The PEUGEOT Paris u'Select mill set includes one pepper mill and one salt mill, both crafted from natural wood. Each mill is equipped with a specific grinding mechanism designed for its intended spice.

• Pepper Mill: Features a hardened steel mechanism designed to cut peppercorns, not crush them, releasing maximum aroma. Suitable for black, white, green, and red peppercorns (up to 15% in a blend), and coriander seeds. Maximum diameter of grains: 6 mm.
• Salt Mill: Features a corrosion-resistant stainless steel mechanism specifically adapted for dry salt crystals (rock salt). Do not use wet salt such as Guérande salt. Maximum diameter of crystals: 4 mm.

Setup and Initial Use

1. Unpacking: Carefully remove the mills from their packaging.
2. Identifying Mills: The pepper mill typically has a darker knob or a "P" marking, while the salt mill has a lighter knob or an "S" marking. For this natural wood set, the pepper mill may have a slightly different top knob design or a subtle marking to differentiate. Refer to the product images for visual cues.
3. Filling the Mills:
   • Unscrew the top knob and remove the top part of the mill.
   • Fill the pepper mill with dry peppercorns (max Ø 6 mm) or coriander seeds.
   • Fill the salt mill with dry salt crystals (rock salt, max Ø 4 mm). Do not use wet or damp salt.
   • Replace the top part and screw the knob back on firmly.

Operating Instructions

Adjusting Grind Size with u'Select System

The patented u'Select system allows for precise adjustment of the grind size. A ring at the base of each mill conceals a 6-position adjustment technology.

1. To adjust the grind, turn the ring at the base of the mill.
2. There are 6 distinct settings, from very fine (setting 1) to very coarse (setting 6).
3. Select the desired grind size by aligning the indicator with the corresponding number on the base.
4. Turn the top of the mill clockwise to grind your spice.

Pepper Grinding Mechanism

The pepper mechanism is made of hardened steel with a double row of helical teeth. This design ensures that peppercorns are cut efficiently, rather than crushed, to maximize flavor and aroma release.

Salt Grinding Mechanism

• Cleaning: Clean the exterior of the mills exclusively with a dry, soft cloth. Do not use water, detergents, or abrasive cleaners, as these can damage the wood finish and the grinding mechanism.
• Dishwasher Safety: These mills are not dishwasher safe.
• Storage: Store in a dry place away from direct sunlight and excessive humidity.

Troubleshooting

Grinding Issues

• No output or inconsistent grind:
  • Check if the mill is properly filled with the correct type of spice.
  • Ensure the top knob is screwed on firmly.
  • Verify that the grind adjustment ring at the base is not set to an extremely fine setting that might be blocking the mechanism, or an extremely coarse setting that might not engage small grains.
  • For pepper mills, if peppercorns are not engaging, gently shake the mill to reposition them.
• Difficulty turning the mill:
  • Ensure you are using the correct type of spice (e.g., dry salt for salt mill, not wet salt).
  • Check for any foreign objects that might be obstructing the mechanism.
  • If the mill feels stiff, try adjusting to a coarser setting.
