Food Safety Temperature Zones

Understanding temperature zones is crucial for preventing foodborne illnesses.

  • Frozen Food Zone: 0°F (-18°C) and below. Bacteria does not grow.
  • Danger Zone: 41°F (5°C) to 140°F (60°C). Bacteria grows quickly.
  • Hot Food Zone: 140°F (60°C) and above. Bacteria is destroyed.

Food stored between 5°C and 60°C is in the "danger zone" due to rapid bacterial growth. To prevent illness, keep cold food at 5°C or below and hot foods at 60°C or above.
