To Reduce Risk of Injury or Damage:
- Plug only into grounded electrical outlets matching the voltage rating.
- Do not use extension cords, power strips, or multi-outlet power cords.
- Use only in a flat, level position.
- Unplug and allow to cool before cleaning or moving.
- Do not spray controls with liquids or cleaning agents.
- Unplug when not in use.
- Keep away from open flames, electric burners, or excessive heat.
- Do not operate unattended.
- Supervise closely in public areas or around children.
- Do not use food pans deeper than 4" (10 cm).
- Do not operate if damaged or malfunctioning.
- Always operate with water in the well.
Features and Controls
The unit features several controls for operation:
- A ON/OFF Switch: Illuminates in the “ON” position.
- B Water Level Marks: Used to indicate the correct water level in the wells.
- C Heat Control Dial: Sets or adjusts the heat of the well. The “0” position is OFF.
- D Low Water Light Indicator: Illuminates when the water level is low.
- E Drain Valve: Used to empty water from the wells.
- F Access Door: Opens or removes to access the drain valve.
Function and Purpose
This equipment is designed to maintain hot food at proper serving temperatures for commercial food service operations. It is not intended for cooking raw food, reheating prepared food, or for household, industrial, or laboratory use. Food must be prepared and placed in the station at proper serving temperatures.
Positioning and Clearance
ℹ️ NOTICE: Do not move the equipment by pushing or pulling on the breath guard.
- Use the equipment on a flat, level surface.
- Ensure controls and drains are accessible at all times during operation.
Operation
⚠️ WARNING: Electrical Shock Hazard
Keep water and other liquids from entering the unit to prevent electrical shock. Do not overfill pans, as liquid contact with electrical components can cause a short circuit or shock.
⚠️ CAUTION: Burn Hazard
Do not touch hot food, liquid, or heating surfaces while the equipment is heating or operating.
ℹ️ NOTICES:
- Using a voltage other than the nameplate rating will damage the unit and void the warranty.
- Drop-in units meet NSF4 standards with moist heat operation; water is required for even heating.
- Do not use food pans deeper than 4" (10 cm).
Operating Steps:
- Open the access door (F) and ensure the drain valve (E) is closed.
- Fill the well(s) with clean, fresh water up to the correct level marks. Do not overfill.
- Plug the power cord into a grounded outlet matching the unit's rated voltage.
- Turn the power switch (A) to the ON position. Set the heat control dial (C) to the highest setting.
- Cover the wells with empty food containers or covers. Allow water to preheat for 45 minutes.
- Place containers of hot food (above 140°F / 60°C) into the preheated wells.
- Reduce the heat setting to maintain a safe holding temperature and food quality.
- Monitor food temperature for safety; the US Public Health Service recommends holding hot food at a minimum of 140°F (60°C) to prevent bacteria growth.
- Maintain water level during operation. Periodically (approx. every 2 hours), remove food containers and check the water level. Add hot water if needed.
- Use gloves, mitts, or pot holders when removing hot food containers.
Cleaning
⚠️ WARNING: Electrical Shock Hazard
Do not spray the equipment with water or cleaning products, as liquid contact with electrical components can cause a short circuit or shock.
⚠️ CAUTION: Burn Hazard
Hot surfaces and food can cause burns. Allow hot surfaces to cool before handling.
General Cleaning:
- Clean the equipment daily to maintain appearance and service life.
- ℹ️ NOTICE: Do not use caustic cleaning chemicals, steel wool, or commercial lime removal products. Rinse thoroughly with clean water after cleaning.
Cleaning Steps:
- Turn the heat control dial (C) to the “0” setting and place the power switch (A) in the OFF position.
- Unplug the equipment.
- Use gloves, mitts, or pot holders when removing hot food containers.
- Allow the equipment to cool completely before cleaning.
- Rotate the drain valve (E) to the open position and drain the water.
- Clean the inside of the wells and the exterior of the equipment with a damp cloth or sponge dipped in soapy water.
- Rinse the equipment thoroughly with clean water.
- Rotate the drain valve (E) to the closed position.
Cleaning the Breath Guard:
Always use a clean, soft, lint-free cloth or microfiber cloth. Clean with a neutral cleaner, such as warm water with a small amount of dish detergent, or products specifically for cleaning Plexiglas® and acrylic. Recommended cleaners include Novus®, #1Plexi-Clear, Brillianize®.
What Not To Do:
- Do not use cleaners containing ammonia, alcohol, acetone, or dry cleaning products, as they can damage plastics.
- Do not use paper towels, abrasive materials, scratching cleansers, razor blades, brushes, steel wool, or scouring pads (e.g., Scotch Brite™).
- Do not use WD-40®, petroleum-based, industrial, or commercial cleaning products.
Removing Minor Scratches:
Fine scratches can be removed with a specialized mild abrasive polish like Novus #2 or #3. Heavier scratches may require sanding and buffing. For sanding, use progressively finer grits (250, 400, 600), followed by a buffing wheel and compound.
Troubleshooting
