4. Initial Setup and Seasoning

4.1 Propane Tank Connection

  • Ensure the propane tank valve is closed.
  • Connect the regulator hose to the propane tank valve. Hand-tighten firmly.
  • Open the propane tank valve slowly to allow gas flow.

4.2 Initial Griddle Seasoning

Seasoning the griddle plate is crucial for creating a non-stick surface and protecting it from rust. This process should be done before first use and periodically thereafter.

  1. Clean the Griddle: Wash the griddle surface with hot, soapy water to remove any manufacturing residues. Rinse thoroughly and dry completely.
  2. Heat the Griddle: Turn all burners to HIGH. Allow the griddle to heat until the surface changes color (typically darkens). This may take 10-15 minutes.
  3. Apply Oil: Once hot, apply a thin, even layer of Blackstone Griddle Seasoning & Cast Iron Conditioner (included) or a high smoke point oil (e.g., flaxseed, grapeseed, canola oil) to the entire griddle surface using a paper towel or cloth.
  4. Burn Off Oil: Allow the oil to burn off completely. The griddle will smoke heavily, then the smoke will subside. This indicates the oil has polymerized and bonded to the metal.
  5. Repeat: Repeat steps 3 and 4 at least 3-5 times, or until the griddle surface is dark brown or black and has a uniform, non-stick appearance.

5. Operating Instructions

5.1 Lighting the Griddle

  1. Ensure the propane tank valve is fully open.
  2. Push in and turn one burner control knob to the HIGH position.
  3. Immediately push and hold the igniter button until the burner lights.
  4. Once the first burner is lit, you can light the remaining burners by pushing in and turning their respective control knobs to the desired setting.
  5. If a burner does not light within 5 seconds, turn off the control knob, wait 5 minutes, and repeat the lighting procedure.

5.2 Temperature Control

The Blackstone 36-inch griddle features four independent burners, allowing you to create multiple heat zones across the cooking surface. This is ideal for cooking different foods at varying temperatures simultaneously.

  • Adjust each burner's knob from LOW to HIGH to achieve the desired temperature for specific areas of the griddle.
  • Use higher heat for searing meats and lower heat for vegetables or keeping food warm.

5.3 Cooking Tips

  • Preheat the griddle for 10-15 minutes before cooking to ensure even heat distribution.
  • Use a thin layer of cooking oil or butter on the griddle surface before adding food.
  • Utilize the rear grease trap to easily manage excess grease and food debris.
  • The X-braced hood helps retain heat and protect the griddle surface.

6. Care and Maintenance

6.1 Cleaning the Griddle Surface

Proper cleaning and re-seasoning after each use will maintain your griddle's performance and longevity.

  1. Scrape: While the griddle is still warm, use a griddle scraper to push food debris and excess grease into the rear grease trap.
  2. Deglaze (Optional): For stubborn residue, pour a small amount of water onto the hot griddle surface. The water will steam and help lift stuck-on food. Scrape again.
  3. Wipe Clean: Use paper towels or a clean cloth to wipe the griddle surface clean.
  4. Re-oil: Apply a very thin layer of cooking oil to the entire griddle surface to protect it from rust and maintain its seasoning.

6.2 Exterior Cleaning and Storage

  • Wipe down exterior surfaces with a damp cloth and mild detergent. Avoid abrasive cleaners.
  • Empty and clean the rear grease trap regularly.
  • For storage, fold down the side shelves to make the unit more compact.
  • Store the griddle in a dry, protected area. Consider using a Blackstone griddle cover (sold separately) to protect it from the elements.
  • Disconnect and store the propane tank in a well-ventilated area, away from direct sunlight and heat sources.

7. Troubleshooting
