Product Components
The NESCO FD-61 Snackmaster Encore Food Dehydrator includes the following main components:
- Motor Housing/Lid: Contains the heating element and top-mounted fan. Features an adjustable thermostat.
- Drying Trays: Four 13.5-inch BPA-free trays are included, expandable up to 12 trays (additional trays sold separately).
- Fruit Roll Sheet: One sheet for making fruit leathers.
- Jerky Spice and Cure Packets: Two original-flavor packets for making jerky.

Setup Instructions
- Unpack: Carefully remove all components from the packaging. Retain packaging for future storage or transport.
- Clean: Before first use, wash all drying trays, fruit roll sheets, and the lid (excluding the motor housing) in warm, soapy water. Rinse thoroughly and dry completely. The motor housing should be wiped with a damp cloth.
- Assemble: Place the desired number of drying trays onto the base. Ensure they are stacked securely. Place the motor housing/lid on top of the uppermost tray.
- Placement: Position the dehydrator on a clean, dry, and level surface, away from walls or other obstructions to allow for proper airflow.
Operating Instructions
The NESCO FD-61 utilizes a unique Converga-Flow drying system. This system pushes heated air up and across each tray, then horizontally, converging in the center for fast, even, and efficient drying without the need for tray rotation.

Preparing Food for Dehydration
- Fruits: Wash, peel (if desired), and slice fruits uniformly. Pre-treatment (e.g., with lemon juice to prevent browning) may be beneficial for some fruits. Arrange slices in a single layer on trays, ensuring no overlap.
- Vegetables: Wash and slice vegetables uniformly. Blanching some vegetables (e.g., broccoli, carrots) before drying can help preserve color and flavor. Arrange in a single layer.
- Jerky: Use lean meat, trimmed of all fat. Slice meat uniformly, about 1/8 to 1/4 inch thick. Marinate or season the meat thoroughly. Arrange strips on trays without overlapping.
- Fruit Rolls: Puree fruit and spread evenly onto a fruit roll sheet. Place the sheet on a drying tray.

Setting the Temperature and Drying Time
The FD-61 features an adjustable thermostat from 95°F to 160°F (35°C to 71°C). Refer to the guide below for recommended temperatures. Drying times vary based on food type, thickness, moisture content, and humidity.

| Food Type | Temperature (°F) | Temperature (°C) |
|---|---|---|
| Herbs & Spices | 95°F | 35°C |
| Nuts & Seeds | 105°F | 41°C |
| Fruits & Vegetables | 135°F | 58°C |
| Meats, Fish & Jerky | 160°F | 71°C |
- Load Trays: Arrange prepared food in a single layer on the drying trays.
- Set Temperature: Plug the dehydrator into a standard electrical outlet. Turn the temperature dial on the motor housing to the desired setting based on the food type.
- Monitor: Check food periodically for dryness. Food is typically dry when it is pliable but no longer sticky, or brittle for items like herbs.
- Cool and Store: Once dried, allow food to cool completely before storing in airtight containers.
Cleaning and Maintenance
- Unplug: Always unplug the dehydrator before cleaning.
- Clean Trays and Sheets: Wash drying trays and fruit roll sheets in warm, soapy water. Rinse thoroughly and dry completely. These parts are not dishwasher safe.
- Clean Motor Housing: Wipe the motor housing and lid with a damp cloth. Do not immerse in water.
- Storage: Store the dehydrator in a clean, dry place when not in use.
Troubleshooting Guide
- Dehydrator does not turn on:
- Ensure the unit is properly plugged into a functioning electrical outlet.
- Check if the temperature dial is set to an active temperature.
- Food is not drying evenly:
- Ensure food is sliced uniformly in thickness.
- Avoid overcrowding trays; arrange food in a single layer.
- While the Converga-Flow system minimizes the need, occasionally rotating trays (top to bottom) can help if uneven drying persists.
- Drying is taking too long:
- Verify the temperature setting is appropriate for the food type.
- Ensure the room humidity is not excessively high.
- Check that the dehydrator is not placed in an enclosed space restricting airflow.
