  • PRODUCTION: Initiates the ice cream freezing process.

Setup

Operating Instructions

1. Preparing the Mix:

  • Prepare your liquid ice cream or gelato mix according to the manufacturer's instructions.
  • Pour the prepared mix into the respective hoppers. The machine has three 7-liter hoppers.

2. Initial Start-up:

  1. Turn on the main power switch.
  2. Press the PRECOOL button on the control panel to chill the hoppers and maintain mix freshness.
  3. Once the mix is sufficiently chilled, press the PRODUCTION button to begin the freezing process in the cylinders. The machine will churn and freeze the mix until it reaches the desired consistency. This typically takes 5-15 minutes depending on mix temperature and desired hardness.
  4. Monitor the display for readiness indicators.

3. Dispensing Ice Cream:

  • Place an ice cream cone or cup under the desired dispensing nozzle.
  • Pull down the corresponding handle to dispense the ice cream.
  • For a mixed (swirl) flavor, pull down the center handle.
  • Release the handle to stop dispensing.

4. Overnight Standby:

The upper tanks are refrigerated, allowing mixtures to remain fresh overnight. Ensure the PRECOOL function is active when the machine is not in production mode to maintain optimal temperature for the mix.

Maintenance

Regular cleaning and maintenance are essential for hygiene, performance, and longevity.

Daily Cleaning:

  1. Empty Hoppers: At the end of each day, if not using the overnight standby feature, drain any remaining mix from the hoppers.
  2. Rinse: Pour warm water into the hoppers and run the WASH cycle for a few minutes. Drain the water. Repeat with clean water.
  3. Disassemble Dispenser: Remove the dispensing handles, valves, and seals. Wash them thoroughly with warm, soapy water and a small brush. Rinse and sanitize.
  4. Wipe Down: Wipe all exterior surfaces of the machine with a damp cloth.

Weekly Cleaning (or as needed):

  1. Full Disassembly: Completely disassemble the freezing cylinders, including the beater/auger and scraper blades.
  2. Thorough Cleaning: Wash all disassembled parts with warm, soapy water. Use appropriate brushes for hard-to-reach areas.
  3. Sanitize: Sanitize all food-contact parts using a commercial food-grade sanitizer according to its instructions.
  4. Lubricate: Apply food-grade lubricant to all O-rings and seals before reassembly to ensure proper sealing and prevent wear.
  5. Reassemble: Carefully reassemble all components, ensuring they are correctly seated.
