5. Operating Instructions
5.1 Preheating the Oven
- For Wood/Charcoal: Fill the fuel tray with your chosen fuel. Use a fire starter or a small torch to ignite the fuel. Once ignited, slide the tray into the oven. Close the fuel hopper lid.
- For Propane Gas: Ensure the gas burner is securely attached and connected to a propane tank. Slowly turn the control knob to the 'MAX' position while pushing it in to ignite the burner. If it doesn't light within 5 seconds, turn the knob to 'OFF', wait 5 minutes for gas to disperse, then repeat the lighting procedure.
- Allow the oven to preheat for approximately 15 minutes until the built-in thermometer reaches at least 600°F (315°C) for optimal pizza cooking. The maximum temperature can reach 1000°F (540°C).

- Carefully slide your prepared 12-inch pizza onto the hot pizza stone using a pizza peel.
- Close the front door.
- Cook for approximately 90 seconds, rotating the pizza halfway through using the provided tool or a pizza peel to ensure even cooking.
- Monitor the pizza through the peep hole or by briefly opening the door. Adjust the flame (for gas) or add more fuel (for wood/charcoal) as needed to maintain desired temperature.
- Once the crust is golden brown and the cheese is bubbly, carefully remove the pizza using the pizza peel.

6. Maintenance
6.1 Cleaning
- Allow the oven to cool completely before cleaning.
- Remove the pizza stone. Scrape off any burnt food residue with a brush or spatula. Do not use soap or water on the pizza stone, as it is porous and will absorb liquids.

- Empty the ash tray (if using wood/charcoal) after each use.
6.2 Storage
- Ensure the oven is completely cool and clean before storing.
- Remove the chimney stack and store it inside the oven or in the carry bag.

- Pizza Burning Too Quickly:
- Reduce the heat (lower gas setting or less fuel).
- Rotate the pizza more frequently.
- Ensure the pizza stone is not excessively hot (check thermometer).
- Pizza Not Cooking Evenly:
- Rotate the pizza every 30-45 seconds.
- Ensure the oven is fully preheated to a consistent temperature.
- Smoke Issues:
- Ensure the chimney is clear and not blocked.
- Use dry, seasoned wood pellets/chips for cleaner burn.
- Adjust the smoke exhaust direction using the chimney cap.
