5. Operating Instructions
5.1 Fueling and Lighting
Open the firebox door at the bottom. Place small pieces of wood or wood pellets onto the grill inside the firebox. Use a fire starter to ignite the fuel. Ensure good airflow by keeping the firebox door slightly ajar or adjusting the vents.
5.2 Preheating
Close the firebox door once the fire is established. Allow the oven to preheat for approximately 10-15 minutes, or until the pizza stone reaches the desired temperature (typically 500-700°F for pizza). You can monitor the temperature using an infrared thermometer (not included).
5.3 Cooking Pizza
Once preheated, carefully slide your prepared pizza onto the hot pizza stone using the pizza peel. Close the main oven door. Pizzas cook very quickly in a wood-fired oven, often in 60-90 seconds. Rotate the pizza periodically for even cooking. The lower layer will be hotter, so place the pizza stone there for optimal crust.
5.4 Cooking Other Items
For grilling meats, vegetables, or other items, use the upper cooking rack. Adjust the fire and airflow as needed for different cooking temperatures and times.

6. Temperature Control
You can easily control the fire to regulate the temperature by opening or closing the vents on the door or on the chimney to adjust air content inside. More airflow increases temperature, less airflow reduces it. Remember that the temperature of the lower layer will be higher than the upper layer.
7. Maintenance & Cleaning
Regular maintenance ensures the longevity and optimal performance of your oven:
- Ash Removal: After the oven has completely cooled, open the ash door at the back to easily push out and dispose of ashes.
- Pizza Stone Care: Allow the pizza stone to cool naturally. Do not use soap or detergents on the stone, as it is porous and will absorb them. Scrape off any burnt-on food with a spatula or brush.
- Exterior Cleaning: Wipe down the exterior with a damp cloth once cooled.
- Storage: Use the provided waterproof cover to protect the oven from the elements when not in use.
8. Troubleshooting
If you encounter issues with your oven, consider the following:
- Oven Not Heating Up: Ensure sufficient fuel is added and there is adequate airflow. Check if the chimney is clear and not blocked.
- Pizza Burning on Bottom: The lower layer is hotter. Try reducing the amount of fuel, adjusting airflow, or rotating the pizza more frequently. Ensure the pizza stone is properly preheated.
- Excessive Smoke: Ensure dry fuel is used. Wet wood will produce more smoke. Check for proper chimney ventilation.
