Operating Instructions

Preheating

  1. Depress the POWER button to turn on the steamer. The cooking compartment will automatically fill with water. If the steamer does not have an automatic fill option, manually add water (about 2.5 gallons) up to the water line located inside the steamer and above the water sensors. The display will indicate "Pre" (pre-heat).
  2. Once the cooking compartment is pre-heated and ready to cook, the display will indicate "Ready".
  3. Depress the DISP TEMP button to display the current cooking compartment temperature.

Cooking

  1. Depress the COOK HOLD button to select the Cook Mode (Cook).
  2. Open the door and place food into the cooking compartment. Shut the door.
  3. No Timer: Cook continuously.
  4. With Timer: Depress the TIMER button and then depress the ARROW keys (▲▼) until the desired time is displayed. The timer starts automatically. At the end of the timed cycle, a beeper will sound. Depress the TIMER button to turn off the beeper.
  5. Depress the DISP TEMP button to display the current cooking compartment temperature.
  6. For best cooking performance with less than a full load of pans, place the first pan in the top pan slot and then alternate as more pans are added in the following pan slot order: 1 > 2 > 3 > 4 > 5 > 6.
  7. The cooking compartment maximum capacity is six 2-1/2 inch deep pans, each 20-3/4 inches long by 12-3/4 inches wide by 2-1/2 inches deep with a capacity of 8 quarts and a load of 16.7 pounds maximum per pan.

Holding

  1. Depress the COOK HOLD button to select the Hold Mode (HL).
  2. Open the door and place food into the cooking compartment. Shut the door.
  3. Food will be held at the preset holding temperature.
  4. Depress the DISP TEMP button to display the current cooking compartment temperature.
  5. Cold food should not be added to the cooking compartment for rethermalization while hot food is being held.

Indicator Lamps and Troubleshooting

Indicator Lamps

  • LOW WATER: The cooking compartment is low on water or the water sensors need to be cleaned.
  • HIGH WATER: There is too much water in the cooking compartment. DO NOT OPEN THE DOOR! Open the drain valve to drain water until this indicator lamp shuts off.
  • OVERTEMP: The steamer has overheated, generally due to lack of water or dirty water sensors. Turn off the steamer. Allow the steamer to cool until it automatically resets and the lamp shuts off. Make sure the water sensors are clean.
