Cannelés Recipe
A delightful recipe for Cannelés, designed for use with the V-ZUG Combair-Steam SE appliance.
Ingredients
- 2.5 dl milk
- 1 vanilla pod
- 1/2 tonka bean, grated
- 20 g butter
- 1 knife tip of salt
- 2 egg yolks
- 100 g icing sugar
- 1 tbsp rum
- 50 g flour
Makes about 8-10 cannelés.
Preparation
- Bring the milk, split vanilla pod and seeds, grated tonka bean, butter, and salt to a boil in a pan.
- Remove the pan from the heat and let the mixture infuse for 5 minutes.
- Remove the vanilla pod.
- In a bowl, beat the egg yolks, icing sugar, and rum until combined.
- Incorporate the flour into the egg mixture.
- Gradually add the hot milk mixture and stir until the batter is smooth.
- Cover the batter with cling film and refrigerate for two days.
- Grease the cannelé moulds well.
- Fill the moulds almost to the top with the batter.
- Place the moulds onto the tray in the preheated cooking space.
- Bake according to step 3 instructions.
Baking Instructions
Preheat the fermentation chamber: Hot air at 230°C.
Place the food inside.
During hot air cooking: 140°C for 1 hour 50 minutes.
