Important Safety Information
Your BRON COUCKE Mandoline features extremely sharp blades. Always exercise caution during setup, operation, and cleaning to prevent injury.
- Use Safety Carriage: Always use the provided safety carriage (pusher) to hold food items and keep your fingers away from the blades during slicing.
- Blade Handling: Be extremely careful when handling or changing blades. They are razor sharp.
- Stability: Ensure the mandoline is stable on a flat surface, utilizing its rubber feet and table edge support, before beginning any slicing task.
- Blade Protection: When not in use, ensure the waffle blade is fully lowered if using the upper blade to prevent damage. Store blades safely.
- Cleaning: Hand wash only. Use caution when cleaning blades.
Setup Instructions
- Unfold Legs: Turn the mandoline upside down to expose the leg assembly. Grasp both cross bars of the leg assembly and pull upwards to form a "Z" shape with the mandoline body. (Exercise caution with the sharp exposed blades during this step.)
- Secure Legs: Insert the free end of the leg assembly to fit snugly against the top lip. If necessary, flip the adjustment lever (8) towards the cutting blades to allow room for the leg assembly.
- Position Mandoline: Turn the mandoline over, resting the rubber feet on a stable table surface. The table edge support will ensure additional stability.
- Adjust Thickness: Make your desired thickness adjustment using the hand-operated levers.
- Prepare Blades: Ensure the waffle blade is fully lowered when using the upper blade to avoid damage.

Operating Instructions
The BRON COUCKE Mandoline offers various cutting options for diverse culinary needs.
Adjusting Slice Thickness
The mandoline features hand-operated levers to control slicing thickness, ranging from paper-thin to a maximum of 1/2-inch (approximately 10 millimeters). An interchangeable, two-sided blade set is included, with one side providing a 3 millimeter cut and the other a 10 millimeter cut.

Types of Cuts
- Straight Slices: Ideal for potatoes, onions, lemons, and limes. Use the straight blade with the thickness adjusted as desired.
- Julienne Cuts: Achieve perfect carrot sticks or shoestring potatoes using the large or small julienne blades.
- Waffle and Ripple Cuts: The mandoline is equipped with a waffle blade for decorative cuts. Ensure it is correctly positioned and adjusted.

Using the Safety Carriage
The plastic safety guard is essential for protecting your hands. Impale your food item onto the spikes of the safety carriage and slide it across the blades with even pressure. This keeps your fingers safely away from the sharp edges.

Maintenance and Cleaning
Proper maintenance ensures the longevity and performance of your mandoline.
- Hand Wash Only: For best results and to preserve blade sharpness, wash the mandoline by hand.
- Cleaning Blades: Use caution when cleaning the razor-sharp blades. Hot water and a sprayer nozzle can effectively clean the stainless steel components. Some users recommend small bristle brushes to reach cracks and crevices safely.
- Drying: Allow all components to dry completely before storing.
- Storage: The mandoline folds flat for safe storage. Store blades in a secure manner to prevent accidental contact.
Troubleshooting
- Difficulty Slicing: Ensure the blade is clean and free of debris. Verify that the thickness adjustment is set correctly for the food item. For very firm vegetables, a little more force may be required.
- Blades Seem Dull: While the stainless steel blades are designed for durability, over time, they may require sharpening. A whetstone or professional sharpening service can restore their edge.
- Mandoline Instability: Recheck that the leg assembly is fully extended and locked into the "Z" shape. Ensure the rubber feet are firmly on the counter and the table edge support is engaged.
