3. Setup

  1. Unpacking: Carefully remove the mixer and all accessories from the packaging. Inspect for any shipping damage. Report any damage immediately to your supplier. Retain packaging materials for future transport if needed.
  2. Placement: Position the mixer on a sturdy, level countertop or floor space. Ensure adequate clearance around the unit for ventilation and safe operation. The overall dimensions are approximately 25" W x 27" L x 50" H.
  3. Electrical Connection: The Eurodib M40A 220ETL requires a 208V, 3-phase, hard-wired electrical connection. This installation must be performed by a qualified electrician in accordance with all local and national electrical codes. Ensure the power supply matches the mixer's requirements (208V, 1800W, 2.4A, 2 HP).
  4. Accessory Installation:
    • Mixing Bowl: Place the 40 Qt. stainless steel mixing bowl onto the bowl supports and secure it in place.
    • Attachment: Select the appropriate attachment (spiral dough hook, wire whip, or flat beater) for your task. Ensure the mixer is OFF and unplugged before attaching or detaching. Slide the attachment onto the planetary shaft and rotate until it locks into place.
    • Wire Bowl Guard: Ensure the wire bowl guard is properly closed and secured before operating the mixer. This is a critical safety feature.

4. Operating Instructions

Follow these steps for safe and effective operation of your planetary mixer.

  1. Prepare Ingredients: Measure and prepare all ingredients before starting the mixer.
  2. Load Bowl: With the mixer OFF and unplugged, carefully add ingredients to the mixing bowl. Do not exceed the 40-quart capacity or the recommended kneading capacity of 26 lbs./hour for dough.
  3. Secure Guard: Close and secure the wire bowl guard. The mixer will not operate if the guard is not properly closed.
  4. Select Speed: The mixer offers three speeds: 96 RPMs (low), 168 RPMs (medium), and 306 RPMs (high). Select the desired speed using the control panel.
    • Low Speed (96 RPMs): Ideal for heavy doughs (pizza, pita, bread) and initial mixing of ingredients. Use with the spiral dough hook.
    • Medium Speed (168 RPMs): Suitable for batters, icings, and mashing potatoes. Use with the flat beater.
    • High Speed (306 RPMs): Best for whipping cream, egg whites, and light batters. Use with the wire whip.
  5. Start Mixer: Press the "ON" button to start the mixer.
  6. Monitor Mixing: Observe the mixing process. If necessary, stop the mixer, scrape down the sides of the bowl, and restart. Never attempt to scrape the bowl or remove ingredients while the mixer is operating.
  7. Stop Mixer: Press the "OFF" button to stop the mixer. Wait for all moving parts to come to a complete stop before opening the wire guard or removing the bowl/attachment.
  8. Remove Ingredients: Carefully remove the attachment and then the mixing bowl with the prepared ingredients.

Note: The mixer is compatible with a #22 hub meat grinder accessory (sold separately). Refer to the accessory's specific instructions for installation and operation.

5. Maintenance and Cleaning

Regular cleaning and maintenance will ensure the longevity and optimal performance of your mixer.

  1. Disconnect Power: ALWAYS unplug the mixer from the electrical supply before cleaning or performing any maintenance.
  2. Remove Accessories: Detach the mixing bowl, spiral dough hook, wire whip, and flat beater. These accessories are dishwasher safe for easy cleaning.
  3. Clean Bowl and Attachments: Wash the stainless steel bowl and attachments with warm, soapy water. Rinse thoroughly and dry completely to prevent water spots or corrosion.
  4. Clean Mixer Body: Wipe down the exterior of the mixer, including the painted cast iron base and stainless steel components, with a damp cloth and mild detergent. Do not use abrasive cleaners, scouring pads, or harsh chemicals, as these can damage the finish. Ensure no water enters the motor housing or electrical components.
  5. Clean Wire Guard: Clean the wire bowl guard with a damp cloth. Ensure all food debris is removed.
  6. Drying: Allow all parts to air dry completely or dry with a clean cloth before reassembling or storing the mixer.
  7. Lubrication: The mixer's internal gears are factory-lubricated and generally do not require user maintenance. If you notice unusual noises or performance issues, contact a qualified service technician.
