Setup Instructions
- Clean Components: Before first use, wash all components (Pickle Pipes, Pickle Pebbles, and Pickle Packer) with warm soapy water. Rinse thoroughly and allow to air dry. The Pickle Pipes and Pickle Pebbles are dishwasher safe. The Acacia Pickle Packer should be hand washed only.
- Prepare Mason Jars: Ensure your wide mouth mason jars are clean and sterilized. (Mason jars are not included in this kit).
- Prepare Ingredients: Wash and chop your chosen vegetables. Prepare your brine or dry salt mixture according to your recipe.

Operating Instructions
Follow these steps to ferment your vegetables using the Masontops kit:
- Pack the Jar: Place your prepared vegetables into a clean wide mouth mason jar. If using dry salting, layer vegetables with salt. If using brine, ensure vegetables are submerged.
- Use the Pickle Packer: For dry-salted ferments like sauerkraut or kimchi, use the Acacia Pickle Packer to firmly tamp down the vegetables, releasing juices and removing air pockets.
- Add Pickle Pebble Weight: Place a Pickle Pebble fermentation weight on top of the vegetables. Ensure all vegetables remain submerged under the brine or their own juices. This prevents mold growth.
- Apply Pickle Pipe Lid: Place a Pickle Pipe fermentation lid onto the wide mouth mason jar. Secure it with a standard mason jar screw band (not included). The Pickle Pipe acts as a one-way airlock, allowing fermentation gases to escape without letting oxygen in.
- Fermentation Process: Store the jar at room temperature, away from direct sunlight. The fermentation time will vary depending on the recipe and desired flavor. Refer to the included Fermenting Guide & Recipe Book for specific timings.
- Monitoring: The Pickle Pipe will visibly swell as gases build up and then release them. No manual "burping" of the jars is required.
- Completion: Once fermentation is complete, remove the Pickle Pipe and Pickle Pebble. Replace with a standard mason jar lid and store your fermented foods in the refrigerator.

Maintenance
- Pickle Pipes & Pickle Pebbles: These components are dishwasher safe. For hand washing, use warm soapy water and rinse thoroughly.
- Acacia Pickle Packer: Hand wash only with warm soapy water. Do not soak. Dry immediately after washing to preserve the wood.
- Storage: Store all components in a clean, dry place when not in use. The original packaging can be used for organized storage.
Troubleshooting
| Problem | Possible Cause | Solution |
|---|---|---|
| No visible bubbling or gas release from Pickle Pipe. | Fermentation may not have started, or temperature is too low. | Ensure the jar is in a suitable room temperature environment (typically 65-75°F / 18-24°C). Fermentation can take 24-48 hours to become active. |
| Mold on the surface of the ferment. | Vegetables not fully submerged under brine. | Ensure Pickle Pebble is holding all vegetables below the liquid line. Discard any moldy ferments to prevent health risks. |
| Pickle Pipe not sealing properly. | Screw band not tight enough, or Pickle Pipe is damaged. | Ensure the screw band is tightened securely. Inspect the Pickle Pipe for any tears or damage. |
| Ferment tastes too salty or not salty enough. | Incorrect salt-to-vegetable/water ratio. | Refer to the recipe book for precise measurements. Adjust salt levels in future batches. |
