylinders to open flame; store and use them at temperatures below 130°F (54°C).
- Ensure adequate ventilation and do not inhale argon gas directly.
- Do not place hands or fingers near moving parts, especially the dispensing head slot.
- Keep cleaning solutions away from children.
- Never allow children to sit, stand, or climb on the appliance.
- Clean and maintain the appliance regularly as instructed.
- Do not remove leveling feet or place the unit upright without feet attached.
- Handle pressurized gas with care, using specified tubing and regulator assembly.
- The appliance is not suitable for areas where a water jet could be used.
- Do not leave children unattended in the area around the appliance.
- Do not allow children to play with controls or touch appliance parts.
- Keep argon gas cylinders out of reach of children.
- Do not tamper with controls.
- Only allow trained individuals to operate the system.
- Do not insert body parts or objects into any openings, vents, or grilles.
Electrical Safety:
- Never touch the power cord with damp hands.
- Never unplug by pulling the cord; grip the plug firmly and pull straight out.
- When moving the appliance, be careful not to damage the power cord.
- Do not repair or replace parts unless recommended; service should be performed by a qualified technician.
- If the appliance is faulty, turn it off, unplug it, and call a qualified service technician.
- The power supply has a three-prong grounding plug. Use a dedicated, grounded electrical outlet.
- Do not cut or remove the third prong, use an adapter plug, modify the power cord, use an extension cord, or use a frayed/damaged power cord.
Getting to Know Your Wine Dispensing System
The system preserves wine by limiting the effects of oxidation, temperature, and light, providing a winery-fresh taste for up to 60 days.
It uses food-grade argon gas, which is heavier than air, to displace residual air in the bottle, exposing the wine only to argon.
The unit's cooling system and tinted door further minimize temperature and light effects.
Users can uncork and serve multiple vintages without waste. Bottles with dispensing heads attached can be stored in the refrigerator for up to two weeks.
All parts touching the wine are easily cleaned for sanitary dispensing.
An optional two-zone temperature kit allows for storing red wines at a higher temperature than white wines.

The appliance is designed for indoor use but can be used outdoors if covered and operated within the required temperature range.
System Components
- A Main Power Switch: Located under the spout cover, used to turn the system ON/OFF and access the service menu.
- B Control Panel: Features a display and pour control buttons for each bottle, used for setting pour volumes and temperatures.
- C Bottle Bay: Holds up to four bottles of wine.
- D Bottle Bay Door: See-through door with a lock to prevent access to bottles and the power switch.
- E Drip Tray: Removable and washable tray inside the bottle bay.
- F Spout Cover: Lifts up to allow access to the bottle bay and power switch.
- G Spouts: Part of the Clean-Pour dispensing heads, allow for quick and clean dispensing.
Control Panel Details
- H Display: Shows system status and information for each bottle, programmable with wine details.
- J Status Lights (red): Indicate system status (e.g., power failure, empty bottle, low gas pressure).
- K Purge (P) button: Purges air from a newly installed bottle.
- L Clean (C) button: Cleans the dispensing head and spout.
- M Pour buttons: Dispense wine in programmed volumes (1/4 to 8 ounces).
Status Light Indicators:
- Upper left red light flashing: Power failure (system shutting down).
- Any red light solid: Bottle below is empty.
- 4 red lights solid: No gas pressure (argon gas cylinder needs replacement).
Dispensing Head
- A Spout: Stainless steel spout for dispensing wine.
- B Head Cap: Removable cap for cleaning the dispensing head.
- C Rotor Switch: Controls wine and argon gas flow.
- D Main Body: Cleanable body for sanitary dispensing.
- E Collar: Expands the gasket to secure the head on the bottle.
- F Gasket: Seals the bottle neck; interchangeable in three sizes (wide/green, standard/red, narrow/white).
- G Pickup Tube: Draws wine from the bottle; removable for cleaning or replacement.
Setting Up Your Wine Dispenser for the First Time
- Connect the plastic gas tubing to the inert gas connector at the back of the unit.
- Ensure the power supply cable is connected to the Power Input connector and micro-switches are in the UP position.
- Plug the power cord into the power supply mounted on the back of the unit.
- Slowly lift the unit into its final location, ensuring wiring and tubing are not damaged and maintaining required space (1" above and below).
- Open the front door and swing the spout cover up.
- Ensure the power switch is in the OFF position.
- Lower the spout cover by pushing up on the lever.
- Close the bottle bay door.
- Find and connect the gas regulator assembly.
- Turn the regulator adjustment knob to OFF.
- Connect the gas supply line to the regulator assembly.
- Remove the plastic cap from the new argon gas cylinder.
- Insert the cylinder into the regulator assembly and turn clockwise until snug.
- Turn the regulator knob ON until it stops.
- Plug the power cord into a grounded 120 Vac, 60 Hz electrical outlet.
Operating Your Wine Dispensing System
Turning the System ON/OFF:
- Open the front door and swing the spout cover up.
- Slide the power switch to the ON position. The unit will run diagnostics.
- To turn off, slide the power switch to the OFF position.
- Lower the spout cover and close the bottle bay door.
Attaching the Clean-Pour Dispensing Heads:
- Open the bottle and place it on a flat surface.
- Use the head selection tool to determine the correct gasket size.
- Take a clean dispensing head and ensure the gasket is in good condition.
- Insert a clean pickup tube into the bottle.
- Insert the pickup tube firmly into the opening on the bottom of the head.
- Un-tighten the collar completely before inserting the head. Turn the collar to secure the head.
- Turn the gasket nut to ensure the gasket is secure.
- Carefully insert the dispensing head into the bottle.
- Turn the head to align the spout with the bottle label.
- Press down on the head and tighten the collar with your other hand.
- Inspect the head for proper gasket fit; adjust if necessary.
- Test the head's grip by lifting the bottle slightly.
- Turn the rotor switch to align with the arrow on the head body.
Installing Wine Bottles in the Bottle Bay:
- Open the bottle bay door with the key.
- Lift the spout cover until it locks up.
- Insert the dispensing head (with bottle attached) into the slot in the bottle bay.
- Lower the spout cover and close the bottle bay door.
Dispensing Wine:
- Hold a glass under the spout and push one of the serving size buttons.
- The display will show the wine type and programmed pour volumes.
- If a bottle is empty, a "Check Bottle" message and/or red light will appear.
Changing Wine Bottles:
- Open the bottle bay door.
- Lift the spout cover up.
- Grip the bottle and spout, and pull the bottle and head straight out.
- Remove the pickup tube from the head.
- Clean the head according to the "Care and Cleaning" section.
- Attach a dispensing head to a new bottle and insert it into the system.
Accessing the Main Service Menu:
- Open the front door and lift the spout cover.
- Slide the power switch to ON, then down to SERVICE MODE.
Changing Individual Bottle Settings:
- Bottle Service: Access settings for individual bottles from the main service menu.
- Changing the Bottle Description: Use "Wine Display" to change bottle names and descriptions.
- Changing Year: Use "Set Year" to adjust the year displayed.
- Changing Pour Volume: Use "Set VOL" to adjust the pour volume for each button.
- Turning Pour Detect On or Off: Use "Pour Detect" to enable or disable the system's ability to detect pouring faults.
Control Panel Settings:
- Standby Power: Activate "PWR STBY" to turn off displays and conserve energy.
Locking the Control Panel:
- From the main service menu, select "LOCK" to prevent undesired operation.
- To unlock, access the service menu and exit.
Setting System Temperature, Fan, and Scale:
- Access "Set Temp" from the main service menu.
- Adjust "Wine" temperature using the up/down buttons.
- Switch between °F and °C using the "Units" button.
- Select fan settings (OFF, ON, MAX) using the bottom left button.
Diagnostic Screen:
- Access "Diag. Screen" from the main service menu for troubleshooting information.
System Name Change:
- Change the system name (up to 20 characters) via "System Name" in the service menu.
Display Contrast/Brightness Settings:
- Adjust LCD contrast and brightness via "Adjust Cont." and "Adjust Bright." in the service menu.
Pre-programmed Wine Selections
The system includes pre-programmed selections for various red, white, and other wines.
Care and Cleaning
Cleaning:
- Clean only specified parts with the specified methods.
- Do not use chemicals or abrasive materials.
- Unplug the power cord before cleaning.
- Lift the unit straight out when moving for cleaning; do not wiggle. Requires two people.
- Never immerse the system in water or steam clean it.
- Dispensing heads and spout tips require regular cleaning. Pickup tubes should be cleaned before reuse if not replaced.
Drip Tray:
- Remove and wash the drip tray in warm water with dishwashing detergent.
Cleaning the Spout Tips:
- Submerge spout tips in warm water regularly, especially at the end of each day.
Cleaning the Dispensing Heads:
- Remove and wash pickup tubes.
- Remove the head cap by turning counterclockwise.
- Wash the cap and head body in a dishwasher on a normal cycle.
- Spray a small amount of food-grade silicone spray on the vinyl cap gasket before reinstallation.
- Re-position the cap, aligning the pointer with the arrow on the head body.
- Push and turn the cap clockwise.
- Align the rotor switch with the arrow on the head body.
- Attach a pickup tube to the bottom of the head body.
Cleaning the Control Panel:
- Wipe with a damp, clean cloth. Do not use chemicals or abrasive materials.
Exterior Stainless Steel Surfaces:
- Wipe with the grain using a mild detergent solution and warm water. Rinse and dry with a lint-free cloth. Dacor Stainless Steel Cleaner can also be used.
Changing/Replacing the Clean-Pour Head Gasket:
- Un-thread the gasket nut counterclockwise.
- Remove the gasket nut and gasket from the stem.
- Select the correct gasket color.
- Thread the nut back onto the stem clockwise until secure.
Replacing the Gas Cylinder
- Replace the gas cylinder when red lights are solid or a message indicates replacement.
- Open the door and swing the spout cover up.
- Slide the power switch to OFF.
- Turn the used gas cylinder counter-clockwise to remove it from the regulator assembly.
- Remove the plastic cap from the new cylinder.
- Insert the new cylinder into the regulator assembly and turn clockwise until snug.
- Slide the power switch to ON. The system will run self-tests.
- Lower the spout cover and close the door.

A list of available parts and accessories, including Dacor Stainless Steel Cleaner, pickup tubes, silicon spray, bottle sizing tool, dispensing head gaskets, regulator assembly, argon gas canisters, dispensing heads, drip cloth, drip tray, and two-zone temperature kit, is provided with Dacor Part Numbers.

What is Covered:
- Full one-year warranty for Dacor appliances sold to the first use purchaser.
- Covers defects in material or workmanship within one year of original purchase.
- Cosmetic damage must be reported within 60 days of purchase.
- Consumable parts (filters, light bulbs) are not covered.
Limitations of Coverage:
- Service provided by designated Dacor service companies.
- Dealer display and model home products may have a one-year parts warranty.
- Warranty is void if product is altered, defaced, or has missing serial numbers/tags. Proof of purchase is required.
