2. Important Safety Information

3. Setup and Installation

3.1 Unpacking and Inspection

Upon receiving your griddle, carefully unpack it and inspect for any shipping damage. Report any damage immediately to the carrier and your supplier. Ensure all components listed in the packing list are present, including the griddle unit, drip tray, and user manual.

3.2 Location Requirements

Install the griddle in a well-ventilated area, away from combustible walls and materials. Maintain the following minimum clearances:

  • Rear: 0 inches (non-combustible construction)
  • Sides: 0 inches (non-combustible construction)

Ensure the griddle is placed on a sturdy, level, non-combustible surface capable of supporting its weight (approximately 185 pounds).

3.3 Leveling the Griddle

The griddle is equipped with adjustable legs. Use a spirit level to ensure the cooking surface is perfectly level for even cooking and proper grease drainage into the drip tray. Adjust the legs by rotating them clockwise or counter-clockwise.

3.4 Gas Connection

This griddle is designed for Natural Gas (NG) operation. Gas connection must be performed by a qualified and licensed technician in accordance with all local codes and regulations. The griddle requires a 3/4-inch NPT connection. Ensure the gas supply pressure matches the appliance requirements.

3.5 Drip Tray Installation

Slide the included drip tray into its designated slot at the front of the griddle. The drip tray collects grease and food debris, making cleaning easier.

4. Operating Instructions

4.1 Before First Use

Before using the griddle for the first time, clean the cooking surface with warm, soapy water to remove any manufacturing residues. Rinse thoroughly and dry completely. Lightly season the griddle surface with cooking oil.

4.2 Ignition Procedure

  1. Ensure the main gas supply valve to the griddle is open.
  2. Push in and turn the control knob to the desired temperature setting. You should hear the igniter click and the burner ignite.
  3. If the burner does not ignite within 5 seconds, turn the knob to the 'OFF' position, wait 5 minutes, and repeat the ignition procedure.
  4. Once ignited, the pilot light will maintain the burner flame.

4.3 Temperature Control

The HERG-36T features a built-in thermostat for precise temperature control. Rotate the control knobs to set the desired cooking temperature. The griddle will automatically adjust the gas flow to maintain the set temperature, ensuring consistent heat across the 36-inch cooking surface.

4.4 Preheating

Allow the griddle to preheat for 15-20 minutes to reach the desired cooking temperature and ensure even heat distribution across the entire surface.

4.5 Shutting Down

To turn off the griddle, rotate all control knobs to the 'OFF' position. For extended periods of non-use, it is recommended to close the main gas supply valve.

5. Cleaning and Maintenance

5.1 Daily Cleaning

  • Griddle Surface: After each use, while the griddle is still warm, scrape off food residue with a griddle scraper. Wipe the surface clean with a damp cloth. For stubborn residue, use a griddle brick or pad. Re-season lightly with cooking oil to prevent rust.
  • Drip Tray: Empty and clean the drip tray daily. Wash with warm, soapy water, rinse, and dry thoroughly before replacing.
  • Exterior Surfaces: Wipe down stainless steel exterior surfaces with a clean, damp cloth and a mild detergent. Avoid abrasive cleaners that can scratch the finish.
