3. Setup and Assembly

  2. Assemble Base/Legs: Attach the legs to the main oven body according to the provided diagrams (if applicable). Ensure all connections are secure.
  3. Install Chimney: Securely place the chimney onto the designated opening on the top of the oven.
  4. Insert Pizza Stone: Carefully slide the cordierite pizza stone into the upper cooking chamber. Ensure it sits flat and securely.
  5. Placement: Position the assembled oven on a stable, level, non-combustible outdoor surface, away from any flammable materials.

4. Operating Instructions

Achieving perfect results with your GYMAX pizza oven is straightforward with these steps:

  1. Fueling the Oven: Open the lower entrance door. Place your chosen fuel (wood or charcoal) into the combustion chamber. Start with smaller pieces of kindling to build a fire, then add larger pieces of wood or charcoal.
  2. Preheating: Once the fire is established, close the lower door. Allow the oven to preheat for approximately 15-20 minutes. The oven is designed to reach temperatures up to 500°C quickly.
  3. Temperature Control: Adjust the intensity of the fire and oven temperature using the chimney damper and the air intakes located on the oven. Opening them increases airflow and temperature, while closing them reduces it.
  4. Cooking Pizza: Once the pizza stone is hot (you can check with an infrared thermometer), use the provided pizza peel to slide your pizza onto the stone in the upper cooking chamber. Pizzas typically cook in 1-2 minutes. Rotate the pizza halfway through cooking for even browning.
  5. Cooking Other Foods: This oven is also suitable for cooking steaks, chicken, vegetables, and bread. Adjust cooking times and temperatures as needed for different foods.
  6. Removing Food: Use the pizza peel or other heat-resistant tools to safely remove cooked food from the oven.

5. Maintenance

Proper maintenance ensures the longevity and optimal performance of your pizza oven.

  • Cool Down: Always allow the oven to cool completely before cleaning or covering.
  • Ash Removal: Once cool, remove ash from the combustion chamber. A small ash shovel or brush can be used.
  • Cleaning the Pizza Stone: Do not use soap or detergents on the pizza stone. Scrape off any burnt-on food with a spatula or brush. For stubborn stains, heat the stone in the oven to burn off residue.
  • Exterior Cleaning: Wipe the exterior of the oven with a damp cloth. For stainless steel parts, use a stainless steel cleaner if necessary. Avoid abrasive cleaners.
  • Storage: When not in use, especially during adverse weather conditions, cover the oven with the provided waterproof Oxford cloth cover to protect it from rain, snow, dust, and sun rays. Store in a dry place if possible.
