2. Important Safeguards
When using electrical appliances, basic safety precautions should always be followed to reduce the risk of fire, electric shock, and injury. Read all instructions carefully before operation.
- Do not touch hot surfaces. Use handles or knobs.
- To protect against electrical shock, do not immerse the cord, plugs, or the main unit in water or other liquid.
- Close supervision is necessary when any appliance is used by or near children.
- Unplug from outlet when not in use and before cleaning. Allow to cool before putting on or taking off parts.
- Do not operate any appliance with a damaged cord or plug, or after the appliance malfunctions or has been damaged in any manner.
- The use of accessory attachments not recommended by the appliance manufacturer may cause injuries.
- Do not use outdoors.
- Do not let cord hang over edge of table or counter, or touch hot surfaces.
- Do not place on or near a hot gas or electric burner, or in a heated oven.

- Always attach plug to appliance first, then plug cord into the wall outlet. To disconnect, turn any control to “off”, then remove plug from wall outlet.
- Do not use appliance for other than intended use.
- This appliance cooks under pressure. Improper use may result in scalding injury. Make certain unit is properly closed before operating.
- Never force open the cooker. Do not open until the unit has cooled and internal pressure has been released.
- Do not fill the unit above the MAX fill line.
- Always check the pressure release valve for clogging before use.
- Do not place hands or face over the pressure release valve when the unit is operating.

4. Before First Use
Before using your Gourmia GPS650 for the first time, follow these steps:
- Unpack all components and remove any packaging materials.
- Wash the removable non-stick cooking pot, lid, charring cup, and racks with warm, soapy water. Rinse thoroughly and dry completely.
- Wipe the exterior of the main unit with a damp cloth. Do not immerse the main unit in water.
- Ensure all parts are dry before assembly.
- Place the main unit on a stable, level, heat-resistant surface away from walls and cabinets.
5. Operating Instructions
5.1 Control Panel Overview
The digital control panel allows you to select functions and adjust settings. It features an easy-read LCD status display.
- Function Buttons: Select Pressure, Steam, Slow Cook, or Smoke.
- Adjust Buttons (+/-): Modify cooking time, temperature, or pressure levels.
- Delay Timer: Set a delayed start time for cooking.
- Keep Warm: Automatically maintains food temperature after cooking.
- Start/Stop: Initiates or cancels a cooking program.
5.2 Pressure Cooking
- Place the non-stick cooking pot into the main unit.
- Add ingredients and liquid to the pot, ensuring not to exceed the MAX fill line.
- Secure the lid by aligning it and rotating clockwise until it locks into place. Ensure the pressure regulator knob is set to the 'Pressure' position.
- Plug in the appliance.
- Press the 'Pressure' function button. Use the +/- buttons to adjust cooking time and pressure level (up to 15 psi).
- Press 'Start'. The unit will preheat and build pressure. Once pressure is reached, the cooking timer will begin.
- After cooking, allow pressure to release naturally or manually release pressure by carefully turning the pressure regulator knob to 'Steam' (use caution as hot steam will be released).
- Once pressure is fully released, the lid can be safely opened.
5.3 Smoking (Hot & Cold)
The GPS650 allows for both hot and cold smoking. For hot smoking, the unit will also cook the food. For cold smoking, the unit will only generate smoke without significant heat.
- Place the non-stick cooking pot into the main unit.
- Fill the charring cup with a small amount of soaked wood chips (3-5 chips are typically sufficient). Place the charring cup on the smoking rack at the bottom of the pot.
- Place food on the smoking rack or directly in the pot, depending on the recipe.
- Secure the lid and ensure the pressure regulator knob is set to the desired position (e.g., 'Pressure' for hot smoking, or 'Steam' for cold smoking if no pressure is desired).
- Plug in the appliance.
- Press the 'Smoke' function button. Adjust time and temperature as needed using the +/- buttons.
- Press 'Start'. The unit will begin generating smoke.
- Follow recipe guidelines for smoking duration.
5.4 Slow Cooking
- Place the non-stick cooking pot into the main unit.
- Add ingredients to the pot.
- Secure the lid. The pressure regulator knob can be set to 'Steam' for venting during slow cooking.
- Plug in the appliance.
- Press the 'Slow Cook' function button. Use the +/- buttons to adjust cooking time.
- Press 'Start'.
5.5 Steaming
- Place the non-stick cooking pot into the main unit.
- Add the appropriate amount of water to the bottom of the pot (refer to recipe for specific quantities).
- Place the steaming rack into the pot, ensuring it is above the water level.
- Place food to be steamed on the rack.
- Secure the lid and ensure the pressure regulator knob is set to 'Steam'.
- Plug in the appliance.
- Press the 'Steam' function button. Use the +/- buttons to adjust cooking time.
- Press 'Start'.
5.6 Delay Timer and Keep Warm
- Delay Timer: After selecting a cooking function and setting the time, press the 'Delay Timer' button. Use the +/- buttons to set the desired delay time (up to 8 hours) before cooking begins. Press 'Start' to activate.
- Keep Warm: The unit automatically switches to a 'Keep Warm' setting after most cooking cycles are complete. This function maintains the food at a serving temperature. It can also be manually selected.
6. Care and Cleaning
Proper cleaning ensures the longevity and safe operation of your appliance.
- Always unplug the unit and allow it to cool completely before cleaning.
- Removable Non-Stick Cooking Pot, Lid, Charring Cup, and Racks: These parts are dishwasher safe. Alternatively, wash them with warm, soapy water using a non-abrasive sponge or cloth. Rinse thoroughly and dry completely. When cleaning the cooking pot, use the provided silicone cap to protect the electrical connection at the bottom from moisture.
- Main Unit: Wipe the exterior with a damp cloth. Do not immerse the main unit in water or any other liquid. Ensure no water enters the control panel area.
- Gasket: The silicone gasket on the lid may absorb odors or become discolored over time, especially after smoking. This is normal and does not affect performance. Clean it thoroughly after each use. If heavily stained or damaged, replacement gaskets may be available from customer support.
- Pressure Release Valve: Regularly check the pressure release valve and float valve for any food debris or blockages. Clean with a small brush if necessary to ensure proper function.
- Store the appliance in a dry place once all parts are clean and dry.
