4. Setup

4.1 Assembly

Your Blackstone 22-inch Tabletop Griddle requires minimal assembly. Refer to the included assembly guide for detailed step-by-step instructions. Ensure all components are securely fastened before proceeding.

4.2 Seasoning the Griddle Top

Before first use, it is crucial to properly season the griddle top. Seasoning creates a natural non-stick surface and protects the griddle from rust. Follow these steps:

  1. Wash the griddle top with hot, soapy water to remove any manufacturing residues. Rinse thoroughly and dry completely.
  2. Apply a thin, even layer of Blackstone Griddle Seasoning & Cast Iron Conditioner (or high smoke point oil like flaxseed, grapeseed, or vegetable oil) to the entire cooking surface.
  3. Heat the griddle on high until the oil begins to smoke and burn off, turning dark brown or black. This typically takes 15-30 minutes.
  4. Turn off the griddle and allow it to cool.
  5. Repeat steps 2-4 at least 3-4 times, or until the griddle surface has a uniform, dark, non-stick appearance.

4.3 Propane Connection

Connect the griddle to a 1 lb. propane cylinder or a larger 20 lb. propane tank using an appropriate adapter hose (sold separately). Ensure all connections are tight and check for leaks using a soapy water solution before lighting.

5. Operating Instructions

5.1 Lighting the Griddle

Your griddle is equipped with a push-and-turn Piezo ignition system for easy starting.

  1. Ensure the propane tank is connected and the gas supply is open.
  2. Push in and turn one of the control knobs counter-clockwise to the HIGH position.
  3. You should hear a clicking sound as the igniter sparks. If the burner does not light within 5 seconds, turn the knob to OFF, wait 5 minutes, and repeat the process.
  4. Once lit, adjust the flame to your desired cooking temperature. Repeat for the second burner if needed.

5.2 Temperature Control

The griddle features two independent heat zones, allowing you to cook different foods at varying temperatures simultaneously. Use the individual control knobs to adjust the heat from LOW to HIGH for each zone.

5.3 Cooking on the Griddle

The griddle's flat top surface is highly versatile. For best results, preheat the griddle to your desired temperature before adding food. Use griddle-specific tools for cooking and flipping. Ensure the griddle has a slight slope towards the rear grease drain for efficient grease management.

6. Maintenance and Care

6.1 Cleaning After Use

Proper cleaning after each use is essential to maintain your griddle's performance and longevity.

  1. While the griddle is still warm (but not hot), scrape any food debris into the Rear Grease Management System opening.
  2. Pour a small amount of water onto the griddle surface to deglaze and loosen any stuck-on food. Use a griddle scraper or spatula to push the water and debris into the grease trap.
  3. Wipe the griddle surface clean with paper towels or a soft cloth.
  4. Once clean and dry, apply a very thin layer of cooking oil or griddle seasoning to the entire surface to protect it from rust.
  5. Empty and clean the grease cup regularly.

6.2 Storage

When not in use, ensure the griddle is clean, dry, and lightly oiled. Close the integrated hood to protect the griddle top from dust and scratches. Store in a dry, protected area. For extended storage, consider using a Blackstone griddle cover (sold separately).

7. Troubleshooting

If you encounter issues with your griddle, refer to the following common troubleshooting tips:

  • Burner Not Lighting: Check propane tank level, ensure gas flow, verify connections are tight, and clean igniter electrode if dirty.
  • Uneven Heating: Ensure griddle is level. Allow sufficient preheating time. Clean burners if clogged.
  • Food Sticking: Ensure the griddle is properly seasoned. Re-season if necessary. Use enough cooking oil.
  • Excessive Smoke: This can be normal during seasoning or if too much oil is used. Ensure proper ventilation.
