Setup and Assembly

The Landmann L12093 Tennessee Gas Smoker BBQ requires some assembly. It is recommended to have two people for easier assembly. Ensure all parts are present before beginning.

Pre-Assembly Checklist:

  • Unpack all components and verify against the parts list (not provided in this manual, refer to packaging).
  • Ensure you have the necessary tools (e.g., screwdriver, wrench).
  • Choose a flat, stable, and non-combustible surface for assembly and operation.

Assembly Steps (General Guidance):

  1. Attach the legs to the main smoker body using the provided hardware.
  2. Secure the gas burner assembly to the base of the smoker.
  3. Install the door and ensure it opens and closes smoothly.
  4. Insert the wood chip and water pan drawers.
  5. Place the cooking grates and suspension device inside the smoker.
  6. Connect the gas hose to the burner and ensure it is securely fastened.

For detailed, step-by-step assembly instructions, please refer to the diagrams and instructions included with your product packaging.

Operating Instructions

Before First Use:

  • Clean all cooking grates and the water pan with warm, soapy water. Rinse thoroughly and dry.
  • Season the smoker by running it empty at a medium temperature for 30-60 minutes to burn off any manufacturing oils.

Connecting Gas Supply:

  • Ensure the burner control knob is in the "OFF" position.
  • Connect the gas regulator to your propane tank. Tighten securely.
  • Open the propane tank valve slowly.
  • Perform a leak test on all connections.

Lighting Instructions:

Refer to the control panel (Figure 3) for visual guidance.

  1. Ensure the smoker door is OPEN during lighting.
  2. Open the main gas supply valve on the propane tank.
  3. Push and turn the burner control knob to "HIGH".
  4. Push the igniter button and hold for 3-5 seconds. You should hear a click and see the burner ignite.
  5. If ignition does not occur within 5 seconds, turn the burner control knob to "OFF", wait 5 minutes, and repeat the lighting procedure.

Smoking Food:

  • Prepare Wood Chips: Soak wood chips in water for at least 30 minutes before use to produce more smoke and prevent rapid burning. Place soaked chips in the wood chip drawer.
  • Fill Water Pan: Fill the water pan drawer with water, broth, or other liquids to add moisture and flavor to your food.
  • Preheat Smoker: Once lit, close the smoker door and allow the smoker to preheat to your desired smoking temperature. Monitor the door thermometer (Figure 4).
  • Add Food: Place food on the cooking grates or hang it from the suspension device. Avoid overcrowding to allow for proper smoke circulation.
  • Adjust Temperature: Use the burner control knob to adjust the heat. The Landmann L12093 is designed for smoking at slightly lower temperatures. Adjust ventilation discs to fine-tune temperature and smoke intensity.
  • Monitor: Periodically check the internal temperature of your food using a separate meat thermometer. Refill water and wood chips as needed.

Care and Maintenance

Regular cleaning and maintenance will extend the life of your smoker and ensure optimal performance.

  • After Each Use:
    • Allow the smoker to cool completely.
    • Remove cooking grates, wood chip drawer, and water pan. Clean them with warm, soapy water and a non-abrasive brush.
    • Wipe down the interior and exterior surfaces with a damp cloth.
    • Empty and clean the grease tray (if applicable).
  • Burner Maintenance: Periodically inspect the burner ports for blockages (e.g., spider webs, food debris). Clean with a wire brush if necessary.
  • Storage: Store the smoker in a dry, protected area when not in use. If storing outdoors, use a weather-resistant cover. Disconnect and store the propane tank separately.
  • Gas Hose Inspection: Regularly check the gas hose for cuts, abrasions, or excessive wear. Replace if any damage is found.
