2. Important Safety Information

Please observe the following safety precautions to prevent injury or damage to the machine.

3. Unpacking and Initial Setup

3.1 Unpacking

Carefully remove the espresso machine from its packaging. Retain all packaging materials for future transport or storage. Inspect the machine for any signs of damage. If any damage is found, do not operate the machine and contact your retailer.

3.2 Placement

Place the machine on a stable, level, and heat-resistant surface. Ensure adequate ventilation around the machine. Keep it away from direct sunlight, heat sources, and areas with extreme temperature fluctuations.

3.3 Water Reservoir

The Ascaso Steel DUO features a removable water reservoir. Fill the reservoir with fresh, filtered water. Avoid using distilled water as it can negatively impact machine sensors.

3.4 Power Connection

Connect the power cord to a grounded electrical outlet. Ensure the voltage matches the machine's requirements (120V).

5. Operating Instructions

5.1 Initial Start-up and Priming

  1. Ensure the water reservoir is filled.
  2. Turn on the machine using the main power switch. The PID display will show the current temperature.
  3. Allow the machine to heat up to the set brewing temperature (typically around 90-95°C). This usually takes a few minutes due to the dual thermoblock system.
  4. To prime the pump, place a cup under the group head and activate the brew switch until water flows consistently. Repeat for the hot water spout and steam wand.

5.2 Brewing Espresso

  1. Prepare the Portafilter: Grind fresh coffee beans to an espresso-fine consistency. Dose the appropriate amount (e.g., 14-18g for a double shot) into the 58mm portafilter basket. Distribute evenly and tamp firmly.
  2. Lock in Portafilter: Attach the portafilter to the group head, ensuring it is securely locked.
  3. Set Volumetric Shot: Use the PID display and controls to select your desired volumetric setting for a single or double shot. The machine supports programmable pre-infusion.
  4. Start Brewing: Activate the brew switch. The machine will automatically dispense the programmed volume of espresso. The PID display will show a shot timer.
  5. Monitor Extraction: Observe the espresso flow. It should be a steady, honey-like stream. Adjust grind size or dose as needed for optimal extraction.
  6. Remove Portafilter: Once brewing is complete, carefully remove the portafilter and discard the spent coffee puck.

5.3 Steaming Milk

The dual thermoblock system allows for simultaneous brewing and steaming without significant wait times.

  1. Prepare Milk: Fill a stainless steel milk pitcher with cold milk, typically to just below the spout.
  2. Activate Steam: Turn on the steam switch. Allow the steam wand to purge any condensed water into the drip tray by briefly opening the steam valve.
  3. Steam Milk: Immerse the tip of the steam wand just below the surface of the milk. Open the steam valve fully. Position the wand to create a whirlpool effect, incorporating air for texture (stretching) and then submerging it deeper to heat the milk (texturing).
  4. Monitor Temperature: Steam until the pitcher becomes too hot to touch, or use a thermometer to reach desired temperature (e.g., 60-65°C / 140-150°F).
  5. Clean Wand: Immediately after steaming, turn off the steam switch, wipe the steam wand with a damp cloth, and purge it briefly to clear any milk residue.

6. Maintenance and Cleaning

Regular cleaning and maintenance are crucial for the performance and lifespan of your espresso machine.

6.1 Daily Cleaning

6.2 Weekly Cleaning (Backflushing)

Backflushing cleans the group head and internal components.

  1. Insert the blind filter basket into the portafilter.
  2. Add a small amount of espresso machine cleaning detergent (e.g., Cafiza) to the blind filter.
  3. Lock the portafilter into the group head.
  4. Activate the brew cycle for 10-15 seconds, then stop. Repeat this process 5-10 times.
  5. Remove the portafilter, rinse it, and repeat the backflushing process with just water to rinse away detergent.

6.3 Descaling

While the stainless steel thermoblock design minimizes limescale buildup, periodic descaling is recommended, especially in areas with hard water. Follow the instructions of a suitable descaling solution.

The machine also features a programmable automatic cleaning mode, refer to the PID menu for activation.

7. Troubleshooting
