1. Introduction

General Safety

  • Always ensure the appliance is securely clamped to a stable cooking vessel before use.

4. Setup

Follow these steps to prepare your sous vide machine for cooking:

  1. Secure the Unit: Attach the Easy Connect Clip to the side of a heat-safe pot or container. Ensure the unit is firmly secured and stable. The pot should have a capacity suitable for sous vide cooking, up to 15 liters.
  2. Fill with Water: Fill the pot with water. Ensure the water level is between the MIN and MAX lines indicated on the sous vide machine. Do not overfill or underfill.

  4. Connect Power: Plug the power cord into a grounded electrical outlet. The display will illuminate.

5. Operating Instructions

The Greater Goods Sous Vide Machine features intuitive dial controls for easy operation.

5.1 Setting Temperature and Time

  1. Power On: Once plugged in, the unit will display the current water temperature.
  2. Select Unit (Fahrenheit/Celsius): Press and hold the control dial until "Unit" displays. Turn the dial to switch between Fahrenheit (°F) and Celsius (°C). Click the dial to lock your selection.
  3. Set Temperature: Turn the control dial to adjust the desired cooking temperature. The temperature range is 68°F to 203°F (20°C to 95°C). Click the dial to confirm the temperature.
  4. Set Timer: After setting the temperature, the timer setting will become active. Turn the control dial to set the desired cooking time in hours and minutes. Click the dial to confirm the time.

  6. Start Cooking: Once temperature and time are set, the unit will begin heating the water to the target temperature. The display will show the current water temperature and the set target temperature.

5.2 Food Preparation and Cooking

  1. Prepare Food: Season your food as desired and place it in a food-grade, heat-safe, vacuum-sealable bag. Remove as much air as possible from the bag and seal it.
  2. Food items sealed in vacuum bags submerged in a water bath, ready for precision cooking.

  3. Add Food to Water Bath: Once the water reaches the target temperature, carefully submerge the sealed food bag(s) into the water bath. Ensure the food is fully submerged. You may need to use clips or weights to keep bags submerged.
  4. Cooking Cycle: The timer will begin counting down once the target temperature is reached. The unit will maintain the precise temperature throughout the cooking cycle.
  5. End of Cycle: When the timer reaches zero, an audible alarm will sound. The unit will continue to maintain the water temperature, and a negative timer will display the duration beyond the set time.
  6. Remove Food: Carefully remove the food bag(s) from the water bath using tongs.

5.3 Post-Cook Finishing

For many foods, especially meats, a quick sear after sous vide cooking is recommended to develop a flavorful crust. Pat the food dry thoroughly before searing in a hot pan, on a grill, or with a blowtorch.

5.4 Manual Calibration

Your sous vide machine features manual calibration. If you suspect the temperature reading is inaccurate, you can calibrate it against a known accurate thermometer. Refer to the on-screen instructions after accessing the calibration menu (details typically found in a quick start guide or by holding specific buttons).

6. Maintenance and Cleaning

Proper maintenance ensures the longevity and performance of your sous vide machine.

6.1 Cleaning the Unit

  1. Unplug and Cool: Always unplug the unit from the power outlet and allow it to cool completely before cleaning.
  2. Remove Stainless Steel Cover: The stainless steel cover is removable and dishwasher-safe. Carefully detach it from the main unit.
  3. Clean Exterior: Wipe the exterior of the unit, including the control panel, with a damp cloth. Do not use abrasive cleaners or immerse the top portion in water.
  4. Clean Heating Element/Impeller: If necessary, gently clean the heating element and impeller area with a soft brush to remove any food particles or residue.
  5. Reassemble: Once all parts are clean and dry, reattach the stainless steel cover.

6.2 Descaling

Over time, mineral deposits from water may accumulate on the heating element. Descaling is recommended periodically, especially in areas with hard water.

  1. Prepare Solution: Fill a pot with water and add white vinegar (e.g., 1 cup vinegar per gallon of water).
  2. Run Cycle: Attach the sous vide machine to the pot. Set the temperature to 140°F (60°C) and run for 30 minutes.
  3. Rinse: After the cycle, unplug the unit, allow it to cool, and rinse the heating element thoroughly with clean water.

7. Troubleshooting
