6: Introduction To Crema
What is an Authentic Espresso?
To appreciate the quality and consistency of the Magnifica, it's important to understand what makes a good espresso. The identifying mark of an authentic Italian espresso is the brown layer of foam, called "crema," that lies on top of a properly brewed espresso. The crema is the essence of a perfect espresso, holding compounds that constitute its aroma and flavor. A good crema lasts about thirty to ninety seconds before dissipating, allowing the aromatics to infuse into the drink for an authentic taste.

Test the water hardness before first use. Refer to the "Checking the Water Hardness" section for more details.
10: Checking the Water Hardness
The machine is factory-set for a specific water hardness. To change this setting:
- After removing the "Water Hardness" test strip from its packaging, immerse it completely in water for a few seconds, then remove it.
- Wait about 30 seconds for the test strip to change color. Red squares will appear.
- Ensure the machine is off (all indicator lights are off).
- Press and hold the [On/Off Button] for 5 seconds. The four indicator lights will illuminate.
- Press the [Button] repeatedly until the number of illuminated lights matches the number of red squares on the test strip (e.g., 3 red squares means pressing until 3 lights illuminate).
- Press the [Save Button] to save the data. The machine is now programmed to indicate decalcification warnings based on water hardness.
11: Preparing the Machine
Follow these instructions:
- Set the water hardness as per the "Checking the Water Hardness" section.
- Place the machine on a flat, level surface away from any edge.
- Plug the machine into a 120V / 60Hz outlet only.
- Press the [On/Off Button].
11.1 Filling the Water Tank
Never switch the machine on when the water tank is completely empty, as it cannot make espresso/coffee and will become noisy.
- Move the frother to the center to remove the water tank.
- Rinse the water tank and fill it with clean, cold water, not exceeding the MAX line. Replace the water tank by pushing it fully in. (See Figure 1 for water tank removal and filling).
Tip: Renew water daily.
11.2 Filling the Coffee Bean Container (Using Whole Coffee Beans)
- Never fill the coffee bean container with pre-ground coffee.
Tip: Before filling, ensure the coffee bean container is free of foreign objects.
- Open the coffee bean container lid, fill with coffee beans, and close the lid. (See Figure 2 for filling the bean container).
Note: If using frozen coffee beans, thaw them for 3-4 hours before filling to prevent moisture from affecting the grinder. Never use sugar-coated beans.
It is recommended not to use oily, sugar-coated, or flavored beans, as they could damage the machine.
11.2A Setting the Coffee Grinder (Using Whole Coffee Beans)
The coffee grinder does not require adjustment for the first use. The grinder coarseness is pre-set for correct espresso/coffee delivery. If delivery is too fast or slow after the first use, adjust the grinding coarseness using the coffee grinder dial located inside the bean container (See Figure 3).
- Turning the dial one click clockwise results in faster delivery and coarser grounds.
- Turning the dial one click counter-clockwise results in slower delivery and finer grounds, making the coffee creamier.
- Adjustments are evident after brewing at least 2 cups.
- The coffee grinder dial should only be turned when the coffee grinder is on.
11.3 Filling the Ground Coffee Container (Using Pre-Ground Coffee)
- Never add pre-ground coffee when the machine is off.
- Add no more than 1 full measure of pre-ground coffee to avoid blocking the ground coffee funnel.
- Use only the provided measuring scoop for dosing.
- Use only pre-ground coffee specifically for espresso machines. Do not use whole beans, freeze-dried coffee, or other materials that may damage the machine.
- Never use instant coffee, as it can severely damage the brewing system.
Tip: Before filling, ensure the ground coffee container is free of foreign objects.
- Open the ground coffee container lid. To prepare one espresso/coffee, add one level measure of pre-ground coffee using the measuring scoop. (See Figure 4 for adding pre-ground coffee).
Note: You can only make one espresso/coffee at a time with pre-ground coffee.
Using the Machine for the First Time
Ensure the machine is plugged in and turned on using the [On/Off Button] before proceeding.
- Move the frother outwards (See Figure 5) and place a cup underneath. Turn the machine on by pressing the [On/Off Button] (See Figure 6).
- Turn the steam control dial half a turn counter-clockwise (See Figure 7). Some noise is normal.
- After a few seconds, water will release from the frother. When the cup is 1/3 full, turn the steam control dial half a turn clockwise (See Figure 8) to stop the water flow.
- Wait for the [Ready Light] and [Steam Light] to stop flashing. Flashing lights indicate the machine is pre-heating.
- The machine will perform a rinse cycle, releasing hot water into the drip tray.
- Once the lights illuminate steadily, the machine has reached the ideal temperature and is ready for use.
Before preparing espresso/coffee, ensure the green [Ready Light] and [Coffee Light] are steadily illuminated.
11.4 Setting the Espresso / Coffee Flavor Dial
Turn the espresso/coffee flavor dial (See Figure 9) to set the desired taste from regular, strong, to extra strong.
Turning the dial clockwise increases the amount of coffee beans ground, making the taste stronger. For first-time use, find the correct position by trial and error.
Avoid turning the dial too far clockwise, as this may cause slow delivery (dripping) when preparing two cups.
11.5 Espresso / Coffee Quantity
The Difference Between Espresso/Coffee Quantity
- "Ristretto" (small/short) espresso: 1/2 oz. to 1 oz. of coffee.
- Espresso: 1 oz. to 1.5 oz. of coffee.
- Large (long/double shot/American coffee): 5 oz. to 8 oz. of coffee.
Note: It is recommended to add sugar to "ristretto" or "espresso." Drink large (American coffee) black or add sugar and milk as preferred.
Tip: Adding sugar and milk before brewing ensures more uniform dissolution.
Tip: Setting the espresso/coffee quantity dial to maximum and pressing the 2-cup button prepares a 12 oz. coffee. This might be mild for some; adjust volume accordingly.
11.5B Setting the Espresso / Coffee Quantity
- Turn the coffee quantity dial (See Figure 10) to set the desired amount of espresso/coffee.
- Turning the dial clockwise makes a longer coffee. For first-time use, find the correct position by trial and error.
12: Preparing the Espresso / Coffee
Follow these instructions to prepare any quantity from 1/2 oz. to 12 oz.
Note: Water is forced through the coffee in a short time to avoid over-extraction, ensuring perfect espresso/coffee every time.
Never switch the machine on when the water tank is completely empty, as it cannot make espresso/coffee and will become noisy.
Before preparing, ensure:
- All instructions in Section 11 ("Preparing the Machine") have been followed.
- The water tank and bean/ground coffee container are full.

- Use cups pre-heated by rinsing with hot water.
- Use cups pre-heated using the cup warmer on top of the machine.
13: Frothing or Steaming (How to Make the Perfect Cappuccino or Latte)
What is cappuccino?
A cappuccino is one shot of espresso, 1/3 cup steamed milk, and a dollop of froth. It can be garnished with chocolate, cinnamon, or nutmeg.
What is a latte?
A latte is one shot of espresso (or two for a double latte), 1/2 cup steamed milk with about 1/2 to 1/3 froth.
- This feature can be used to heat liquids or froth/steam milk for cappuccinos or lattes.
- The milk frother must be cleaned after each use. Refer to the "Cleaning and Maintenance" section for detailed instructions.
Before First Use:
- The removable parts of the milk frother (body and steam nozzle) are high precision. Always keep them clean and free of milk residue. (See "Cleaning and Maintenance" for details).
Ready to Begin Frothing or Steaming:
- Fill a container (metal recommended) with about 3.5 oz. of cold milk.
- Note: Skim (0% fat) milk is recommended for the most froth and best espresso/coffee flavor. 1% and 2% milk produce less froth; regular milk (3% fat) yields half or less the froth of skim milk.
- When choosing container size, remember the volume will increase by two or three times.
- Move the milk frother to the outside of the machine.
- Prepare the espresso/coffee as described in section 12, using sufficiently large cups.
- Press the [Steam Function Button] (See Figure 17). The [Steam Light] (See Figure 18) will flash, indicating the machine is heating up.
- When the [Steam Light] remains steady (not flashing), the machine has reached the ideal temperature for steam.
- Immediately after (within 2 minutes, or the machine reverts to espresso/coffee function), dip the milk frother into the milk container (See Figure 19).
- Ensure the line on the milk frother is not immersed (indicated by arrow in Figure 20). Turn the steam control dial half a turn counter-clockwise until it stops (See Figure 7). Use caution, steam is hot!
- The released steam will increase the milk froth volume.
Note: For creamier froth, dip the frother into the milk and rotate the container slowly from bottom to top. Limit steam delivery to no more than 2 minutes at a time.
- Once desired froth is achieved, stop steam flow by turning the steam control dial clockwise until it stops (See Figure 8). Press the [Steam Function Button] (See Figure 17) to deactivate steam function.
- Note (Making espresso/coffee after steaming): Immediately after using the frother, press the [Steam Function Button] to deactivate steam. If you then press the [1-Cup Button] or [2-Cup Button] to make espresso/coffee, the machine may be too hot, causing the green [Ready Light] and [Coffee Light] to flash. Wait 10 minutes for the machine to cool down; the lights will illuminate steadily when ready.
Tip: To cool the machine down faster after deactivating steam, turn the steam control dial to release some water from the milk frother into a container until the green [Ready Light] and [Coffee Light] stop flashing.
14: Processing Hot Water Through the Frother
Follow these instructions:
- Ensure the green [Ready Light] and [Coffee Light] are steadily illuminated (not flashing).
- Turn the milk frother towards the outside of the machine (See Figure 3).
- Position a container under the milk frother (See Figure 3).
- Turn the steam control dial half a turn counter-clockwise until it stops (See Figure 7).
- Hot water will release from the milk frother into the container. Use caution, water is hot!
- To stop hot water flow, turn the steam control dial fully clockwise (See Figure 8) and return the milk frother to its original position.
Note: It is recommended to dispense hot water for no more than 2 minutes.
15: Cleaning and Maintenance
WARNING: Before any cleaning, ensure the machine is cooled, turned off (unless noted), and unplugged (unless noted).
- The machine must be cleaned for proper function.

15.4 Cleaning the Coffee Spout:
Check that the holes in the coffee spout are not blocked. Carefully scrape dry coffee residues with a needle (See Figure 21).
15.5 Cleaning the Milk Frother:
Note: Clean the milk frother after each use. Deactivate steam function before cleaning. Ensure the machine is on during cleaning.
- Release a little steam for a few seconds by turning the steam control dial counter-clockwise until it stops (See Figure 7). This discharges any residual milk from the steam nozzle.
- IMPORTANT: For health reasons, this operation prevents previously used milk from remaining in the frother.
- Hold the milk frother handle with one hand and unscrew the frother by turning it clockwise and pulling it down with the other hand (See Figure 22).
- Carefully wash the milk frother and steam nozzle in warm water.
- Check that the two holes (indicated by arrows in Figure 23) are not clogged. Clean with a needle or pin if necessary.
- Replace the steam nozzle by inserting it upwards into the steam spout and turning vigorously.
- Replace the milk frother by pushing it upwards and turning counter-clockwise.
15.6 Cleaning the Brewing System:
Warning: The brewing system can only be removed when the machine is off. Removing it while on risks damage.
Note: Clean the brewing system frequently to prevent coffee deposit buildup, which can cause malfunctions.
To clean:
- Ensure the machine is off, but not unplugged. Wait for all indicator lights to go off.
- Open the service door (See Figure 24).
- Remove and clean the drip tray and used coffee container as noted above.
- Press the two red release buttons on the brewing system (See Figure 25) and pull it out.
- Wash the brewing system under running water without detergents. Never place it in the dishwasher.
- Carefully clean the inside of the machine by scraping with a plastic or wooden fork (See Figure 26) and vacuuming residues (See Figure 27).
- Replace the brewing system by sliding it onto the supports and pin at the bottom. Push the PUSH symbol fully in until a click is heard.
Check that the two red buttons have opened out; otherwise, the service door cannot close properly.
If the brewing system is not inserted correctly (no click), the red buttons may not have opened, and the service door won't close, preventing operation. The [General Warning Light] may flash.
If insertion is difficult, squeeze the system to size by pressing from above and below simultaneously (See Figure 28). If still difficult, leave it out, close the service door, unplug, plug back in, wait for lights off, then try again.
- Replace the drip tray and used coffee container.
- Close the service door.
15.7 Decalcification:
Due to continuous heating, tubing can accumulate lime scale. When the [Decalcification Warning Light] flashes, it's time to decalcify. The machine can still be used when the light is on, but decalcifying when it flashes is recommended for best taste.
The machine must be plugged in and turned on during decalcification.
Proceed as follows:
- Prepare the decalcification solution as per its packaging. Contact De'Longhi customer service at 1-800-322-3848 (U.S. Only) for solution purchase. Use only De'Longhi-supplied solution.
- Pour the solution (20 oz. / 0.5 liters) into the water tank, then add water (20 oz. / 0.5 liters) as per solution instructions.
- Place a container (min. 60 oz. / 1.5 liters) under the milk frother (See Figure 5).
