STEP 5: Gas Valve
Remove control knobs. Adjust main burner bypass jets towards 1/4 circle for LP until the flame is normal. Refer to figures for 9,000/15,000BTU and 20,000BTU burners.
PLEASE NOTE: If bypass jets are too tight, the igniter may stay on when the burner is set to minimum.
STEP 6: Reconnect Gas and Electrical Supply
Leak testing must be conducted according to installation instructions. Before operating after conversion, check for leaks with a soapy water solution or leak detector at all gas connections. Do not use a flame to check for leaks.
STEP 7: Air Shutter Oven Burner
The air shutter may need adjustment, especially if converted to LP. The approximate flame height is one inch (inner blue flame). To check flame acceptability: set oven to bake at 350°F, observe flame. If yellow, increase air shutter opening. If blue and lifting, reduce opening. Turn off oven, cool, loosen lock screw, reposition shutter, tighten lock screw, and retest. A distinct blue, steady flame indicates correct adjustment.
STEP 8: Installation of New Rating Label
Record model and serial number on the LP/Propane Rating serial plate. Place the new plate near the existing one.
Preparation: Protect flooring and secure oven doors closed before moving. Oven doors can be removed for easier handling or fitting through doorways, but this should only be done by a certified installer.
Placement: Do not lift or carry the oven door by the handle. Use an appliance dolly. Remove and recycle packing materials. Do not discard the anti-tip bracket.
Leveling: Adjust legs by rotating them clockwise to raise and counter-clockwise to lower.
Anti-Tip Bracket: Must be installed to prevent tipping. Refer to illustration on page 5.
Gas Supply Connection
All connections to the gas piping must be wrench-tightened. Do not overtighten. Ensure all range controls are OFF and turn on the main gas supply valve. If using a flexible metal connector, ensure it is not kinked. Attach the gas supply line to the regulator. Open the valve and check for leaks with a liquid detergent solution; bubbles indicate a leak. If a leak appears, close the shut-off valve and adjust connections. Leak testing must be conducted per manufacturer's instructions using soap water or a leak detector. Do not use a flame. The appliance must be isolated from the building's gas supply piping system by closing its manual shut-off valve during pressure testing.
Getting Started:
- Remove exterior and interior packing.
- Remove protective film.
- Clean the range thoroughly with hot water and mild detergent, rinse, and dry.
- Check that surface burner components are assembled correctly.
- Insert shelves and tray into the oven interior.
Cooktop Operation
The burner design combines all parts in one assembly. The burner cap must be seated horizontally on the burner. [Illustration of a cooktop burner assembly with labeled parts: Burner Cap, Igniter, Sealed Burner].
Ignition: To light cooktop burners, push and turn the control knob counter-clockwise to "Hi". You will hear a clicking noise from the electric spark. Once ignited, turn the knob to adjust flame size. If the knob stays at "Hi", it will continue to click.
NOTE: When one burner is at "Hi", all burners will spark. Do not attempt to clean around burners while another is on. Do not touch burner caps, bases, or igniters while sparking.
Heat Settings:
Setting | Description |
Hi | Ignites the burners. |
Simmer | Melting small quantities, steaming rice, warming food, melting chocolate or butter. |
Low | Melting large quantities. |
Low-Medium | Low-temperature frying, simmering large quantities, heating milk, cream sauces, gravies. |
Medium | Sautéing and browning, braising, pan-frying, maintaining slow boil on large quantities. |
Medium-Hi | High-temperature frying, pan boiling, maintaining slow boil on large quantities. |
Hi | Boiling liquid quickly, deep frying. |
Simmer and Boil: A smaller flame is best for simmering delicate foods, keeping food warm, or cooking over low heat. Larger flame settings provide maximum heat for heavy cooking jobs like boiling water.
Please Note: Only the 20,000BTU burner can reach a simmer flame to the minimum setting.
Flame Size: Watch the flame when turning the knob. Any flame larger than the cookware bottom is wasted. The flame should be steady and blue. Foreign material may cause an orange flame.
Power Failure: If gas does not ignite within four seconds, turn off the valve and wait five minutes for gas to dissipate. Repeat lighting. In a power failure, surface burners can be lighted manually by holding a lit match near the burner and turning the knob to "HI".
Burner Grates:
1. Grills must be properly positioned before cooking to avoid scratching or poor combustion. 2. Do not operate burners without a pan or utensil on the grills.
NOTE: Grate sizes vary by model. For 48" models, there are 4 grates (3 identical, 1 wider). For 60" models, there are 5 grates (2 wider). The wider side of a grate should lap the middle joint of the stove surface for continuous coverage. [Diagram showing grate placement for 48" and 60" models]
Griddle Operation (Available on the 48" and 60" models)
Before Using the Griddle:
- Clean the griddle with warm, soapy water to remove dust or protective coating.
- Rinse with clean water and dry with a soft, lint-free towel.
- If the 20,000 BTU burner clicks continuously at maximum position, try adjusting the fire to a lower position.
Use of the Cook plate (Griddle): Your Forno range may include a reversible grill/griddle. For best results, pre-heat gently. It takes 10-15 minutes for the grill/griddle to heat evenly. Start with low heat and gradually increase. Start low and don't overheat; burners only need 1/3 to 1/2 power to reach over 500 degrees. Most chefs agree 500-550 degrees is sufficient for searing steak.
CAUTION: The griddle surface is hot after use. Allow sufficient time to cool before cleaning.
Cooktop Cleaning Tips:
- Clean cooktop after each use and wipe up spills immediately to prevent staining.
- Sealed burners are removable. Boil overs will not seep underneath. Clean burners after each use.
Oven Light:
Controlled by a push switch on the control panel. The light can be used while cooking or cleaning. WARNING: Disconnect power before replacing the bulb. Allow oven to cool, then unscrew the light cover and bulb. Replace with a 40-watt halogen bulb.
Oven Operation
Oven Baking Tips:
- Never cover oven slots, holes, passages, or racks with aluminum foil. This blocks airflow, may cause carbon monoxide poisoning, and can create a fire hazard. Do not use foil on porcelain surfaces, as it will damage the porcelain.
- Position racks before preheating the oven.
Preheating: Allow the oven to preheat before placing food. Preheat for baking cakes, cookies, pastry, and breads. Remove cookware before preheating with the infrared broiler. To preheat, turn the "Oven" selector knob to "Broil" for approximately 2 minutes until the burner is hot. Condensation on the oven door glass is normal during preheating.
Oven Function:
- Natural Airflow Bake: Heat from bake burners is circulated by natural airflow.
- Convection Bake: Heat from bake burners is circulated by a fan at the rear of the oven for more even heat distribution. This allows faster cooking at lower temperatures.
- Convection Roast: The convection fan circulates heated air evenly over and around food. Using a broiler pan helps seal in juices and creates a golden brown exterior.
Convection Defrost: The fan circulates air without heat to accelerate natural defrosting. Do not leave food in the oven for more than two hours without cooking.
Convection Dehydrate: Warm air is radiated from bake burners and circulated by the fan at 175°F to remove water from food via evaporation, inhibiting microbial growth.
Broiler Operation:
Note: Door must be closed during broiling. The broil burner heats a metal screen until it glows, producing heat to sear food. Broiling is cooking tender cuts of meat directly under the broiler. Some smoke is normal. Setting Broil: The "Oven" function knob controls the Broil feature. Heat radiates downward for even coverage. Broil temperature is 500°F (260°C). Use the broil pan and insert to drain grease. DO NOT use the broil pan without the insert or cover the insert with foil. To set for Broil: 1. Place broiler pan insert on broiler pan, then place food on insert. 2. Arrange interior oven rack, place broiler pan on rack, centering it under the broil burner. Preheat burner first if desired. 3. Turn function knob to Broil. The oven indicator light stays on until the function is off or the temperature control cycles off. Position rack correctly; farther from broiler means more well-done. Preheat oven. Push in and turn knob to BROIL. Turn food halfway through. Pull rack out to "stop" position before turning or removing food.
Oven Cleaning Tips:
- Clean splatters and spills immediately after the oven cools.
- Do not leave high-sugar or high-acid foods on the oven cavity surface.
- Use an oven cleaner for the oven cavity.
Oven Thermostat & Cooking Times
Control panel numbers indicate oven temperature (°F). Set the desired number on the control knob. The "BROIL" position turns on the broil burner only. Cooking times vary by food type, density, and size. Watch cooking and check results. Use the thermostat for temperature and follow cooking guides for time.
The unit has a cooling fan that activates when the temperature is above 158°F (70°C) to ensure internal components remain within safe operating temperatures. The fan stays on until the temperature drops below 158°F (70°C). It may run for up to 30 minutes after the range is turned off.
Care and Cleaning Recommendations:
- Stainless steel: Use a non-abrasive cleaner and soft cloth. Wipe with a water-dampened microfiber cloth, then dry polish, following the grain.

Troubleshooting Tips
Before you call for service:
Issue | Possible Cause & Solution |
Range does not operate | Check that power is on. Check electrical power to range and home circuit breaker. |
Burners Do Not Light Or Spark Randomly | Electrical plug not plugged in. Gas supply not turned on. Burner parts not replaced correctly. Clogged simmer rings or burner ring slits. Clogged nozzles, wet burners or electrodes. Blown fuse or tripped circuit breaker. |
Burners Have Yellow Or Yellow-Tipped Flames | Burner parts not replaced correctly. A. Yellow flames: Call for service. B. Yellow tips on outer cones: Normal for propane (LP) gas. C. Soft blue flames: Normal for natural gas. |
Burner Flames Very Large Or Yellow | If flames look like (A), call for service. Normal flames are like (B) or (C). Range may be connected to the wrong fuel type. Contact installer. |
Burner Flames Contain Orange Flickers | Airborne dust; cool-mist humidifier; debris on or inside burner. |

Oven Racks Are Hard To Slide | Do not spray with cooking spray or lubricants. See "Full extension oven racks" in Care and Cleaning. |
Food Does Not Bake Or Roast Properly | Oven controls improperly set. See Baking or Roasting section. Oven not preheated long enough. Incorrect cookware or size. Racks in wrong position. Use foil tent for roasting. Oven thermostat needs adjustment. |
Food Does Not Broil Properly | Designed for closed-door broiling only. Ensure door is closed. Oven controls not set to BROIL. Improper rack position. Cookware not suited for broiling; use broiling pan and rack. Aluminum foil on broiling pan/rack not fitted properly. |
Oven Temperature Too Hot Or Too Cold | Need to adjust oven knob temperature setting. |
Steam From The Vent | When using convection mode, steam from the vent is normal and increases with more racks or food. |
Burning Or Oily Odor Emitting From The Vent / Strong Odor | This is normal in a new oven and will disappear. Odor from insulation is normal for first few uses. |
Convection Fan Not On All The Time | Fan may cycle on/off depending on function or door status for optimized performance. This is normal. Fan may cycle clockwise/counter-clockwise. |
Condensation Or Fogging On The Inside of the Door Glass | Normal during preheating and will usually evaporate by the end of the cycle. |
Cracking Or Popping Sound During Cleaning | Normal sound of metal heating and cooling during cooking and cleaning. |
