4. Setup

4.1 Unboxing and Placement

Carefully remove the machine and all accessories from the packaging. Place the machine on a stable, level, and heat-resistant surface, ensuring adequate ventilation around the unit. Keep the machine away from direct sunlight, heat sources, and freezing temperatures.

4.2 Water Reservoir

Locate the water reservoir at the back or side of the machine. Remove the lid and fill the reservoir with fresh, filtered water up to the 'MAX' line. Avoid using distilled water as it can affect sensor readings. Ensure the reservoir is properly seated before proceeding.

4.3 Initial Start-up and Priming

  1. Plug the machine into a grounded electrical outlet.
  2. Turn on the main power switch. The machine will begin to heat up. The digital display will show the current temperature.
  3. Once the machine reaches operating temperature (indicated on the PID display), place a cup under the group head.
  4. Activate the brew switch to dispense water through the group head for approximately 30 seconds. This primes the brewing circuit.
  5. Open the steam wand for a few seconds to purge any air and prime the steam circuit.
  6. Repeat steps 3-5 if necessary until water flows smoothly.

5. Operating Instructions

5.1 Brewing Espresso

  1. Prepare the Portafilter: Select the appropriate filter basket (e.g., 7g for single, 14g for double). Grind fresh coffee beans to an espresso-fine consistency.
  2. Dose and Tamp: Fill the filter basket with ground coffee. Use the included stainless steel tamper to apply even pressure, creating a level and compact puck.
  3. Insert Portafilter: Wipe any loose grounds from the rim of the portafilter. Insert the portafilter into the group head and twist firmly to secure it.
  4. Set Temperature (PID): Use the PID controls to adjust the brewing temperature in one-degree increments for optimal extraction.
  5. Program Volumetric Shot: The machine allows for volumetric programming. You can program the desired volume for single and double shots. Consult the detailed programming section in the full manual for specific steps.
  6. Initiate Brew: Place your espresso cup(s) under the portafilter spouts. Press the programmed single or double shot button to start the extraction. The machine will automatically stop when the programmed volume is reached.
  7. Pre-infusion: The machine supports pre-infusion. This feature wets the coffee grounds before full pressure is applied, leading to a more even extraction. Refer to the full manual for pre-infusion programming details.

5.2 Steaming Milk

  1. Prepare Milk: Fill a stainless steel milk pitcher with cold milk.
  2. Activate Steam: Turn on the steam function. Wait for the machine to reach steaming temperature.
  3. Purge Steam Wand: Briefly open the steam wand using the walnut joystick lever to purge any condensed water. Close it immediately.
  4. Steam Milk: Immerse the steam tip just below the surface of the milk. Open the steam wand fully using the joystick. Position the pitcher to create a swirling motion, incorporating air for texture.
  5. Heat Milk: Once the desired texture is achieved, lower the wand deeper into the milk to heat it to the desired temperature (typically 140-150°F / 60-65°C).
  6. Clean Wand: Close the steam wand. Immediately wipe the wand with a damp cloth and briefly purge steam again to clear any milk residue from the tip.

5.3 Hot Water Dispensing

  1. Place a cup under the hot water tap.
  2. Activate the hot water function (refer to your machine's specific controls).
  3. Dispense the desired amount of hot water.
  4. Close the hot water tap.

6. Maintenance

6.1 Daily Cleaning

  • Drip Tray: Empty and clean the removable wire grid drip tray daily. Wash with warm, soapy water and rinse thoroughly.
  • Portafilter and Baskets: After each use, remove the portafilter and discard the coffee puck. Rinse the portafilter and filter basket under hot water. Periodically clean with a brush to remove coffee oils.
  • Group Head: Use a group head brush to clean any coffee grounds from the group head gasket and shower screen.
  • Steam Wand: Always wipe the steam wand immediately after use and purge steam to prevent milk residue buildup.

6.2 Automatic Cleaning Cycle

The Ascaso Steel DUO PLUS features a programmable automatic cleaning mode. Refer to the machine's programming menu for instructions on how to initiate and customize this cycle. This cycle typically involves backflushing with a blind filter basket and a cleaning detergent.

6.3 Limescale Prevention

The machine incorporates limescale prevention technology for its stainless steel thermoblock circuits. However, regular use of filtered water is highly recommended to minimize mineral buildup. Depending on your water hardness, periodic descaling may still be necessary. Consult the full manual for descaling procedures and recommended descaling agents.

6.4 Gasket Care

The food-grade silicone filter holder gasket should be inspected periodically for wear and tear. A worn gasket can lead to leaks during brewing. Replace the gasket if it appears cracked or hardened.

7. Troubleshooting

This section addresses common issues you might encounter. For more complex problems, please contact customer support.

  • No Water Flow: Check water reservoir level. Ensure the machine is primed. Check for blockages in the group head or steam wand.
  • Weak Steam: Ensure the machine has reached full steam temperature. Purge the steam wand to clear any water. Check for blockages in the steam tip.
  • Leaking from Portafilter: Ensure the portafilter is securely tightened. Check the group head gasket for wear or damage. Ensure the coffee grounds are not too fine or over-dosed, which can prevent a proper seal.
  • Espresso Extracts Too Fast/Slow: Adjust coffee grind size (finer for slower, coarser for faster). Adjust dose and tamp pressure.
  • Machine Not Heating: Ensure the machine is plugged in and the power switch is on. Check the circuit breaker.
