Setup and Installation
Proper installation is crucial for the safe and efficient operation of your Frymaster GF14 fryer.
Unpacking
Carefully remove the fryer from its packaging. Inspect for any shipping damage. Report any damage to the carrier immediately.
Location
Place the fryer on a level, non-combustible surface. Ensure sufficient clearance from walls and other equipment for proper ventilation and maintenance access. Gas Connection
Connect the fryer to the appropriate gas supply (natural gas or propane) as indicated on the appliance rating plate. All gas connections must be made by a qualified technician and comply with all local and national gas codes. Ensure all connections are leak-tested before operation.
Electrical Connection
The GF14 model uses millivolt controls and typically does not require an external electrical connection for basic operation, as the pilot light generates the necessary millivolts. Operating Instructions
Filling the Frypot
Before lighting the pilot, ensure the frypot is filled with cooking oil or solid shortening to the MIN OIL LEVEL mark. If using solid shortening, melt it slowly at a low temperature setting before increasing to desired frying temperature.
Lighting the Pilot
- Turn the thermostat knob to the OFF position.
- Push in and hold the thermostat knob, then turn it to the PILOT position.
- While holding the knob in, light the pilot burner with a match or lighter. Hold the knob in for approximately 30-60 seconds after the pilot lights to allow the thermocouple to heat up.
- Release the knob. If the pilot goes out, repeat the process.
Main Burner Operation
Once the pilot is lit, turn the thermostat knob to the desired frying temperature. The main burner (master jet burner) will ignite automatically and cycle on and off to maintain the set temperature, monitored by the temperature probe. The auto high temperature shut-off feature will activate if the oil temperature exceeds safe limits.
Frying
Place food items into the twin baskets and carefully lower them into the hot oil. Do not overload the baskets, as this can lower oil temperature and result in soggy food. Use the basket hanger to drain excess oil after frying.
Maintenance and Cleaning
Regular cleaning and maintenance extend the life of your fryer and ensure food quality.
Daily Cleaning
- Oil Filtering: Filter the cooking oil daily to remove food particles and extend oil life.
- Frypot Cleaning: After draining the oil (using the 1-1/4" IPS ball type drain valve), clean the frypot. The open-pot design and deep cold zone help collect sediment, making cleaning easier. Use a non-abrasive cleaner and warm water. Rinse thoroughly.
- Exterior Cleaning: Wipe down all stainless steel surfaces with a damp cloth and mild detergent. Dry thoroughly to prevent water spots.
Weekly/Monthly Maintenance
- Boil-Out: Periodically perform a boil-out to remove stubborn carbon buildup. Consult your oil supplier for recommended boil-out procedures and chemicals.
- Pilot and Burner Inspection: Ensure the pilot flame is strong and blue. Inspect the master jet burner for any blockages or signs of wear.
