3. Setup and First Use

3.1 Initial Cleaning

Before first use, wash all components that will come into contact with food. The cotton rope baskets, liners, and covers are machine washable. Other tools like the dough whisk, scrapers, and measuring spoons can be hand-washed with warm soapy water. Ensure all items are thoroughly dry before storage or use.

3.2 Preparing Proofing Baskets

For optimal non-stick performance, especially during the first few uses, lightly dust the inside of the basket liners with flour (rice flour is recommended) before placing your dough. This helps prevent sticking and promotes a smooth release of the dough.

4. Operating Instructions

4.1 Dough Preparation

  • Measuring Spoons: Use the set of 5 baking measuring spoons for accurate ingredient measurements.
  • Dough Whisk: The dough whisk is designed for efficient mixing of flour and water, helping to combine ingredients without overworking the dough.
  • Bowl Scraper: Use the flexible bowl scraper to easily remove dough from mixing bowls and to clean the sides of the bowl.
  • Stainless Steel Scraper: This tool is ideal for dividing dough on a work surface and for scraping sticky dough from countertops.

4.2 Proofing Dough

The cotton rope proofing baskets (banneton) are essential for giving your sourdough its shape and structure during the final rise (proofing). Each basket comes with a liner and a cover to create a 3-layer system for ideal moisture absorption and airflow.

  • Place the cloth liner inside the proofing basket.
  • Lightly dust the liner with flour to prevent sticking.
  • Carefully place your shaped dough into the floured basket, seam-side up.
  • Cover the dough with the provided cloth cover to maintain humidity and prevent a skin from forming.
  • Allow the dough to proof according to your recipe. The 9-inch round and 11-inch oval baskets accommodate different loaf sizes.

4.3 Temperature Monitoring

Use the included temperature probe to accurately check the internal temperature of your dough or baked bread. This helps ensure proper fermentation and doneness.

4.4 Scoring and Decorating

  • Bread Lame: Use the bread lame with its sharp blades to score the surface of your dough before baking. This controls where the bread expands, creating beautiful patterns and a better rise. The kit includes 3 replacement blades and a blade cover for safety.
  • Flour Duster & Bread Stencils: For decorative finishes, use the flour duster to lightly sprinkle flour or cocoa powder over your dough through one of the three bread stencils.

4.5 Baking

  • Silicone Bread Sling: The silicone bread sling allows for easy transfer of your proofed dough into and out of a hot Dutch oven or baking sheet, preventing burns and maintaining the loaf's shape.
  • Cooking Brush: Use the silicone cooking brush for applying egg wash, oil, or other glazes to your bread before or during baking.
  • Bread Bags: After baking and cooling, store your fresh bread in the provided bread bags to maintain freshness.

5.1 Cleaning

  • Cotton Rope Baskets, Liners, and Covers: These items are machine washable for ultimate convenience. Wash on a gentle cycle with mild detergent and air dry thoroughly.
  • Silicone Tools (Sling, Brush, Measuring Spoons): These are dishwasher safe. Hand wash for best results.
  • Metal Tools (Scrapers, Dough Whisk, Lame, Knife, Flour Duster, Temperature Probe): Hand wash with warm soapy water and dry immediately to prevent rust.

5.2 Storage

The cotton rope baskets are designed to be foldable and hangable, allowing for convenient drying and space-saving storage in any kitchen. Ensure all components are completely dry before storing to prevent mold or damage.
