2. Safety Instructions

4. Setup

  1. Unpacking: Carefully remove the chocolate melting machine from its packaging. Retain the packaging for future storage or transport.
  2. Initial Cleaning: Before first use, clean all parts that will come into contact with food. Refer to the "Cleaning and Maintenance" section for detailed instructions. Ensure all parts are completely dry before assembly.
  3. Placement: Place the appliance on a stable, level, and heat-resistant surface. Ensure there is adequate ventilation around the unit. The rubber feet will help keep the machine in place and protect the countertop.
  4. Power Connection: Plug the power cable into a grounded 230 V electrical outlet.

5. Operating Instructions

The RC-CMM05 is designed for melting and tempering chocolate. Tempering is crucial for achieving a glossy finish and proper texture in chocolate.

5.1. Melting Chocolate

  1. Prepare Chocolate: Break chocolate into small, uniform pieces for faster and more even melting.
  2. Load Chocolate: Place the chocolate pieces into the 8-liter melting pot. Do not overfill the pot.
  3. Power On: Turn the main power switch (HOT SWITCH) to the "ON" position. The "HOT LIGHT" indicator will illuminate.
  4. Set Temperature: Use the "TEMPERATURE SELECTION" digital control to set the desired melting temperature. The machine can heat up to 110 °C. For most chocolates, a melting temperature between 45-50 °C (113-122 °F) is suitable.
  5. Activate Stirring: Turn the "MOTOR SWITCH" to the "ON" position to activate the automatic stirring mechanism. Adjust the "MOTOR SPEED" knob to your desired stirring intensity. Constant stirring ensures even heat distribution and prevents scorching.
  6. Monitor Process: Allow the chocolate to melt completely, stirring continuously. The digital display shows the current temperature (PV) and the set temperature (SV).

5.2. Tempering Chocolate

After melting, chocolate needs to be tempered to achieve stability, shine, and a crisp snap. This typically involves cooling the chocolate and then reheating it slightly.

  1. Cool Down: Once melted, reduce the set temperature on the digital control. For dark chocolate, cool to approximately 27-28 °C (80-82 °F). For milk or white chocolate, cool to 26-27 °C (78-80 °F). The automatic stirring will continue to help cool the chocolate evenly.
  2. Reheat: Once the chocolate reaches the lower temperature, increase the set temperature slightly. For dark chocolate, reheat to 31-32 °C (88-90 °F). For milk chocolate, reheat to 29-30 °C (84-86 °F). For white chocolate, reheat to 28-29 °C (82-84 °F).
  3. Maintain Temperature: The machine will maintain the set tempering temperature, with continuous stirring ensuring the chocolate remains in temper.
  4. Dispensing: Use the integrated spout to easily fill chocolate molds or drizzle over desserts.

5.3. Shutting Down

  1. When finished, turn the "MOTOR SWITCH" to "OFF".
  2. Turn the "HOT SWITCH" to "OFF".
  3. Unplug the appliance from the power outlet and allow it to cool completely before cleaning.

6. Cleaning and Maintenance

Regular cleaning and maintenance will extend the lifespan of your chocolate melting machine and ensure hygienic operation.

  1. Disconnect Power: Always unplug the appliance from the power supply before cleaning.
  2. Cool Down: Allow the machine to cool down completely.
  3. Empty Chocolate: If there is leftover chocolate, use the drain hole to empty the melting pot.

7. Troubleshooting
