  • Keep Away from Combustibles: Place the grill on a stable, non-combustible surface at least 10 feet (3 meters) away from any combustible materials, structures, or vegetation.
  • Children and Pets: Keep children and pets away from the grill at all times, especially during operation.

Operating Instructions

1. Charcoal Loading and Lighting

  1. Open the hinged cooking grids to access the charcoal grate.
  2. Arrange charcoal briquettes or lump charcoal on the charcoal grate. For direct grilling, spread evenly. For indirect cooking, arrange charcoal on one side or in a ring.
  3. Use a charcoal chimney starter or appropriate lighter fluid to ignite the charcoal. Allow charcoal to ash over before placing food on the grill.

2. Temperature Control

  • Adjustable Air Vent: The precision air inlet and ash catcher system at the bottom of the kettle allows you to control airflow to the charcoal, directly impacting temperature. Open for higher temperatures, close for lower temperatures.
  • Smoke Stack Chimney: The top vent (Smoke Stack Chimney) also controls airflow and protects your barbecue from gusts and rain. Adjust it in conjunction with the bottom vent for precise temperature management.
  • Accu-Probe Temperature Gauge: Monitor the internal temperature of the grill using the integrated Accu-Probe Temperature Gauge on the lid for precision grilling.
  • Vortex Heat Management System: This system improves convection within the grill, enhancing searing and smoking capabilities while improving fuel efficiency.

3. Grilling, Roasting, and Smoking

  • Adjustable Cast Iron Grids: The durable hinged cooking grids can be set at three different heights. Use higher settings for slower cooking or roasting, and lower settings for searing.
  • Rotisserie Ready: The stainless steel extension ring is designed to accommodate a rotisserie kit (sold separately). It includes covered spit rod ports for precise rotisserie cooking.
  • Smoking: For smoking, use wood chips or chunks. Place them directly on the hot charcoal or in a smoker box. Adjust vents to maintain a low, consistent temperature.

Maintenance

1. Cleaning the Cooking Grids

After each use, while the grids are still warm, use a grill brush to remove any food residue. For a deeper clean, wash with warm soapy water and rinse thoroughly.

2. Ash Removal

Once the grill and ashes have completely cooled, empty the ash catcher. The precision air inlet and ash catcher system is designed for easy removal and cleaning. Ensure the ash catcher is securely reattached before next use.

3. Exterior Care

The porcelain-coated steel body is durable and resists wear. Clean the exterior with a damp cloth and mild detergent. Avoid abrasive cleaners that could damage the finish. The waterproof chimney helps protect the grill from elements.

4. Storage

Store the grill in a dry, protected area when not in use. A grill cover is recommended to protect it from weather elements.

Troubleshooting

  • Difficulty Lighting Charcoal: Ensure charcoal is dry. Use a sufficient amount of lighter fluid or a chimney starter. Check for proper airflow through the bottom vent.
  • Uneven Heat: Distribute charcoal evenly for direct heat. For indirect heat, ensure charcoal is concentrated as desired. Adjust top and bottom vents to balance airflow.
  • Temperature Too High/Low: Adjust the bottom air vent and top chimney vent. More open vents increase temperature, more closed vents decrease it.
  • Food Sticking to Grids: Ensure grids are clean and properly oiled before placing food. Preheat the grill to the desired temperature.
  • Rust on Components: While the porcelain-coated body is rust-resistant, cast iron grids and other metal parts can rust if not properly maintained. Clean and season cast iron grids regularly. Store the grill in a dry environment, preferably with a cover.
